Other recipes on this site for mayo just were not thick-n'-tangy enough. This recipe must use only egg yolks for maximum thickness. For those who want no waste, take those egg whites and cook yourself some eggs. I also don't recommend using a blender. I tried and got mayo on my face.

4 egg yolks
2 tablespoons distilled white vinegar
2 teaspoons lemon juice
2 teaspoons white sugar
½ teaspoon dry mustard
¼ teaspoon salt
2 cups vegetable oil

Steps:

  • Beat egg yolks, vinegar, lemon juice, sugar, mustard, and salt together in a chilled bowl with an electric mixer. Increase mixer speed to high and slowly pour oil into egg mixture, beating until mayonnaise is thick and creamy. Transfer mayonnaise to a jar and refrigerate until flavors blend, at least 1 hour.

Several years ago my sister-in-law made this salad dressing and it quickly became a family favorite.

3/4 cup sugar
1/2 cup red wine vinegar
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon paprika

Steps:

  • Combing all ingredients in a jar with a tight fitting lid.
  • Shake Well.
  • Drizzle over salad greens and toss to coat.

My family doesn't like macaroni salad with a lot of mayonnaise. I threw together this recipe one day when I couldn't find one I liked online. It was a huge hit with everyone helping themselves to seconds. I think this recipe would also be great with some hard boiled egg added. You could also try different vegetables such as celery or green pepper according to your taste. The result is a sweet and tangy, not overly creamy or mayonnaise tasting macaroni salad. Great with grilled food!

1 lb cellentani pasta (corkscrew)
3/4 cup mayonnaise
3 tablespoons cider vinegar
3 tablespoons granulated sugar
3 teaspoons prepared yellow mustard
1 teaspoon celery seed (crush or rub between palms to release flavor)
chopped red bell pepper
2 -3 chopped scallions
shredded carrot
salt
pepper

Steps:

  • Cook pasta according to package directions. Do not over cook.
  • Drain pasta and rinse with cold water until cool.
  • In bowl whisk together mayonnaise, cider vinegar, sugar, mustard, and celery seed.
  • Add chopped vegetables to taste. Add salt and pepper to taste.
