Like the taste of deviled eggs but not all the added fat and cholestrol? These are so close to eggs my family couldnt hardly taste diffrence. I got this from Taste of home light n' tasty.

10 hardboiled egg
3/4 cup mashed potatoes (prepared with skim milk and low fat butter or margarine)
1 tablespoon fat-free mayonnaise
1 teaspoon prepared mustard
2 -3 drops yellow food coloring (optional)
paprika

Steps:

  • Slice eggs in half lengthwise; remove yolks and refrigerate for another use. Set whites aside. In a small bowl, combine mashed potatoes, mayonnaise, mustard and food coloring if desired; mix well. Stuff or pipe into egg whites. Sprinkle with paprika. Refrigerate until serving.

  • Cut the hard-boiled eggs in half length-wise. Scoop or pop the yolk out of the center of the eggs and place all the eggs in a small mixing bowl.
  • Mash the yolk with a fork until the yolk is the texture of small pebbles. Add the Greek yogurt, mayonnaise, sea salt, mustard, and onion powder to the yolk. Mix in until the mixture is smooth and combined.
  • Scoop or pipe the yolk mixture back into the center of the egg whites. Sprinkle the deviled eggs with paprika to serve. Serve the eggs immediately or chill them in an airtight container up to 2 days before serving.

  • Boil: Add eggs into a large saucepan and add cold water so that water covers eggs by about 2 inches. Cover and bring water to a boil* over high heat. Once boiling, remove pot from heat and let set for 10 minutes.
  • Ice Bath: While eggs sit, fill a large bowl with cold water and ice cubes. When eggs have reached 10 minutes, remove them from the hot water and drop them into the ice bath until cooled completely.
  • Prep Eggs: Gently tap eggs on the counter all around the shell to break it, then peel off shell. Cut eggs in half, lengthwise, then use a small spoon to gently scoop out the yolk.
