CRANBERRY COCONUT GRANOLA BARS
These homemade granola cranberry coconut chocolate chip granola bars are nut-free, gluten-free, dairy-free and perfect for back-to-school. They're chewy, a little crunchy and absolutely delicious.

Steps:
- Pre-heat oven to 350°F.
- Toast your oats and coconut: spread oats and coconut flakes on a large rimmed baking sheet. Bake until just golden brown, about 10 minutes. Let cool slightly.
- Line a 9-inch loaf pan with parchment paper.
- In a large bowl, stir together cooled toasted oats and coconut, cereal, cranberries, and 1 Tablespoon of chocolate chips.
- In a mini food processor or blender, pulse together banana, sunflower butter, maple syrup, vanilla and salt until evenly blended. If you don't have a food processor/blender you can do this in a bowl, just be sure to really combine the mixture.
- Stir wet ingredients into the bowl with the oat/coconut until combined.
- Spread mixture on the prepared loaf pan with parchment. Press the mixture lightly with your hands or a rubber spatula to flatten, then sprinkle the remaining chocolate chips over top. Again, use your hands or the spatula to press the chips into place and compact the mixture into the pan as much as possible.
- Bake at for 12-15 minutes or until bars are golden brown. Cut into 5-6 bars before they have a chance to really harden up, then let the bars cool completely before transferring to an airtight container for storage.

- Preheat oven to 350 degrees F (175 degrees C). Line an 8-inch square baking dish with parchment paper or waxed paper.
- Mix oats, cranberries, pecans, ground flax seed, chocolate chips, and wheat germ together in a bowl.
- Stir brown sugar, honey, vegetable oil, and salt together in a large microwave-safe bowl; heat in microwave for 30 seconds. Stir mixture and heat in microwave again until smooth, about 30 seconds more. Stir vanilla extract and cinnamon into brown sugar mixture.

- Preheat the oven to 250 degrees F.
- Combine the coconut, nuts and seeds in a mixing bowl, set aside.
- Heat a large skillet to medium low heat, melt the butter and add the sweetener to the skillet, stirring regularly. Stir the mixture for 6-7 minutes until the sweetener completely dissolves and it begins to thicken. Be careful not to overheat the mixture.
- Remove from heat and stir in the vanilla and cinnamon.Pour the mixture over the granola and stir until it is completely coated.

- Line an 8 to 9-inch square baker with two strips of criss-crossed parchment paper, cut to size. In a mixing bowl, combine the oats, almonds, chocolate chips, cinnamon and salt. Whisk to combine.
- In a 2-cup liquid measuring cup, measure out the nut butter. Top with 1/2 cup honey and the vanilla extract. Whisk until well blended. If you must, you can gently warm the liquid mixture on the stovetop or in the microwave, but make sure it's cool before you pour it into the dry mixture (the chocolate chips will melt).
- Pour the liquid ingredients into the dry ingredients. Use a big spoon to mix them together until the two are evenly combined and no dry oats remain. The drier the mixture, the more firm the bars will be, so stir in extra oats if the mixture seems wet.
- Transfer the mixture to the prepared square baker. Use your spoon to arrange the mixture fairly evenly in the baker, then use the bottom of a flat, round surface (like a short, sturdy drinking glass), covered in a small piece of parchment paper (see photo), to pack the mixture down as firmly and evenly as possible.
- Cover the baker and refrigerate for at least one hour, or overnight. Use a sharp knife to slice the bars. For portability, you can wrap individual bars in plastic wrap or parchment paper. Bars keep well for a couple of days at room temperature, but I recommend storing individually wrapped bars in a freezer-safe bag in the freezer for best flavor.

- Line an 8x8 baking dish with parchment paper so that it hangs over the edges.
- *Optional - spread oats on a baking sheet in a single layer and toast in the oven for 7-10 minutes shaking the pan occasionally until just starting to turn golden brown. Remove from the oven and let cool a few minutes.

Now these granola bars are a family favorite, and I feel good about feeding them the wholesome treat. Use organic ingredients if you can! (Preparation time includes toasting and cooling the oats.)

- Preheat oven to 350 degrees.
- Spread oats onto an un-greased cookie sheet and bake for 15 minutes, stirring a couple of times.
- Mix oil, honey and vanilla in a large bowl.
- Add cooled oats, chocolate chips and nuts (if using) and mix well. (Note: If the oats are still warm at all, the chocolate chips will melt.).
- Line a 9x13 baking dish with parchment paper and mist with oil.
- Spread the mixture evenly onto the parchment.

- Place dates into the bowl of a food processor fitted with a steel blade. Pulse until finely chopped. Add the tahini, maple syrup, vanilla extract, and sea salt. Process until a smooth paste forms. - Preheat the oven to 350 and place the rack to the middle position. Line a 13 x 9 inch baking dish or pan with parchment paper (or foil) by spraying the dish with baking spray to help it stick. Make sure the parchment over-hangs the sides so you can lift out the bars. Spray the parchment, too.
- Place the sliced almonds into a food processor (or chop by hand) and process until they resemble oats. Place the chopped almonds into a medium bowl. Chop the pecans and walnuts into smaller pieces - I use a chef's knife. Add them to the almonds. Add the gogi berries, pumpkins seeds, sunflower seeds, golden flax meal, chocolate chips, cinnamon, ginger and powdered sweetener into the bowl. Mix thoroughly. Pour the butter over and mix again. Add the fiber syrup and mix one more time.
- Pour the chewy granola bar mixture into the prepared baking dish and distribute as evenly as possible. Lay a piece of waxed paper on top of the mixture and using a flat bottomed glass, firmly press the granola mixture into the dish.
- Bake for 15-20 minutes or until it just begin to brown around the edges. Let rest in the dish for 10 minutes. Remove to a cooling rack by using the parchment to lift it out. Let it cool completely before cutting into 16 bars with a large, sharp chef's knife. Apply pressure in a downward motion and resist sawing back and forth. Store in an airtight container.
