LAURA'S EASY OATMEAL SQUARES
This is a super easy recipe using ingredients that are usually on hand. Try using walnuts or butterscotch chips as a variation.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Spread the almonds onto a baking sheet; toast until the nuts are golden brown and fragrant, about 5 minutes. Remove nuts from baking sheet, and reserve.
- Melt butter in a small saucepan placed over medium heat. Stir in brown sugar; cook, stirring, until sugar has dissolved and mixture is bubbly. Remove from heat. Stir in vanilla and oatmeal. Press mixture into an 8 x 8 inch baking pan. Bake in preheated oven until lightly browned and set, about 20 minutes.
- Remove from oven, and allow to cool slightly. Sprinkle chocolate chips over surface; let chocolate sit until melted, 2 to 3 minutes. Spread chocolate evenly over oatmeal squares. Sprinkle warm chocolate with toasted almonds. Cut into squares when cool.

LOW-FAT PINEAPPLE OATMEAL SQUARES
The biggest problem I had while making these is that I kept wanting to eat the batter, though I'm glad I saved some for cooking. Note: they hold up better overnight and stay moist if they are slightly undercooked. They have no egg, and can be made with non-dairy margarine for those with dietary restrictions.

Steps:
- Combine the first 6 ingredients until well mixed.
- If it gets too thick, add a little bit of pinapple juice.
- Add the pineapple mix until well combined (use more juice as needed).
- Pour into a greased pan and bake at 350 for 25-30 minutes.
- Take them out of the oven before the top starts to brown.
- They will stay moist longer if they are slightly undercooked.
- Cool.
- Combine powdered sugar with pineapple juice and spread on top of bars.

- Sift together flour, baking soda and salt into bowl.
- In another bowl,cream the butter or shortening with the brown sugar.
- Mix in the flour mixture and the pineapple.
- Grease a 9 x 13 inch baking dish.

- It's best when slightly underdone as it stays moist.
- Cool.

FRUITED LOWFAT OATMEAL BARS
These oatmeal bars are sweetened mostly with fruit (and a little sugar). The fats are healthy and moderate, so these bars can be enjoyed by anyone likes to enjoy some "healthy" carbohydrates. - Preheat oven to 325. Spray 7x11 or 9x9 pan with non-stick spray.
- Mix wet ingredients (first 5 in list).
- Mix dry ingredients (oatmeal through spice) in a large bowl.
- Add wet ingredients to dry ingredients, adding in remaining fruits and optional nuts as you gently mix everything together.
- Pat into prepared baking pan.

- Stir well and set aside.
