Rich and caramely pineapple teams up with yellow cake mix for a great retro dessert.

9 slices pineapple in juice (from 20-oz can), 1/4 cup juice reserved
9 maraschino cherries without stems
1 box Betty Crocker™ Super Moist™ yellow cake mix
1/3 cup canola oil
1 1/4 cups 1% milk
1 egg

Steps:

  • Heat oven to 350°F. Spray 9-inch square pan with cooking spray. Sprinkle brown sugar in pan. Arrange pineapple slices over brown sugar. Drizzle with reserved juice. Place cherry in center of each pineapple slice.
  • In medium bowl, beat remaining ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 2 minutes, scraping bowl occasionally. Pour batter over pineapple and cherries.
  • Bake 50 to 55 minutes or until toothpick inserted in center comes out clean and top is golden brown. Run knife around inside edges of pan. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake 3 minutes so brown sugar mixture can drizzle over cake; remove pan. Serve warm.

1 cup packed light-brown sugar
1 ripe firm pineapple (skin removed), cut into 16 thin wedges and cored (see note, above)
1 cup all-purpose flour, (spooned and leveled)
1/2 cup whole-wheat flour (spooned and leveled)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup low-fat buttermilk
2 large eggs
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees. Brush a 9-inch square baking pan with oil; line with a strip of parchment paper, leaving an overhang on two sides. Brush paper with oil. Sprinkle bottom of pan with 1/4 cup sugar. Trim pineapple wedges to no more than 4 to 5 inches long; arrange in pan in groups of four, alternating direction.
  • In a medium bowl, whisk together flours, baking powder, baking soda, and salt; set aside.
  • In a large bowl, whisk together buttermilk, eggs, vanilla, oil, and remaining 3/4 cup sugar. Add flour mixture; mix just until combined. Pour batter over pineapple. Tap pan firmly on counter to settle batter, then smooth top.
  • Bake until a toothpick inserted in center of cake comes out clean, 50 to 60 minutes. Cool 20 minutes in pan; invert onto a serving platter (peel off and discard paper).

1 (20 ounce) can crushed pineapple
1 (1 1/3 ounce) package fat free sugar-free gelatin mix
1 tablespoon brown sugar
2 eggs
1 egg white
3/4 cup sugar or 3/4 cup Splenda sugar substitute
1 teaspoon vanilla
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Preheat oven to 375 degrees.
  • Line a round 9x1 1/2 inch pan with waxed paper and spray with nonstick cooking spray.
  • Sprinkle brown sugar on waxed paper.
  • Drain pineapple and reserve juice.
  • Spread pineapple evenly in bottom of pan and sprinkle dry gelatin over pineapple.
  • Using an electic hand mixer, beat eggs and egg whites on high until very thick (about 5 minutes).
  • Gradually add sugar.
  • Add 1/3 cup reserved pineapple juice and vanilla and beat on low speed.
  • Gradually add flour, baking powder and salt, blending until batter is smooth.
  • Pour batter into pan.
  • Bake 25-30 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • When done, immediately loosen cake from edge of pan with a knife and turn the pan over onto a plate.
  • Carefully remove waxed paper.

¼ cup butter
¾ cup light brown sugar
1 tablespoon pineapple juice
1 tablespoon dark rum
½ small fresh pineapple - peeled, cored, and sliced
½ cup butter
1 ½ cups all-purpose flour
⅛ teaspoon ground cardamom
½ teaspoon salt
2 teaspoons baking powder
½ cup white sugar
1 egg
½ cup cold milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Melt 1/4 cup butter in a 12-inch cast iron skillet over medium-low heat. Stir in brown sugar, pineapple juice, and dark rum. Cook over medium-low heat until sugar is dissolved and mixture is bubbling, about 5 minutes.
  • Remove from heat and spread pineapple slices in a layer over the brown sugar mixture, completely covering the mixture. Set skillet aside.
  • Melt 1/2 cup butter in small skillet over low heat until the butter begins to brown and release a nutty fragrance, about 5 minutes. Watch carefully, butter burns easily. Remove from heat and let cool for 10 minutes.
  • Whisk together flour, cardamom, salt, baking powder, and white sugar in a large bowl. Whisk in egg and cold milk until just combined. Pour in melted butter and stir to mix thoroughly.
  • Pour batter over the pineapple slices in the skillet; spread evenly to cover.
  • Bake in preheated oven until the cake begins to bubble around the edges, the top is browned, and a toothpick inserted into the center comes out clean, about 30 to 35 minutes. Let cool in the skillet for 10 minutes.
  • Loosen the cake from the skillet by running a knife around the inside edge of the cake. Invert a large plate over the top of the skillet and flip over, releasing the cake to show the pineapple slices on top.

7 maraschino cherries, halved

3/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp table salt
1/2 cup fat-free skim milk
1 tsp vanilla extract
1/2 cup sugar
2 large eggs

Steps:

  • Preheat oven to 350ºF. Drain pineapple and reserve 2 tablespoons of juice; set aside. Melt 2 tablespoons of margarine and pour into the bottom of a 9-inch round cake pan. Top margarine with brown sugar and, using a fork, swirl together to make an even layer. Place 1 pineapple ring in center of pan and arrange 6 more rings around it. Place cherry halves, cut side up, in center of each ring and in spaces between rings; set aside.
  • In a medium bowl, combine flour, baking powder, baking soda and salt; set aside. In a small bowl, combine milk, 2 tablespoons of reserved pineapple juice and vanilla. In a large mixing bowl, beat together remaining 4 tablespoons of margarine and granulated sugar. Add eggs, one at a time, mixing well after each addition.   • Bake until a wooden toothpick inserted near the center of cake comes out clean, about 30 to 35 minutes. Cool 2 minutes in pan, invert pan onto a serving plate and slice into 8 pieces. Serve warm or at room temperature.
