TURKEY BURGERS WITH SPINACH, FETA & TZATZIKI



Turkey Burgers with Spinach, Feta & Tzatziki image

Creamy tzatziki and crisp sliced cucumber add a refreshing twist to this easy burger recipe loaded with feta, spinach and Mediterranean spices. No tzatziki? No problem! Make your own at home by combining plain Greek yogurt with a squeeze of lemon, dill and finely chopped cucumber.

1 cup frozen chopped spinach, thawed
1 pound 93% lean ground turkey
½ cup crumbled feta cheese
½ teaspoon garlic powder
½ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon ground pepper
4 small hamburger buns, preferably whole-wheat, split
4 tablespoons tzatziki
12 slices cucumber
8 thick rings red onion (about 1/4-inch)

Steps:

  • Preheat grill to medium-high. Squeeze excess moisture from spinach. Combine the spinach with turkey, feta, garlic powder, oregano, salt and pepper in a medium bowl; mix well. Form into four 4-inch patties. Oil the grill rack (see Tip). Grill the patties until cooked through and no longer pink in the center, 4 to 6 minutes per side. (An instant-read thermometer inserted in the center should register 165 degrees F.) Assemble the burgers on the buns, topping each with 1 tablespoon tzatziki, 3 cucumber slices and 2 onion rings.

1 lb lean ground turkey
1 cup baby spinach, chopped
1/4 cup crumbled feta cheese
3 Tablespoons egg whites
2 Tablespoons fresh parsley, chopped ((1 teaspoon dried))
2 cloves garlic, minced
1/2 teaspoon sea salt
1/2 teaspoon pepper

Steps:

  • Prep grill: Preheat grill to medium-high heat and lightly oil grill grate.
  • Mix ingredients: While the grill is preheating, mix together turkey, spinach, feta, egg whites, parsley, garlic, sea salt and pepper in a large bowl until well combined.
  • Form patties: Using your hands, form mixture into 4-5 patties.
  • Grill: Cook on preheated grill until no longer pink in the center, about 6-8 minutes per side. Serve immediately.

  • Add all spices as per your personnel taste.
  • Mix well, then divide into 4 equal shares.
  • Make patties from each one being careful to flatten out to 1/2" or less thickness.
