ORANGE OATMEAL MUFFINS
These are moist muffins with a hint of orange flavoring in it. I received this recipe from my great aunt at the time I was married.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease or paper-line muffin pans.
- In a small bowl soak oats in orange juice and water for 15 minutes.
- In a large bowl cream together butter or margarine and sugars. Beat in eggs and oat mixture.
- In a separate bowl, blend flour, baking powder, soda, salt, and nutmeg. Stir into batter. Stir in vanilla and raisins. Spoon batter into prepared muffin pans, filling 2/3 full.
- Bake at 350 degrees F (175 degrees C) until golden brown, about 20 minutes.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
- Whisk flour, sugar, oats, baking powder, and salt together in a bowl.
- Measure out 1 cup of reserved mandarin orange liquid; add liquid and vegetable oil to flour mixture and stir until batter is well-combined. Fold oranges and chocolate chips into batter. Spoon batter into prepared muffin cups.
- Bake in the preheated oven until golden brown, about 25 minutes.

These low-fat soft orange muffins are bursting with sweet orange flavour. By far the best orange muffin I have made. The original recipe is for orange date muffins but I often replace the dates with chocolate chips. Dates have been a staple food of the Middle East for thousands of years

Steps:
- Cut orange into 8 or more pieces, remove seeds.
- Place cut orange into a blender or food processor.
- Blend into rind is finely ground; add orange juice to this mixture to make it easier to grind.
- Add dates (or chocolate chips), egg, and margarine; blend until mixed (if using chocolate chips you may want to add them in step 6 instead of in this step).
- In a large bowl, mix together flour, baking powder, baking soda, and sugar.
- Add orange mixture to dry ingredients; stir gently until just mixed.
- Spray 12 medium-large muffin cups with cooking spray.
- Fill tins 2/3 full.
- Bake at 400F for 15 minutes.

OATMEAL ORANGE MUFFINS
I love the orange flavor of these, different for a muffin. Yummy! I got this recipe from an old (1980's) Canandian cookbook called "Muffin Mania". I usually double or triple the recipe and freeze the extras.(Prep time includes soaking time.)

- Preheat your oven to 400 degrees. Combine all the dry ingredients in a large bowl: flour, oats, sugar, baking powder, salt, cinnamon. Whisk the egg in a smaller bowl. Add the buttermilk. Microwave the Nutella until it's thinner, like a chocolate sauce, about 20-25 seconds or so (do not do this in the actual Nutella container). Whisk the Nutella into the egg and buttermilk mixture until smooth. While whisking, gradually pour in the juice from your orange. Whisk in the orange zest and applesauce. Pour the wet mixture over the dry ingredient and continue to whisk until the ingredients are well combined. Stir in the mini chocolate chunks. Place paper muffin cups in a standard muffin pan. Fill each cup to the top with batter. Bake for 18-20 minutes.
