LOW FAT CREAMY BAKED SALMON

Steps:
- Preheat oven to 400°F Rinse fish and pat dry.
- Place fillets skin side down in a single layer in a greased 9x13 pan.
- Whisk sour cream, mayo, flour, lemon juice, dill, cream cheese, garlic and wine in a medium bowl until smooth and spread over fish.
- Season with salt, pepper and paprika to taste.
- Bake uncovered for 15 to 20 minutes until internal temp is 140 F or middle inside of fish is slightly opaque. Fish will continue to cook for a few minutes after removing from oven.
- Transfer to serving platter spooning sauce over fish and sprinkling with additional paprika and dill to garnish if desired.

CREAMY BAKED SALMON
One of my husband's recipes. We like to make this with lemon basil; it gives the dish great flavor!

Steps:
- Sauté onion and garlic in butter on medium high until onions are translucent.
- Add tomatoes and cook on high for 5 to 10 minutes untill tomatoes start to break a part.
- Add cream and simmer on medium low for 5 minutes.
- Stir basil, salt and pepper in to cream sauce.
- In an oiled baking dish, pour cream sauce over salmon. Cover and bake for 12 minutes at 350°F.
- Serve over pasta, rice or steamed veggies.

Really easy, really good, low-fat salmon recipe. My family's favorite. Can also make this with a frozen salmon filet.

Steps:
- Lay salmon filet on large piece of tin foil (shiny side of foil facing up).
- Sprinkle salmon with lemon juice.
- Spread enough mayo over salmon to cover the filet.
- Season with salt and pepper.
- Season with enough dill to cover the filet.
- Make a "tent" around the salmon with the foil.
- BBQ on medium heat until salmon is cooked to your liking.

Yummy stuffed salmon. Best serve with some steamed asparagus and baby carrots. Pair with Chardonnay.

Steps:
- Heat 1 teaspoon oil in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Remove from the heat and transfer to a bowl.
- Combine cream cheese and blue cheese in a microwave-safe bowl. Heat on high for 25 seconds.
- Add cheese mixture, spinach, bread crumbs, garlic, salt, and pepper to the onions; mix until well combined. Put stuffing in the freezer until chilled, 15 to 20 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Line a baking dish with parchment paper.
- Cut salmon into 2 portions. Slice each portion in half, leaving a connecting point at one side.
- Heat remaining oil in a skillet over medium heat. Add salmon and fry until colored a bit, about 15 seconds per side. Transfer salmon to the prepared baking dish.
- Take stuffing out of the freezer and make into 2 balls. Put 1 ball into each salmon portion.
- Bake in the preheated oven until fish flakes easily with a fork, 15 to 17 minutes. Garnish with lemon juice.

I found this in the "South Beach Diet Book".. even if you're not dieting... it's great. Just substitute real sour cream for the fat-free for a to die for experience. It's quick, simple and uses on hand ingredients.

Steps:
- Preheat the oven to 350°F.
- Coat a baking sheet with cooking spray.
- Heat the oil in a small saucepan over medium heat.
- Add the garlic and cook for one minute.
- Reduce heat to low; stir in the lemon juice, capers and lemon-pepper seasoning and cook for 5 minutes.
- Add the sour cream and cook for 5 minutes or until heated though.
- Meanwhile, place the salmon on the prepared baking sheet.
