Steps:
- Preheat the oven to 400°F and make sure your green beans are dry and snipped (the fibrous end cut off).
- Combine the grated Parmesan cheese with the seasonings on a shallow plate and mix to evenly disperse everything.
- Whisk an egg in a bowl large enough to drench the green beans in. Drench a handful of green beans in the beaten egg and let the excess drop off for a few seconds.
- Gently press the green beans in the Parmesan cheese mixture and sprinkle some cheese over. Toss gently with your hands.
- Place the green beans on your largest, greased baking sheet making sure they have room on all sides to crisp up in the oven. Bake for about 10 minutes, checking to see that the cheese has become slightly golden.
- Let the green beans cool until they can be handled. Serve with some spicy mayo or ranch and enjoy!

Steps:
- Heat oil in a medium saucepan over medium heat until it reaches 375 degrees F on a deep-fry thermometer (oil temp will drop slightly with addition of green beans -- maintain at 350 degrees F). Reduce heat to low if it gets too hot.
- Meanwhile, combine mayonnaise and chipotle in a small bowl; set aside. Mix 1/2 cup flour; the cornmeal salt and pepper in a medium bowl. Put remaining 1/2 cup flour in a second bowl and buttermilk in a third bowl.
- Working with about 10 beans at a time, dust beans with flour, dip in buttermilk, then dredge in cornmeal mixture, breaking clumps apart as needed.
- Carefully drop beans into hot oil, turning to keep them from sticking. Fry beans until golden brown, about 3 minutes, increasing or reducng heat as needed to keep oil at 350 degrees F. Using a slotted spoon, transfer beans to a tray lined with paper towels. Serve with spicy may on the side.

GREEN BEAN FRIES
These are tasty alternatives to both regular french fries and also a way to get in your veggies! I make them by the truckload and freeze them. My husband hates green beans but gobbles these up! Serve with Ranch dressing or another favorite dipping sauce.

ALMOST-FAMOUS GREEN BEAN FRIES
T.G.I. Friday's doesn't exactly specialize in health food: The mega-chain is famous for bar food like loaded potato skins and Jack Daniel's-glazed chicken wings. So, it's no surprise that when the restaurant added veggies to the appetizer list, they were deep-fried. The dish, Crispy Green Bean Fries, hit the menu in 2006, and customers went crazy. The beans are coated in a garlicky breading, fried and served with cucumber-wasabi ranch dip. They're a top-seller these days, and fans like Karlyn Siegwarth from Pittsburgh have been begging us for the recipe. Reps in Carrollton, TX, wouldn't give it up, so our chefs created this perfect copy.

Steps:
- Make the dip: Puree the dressing, cucumber, horseradish, milk, vinegar, wasabi powder, cayenne pepper, and salt to taste in a blender until smooth. Cover and refrigerate until ready to serve.
- Prepare the beans: Fill a large bowl with ice water. Bring the broth to a boil in a saucepan over high heat. Add the green beans and cook until tender, about 5 minutes. Remove the beans with a slotted spoon and transfer to the ice water to stop the cooking. Let cool in the water, then drain and pat dry.
- Whisk the egg and milk in a shallow bowl. Put 1/2 cup flour in another shallow bowl. Combine the breadcrumbs, the remaining 1/2 cup flour, the onion powder, garlic powder, cayenne, and salt and pepper to taste in another bowl.
- Line a baking sheet with parchment paper. Toss the green beans in the flour and shake off the excess. One at a time, dip the beans in the egg mixture, dredge in the breadcrumb mixture and lay on the prepared baking sheet. Freeze until the coating is set, about 30 minutes.
- Heat 3 inches oil in a deep pot over medium heat until a deep-fry thermometer registers 350 degrees F. Fry the green beans in batches until golden brown, 1 to 2 minutes. Transfer the beans with tongs or a skimmer to a rack or paper towels to drain. Serve with the dip.

- Pre-heat the oven to 400 degrees F. Line a large baking sheet with a non-stick mat or parchment paper.
- Place panko in a large shallow bowl or on a plate. Season with garlic powder, smoked paprika and salt (about 1/4 teaspoon each) and mix until combined.
- Drain the chickpeas and pour the chickpea liquid (aquafaba) into a large bowl. Beat with an electric mixer on high until white and fluffy, 3-5 minutes. It’s ok if part of it is still liquidy at the bottom, you just need most of it to be white and fluffy.
