LOW FAT CRAB BURGER

Very easy and tasty alternative to the hamburger. I serve these on whole wheat buns with tartar and/or cocktail sauce.

Number Of Ingredients 7

1/2 lb crabmeat or 1/2 lb imitation crabmeat
1/2 cup fine breadcrumbs
1/4 cup green pepper, finely chopped
1/8 teaspoon red pepper flakes
1 teaspoon seafood seasoning, I use Old Bay
2 eggs or 1/2 cup egg substitute
1 tablespoon canola oil

Steps:

  • Chop crab coarsely.
  • Combine all ingredients and form into patties.
  • Heat oil in non-stick pan and fry patties approximately 4 minutes on each side on medium to medium high heat.

1 tablespoon olive oil
2 minced garlic cloves
1 cup chopped onion
1 cup chopped celery
1/2 cup chopped carrot
1 cup cubed potato (about 2 large)
1/2 cup chopped red bell pepper
1 (8 ounce) can corn (Mexicorn is best)
1 (10 1/2 ounce) can vegetable broth (Swanson)
4 cups skim milk
1 teaspoon butter
1 bay leaf
1 (6 ounce) can premium lump crabmeat
2 teaspoons Old Bay Seasoning (to taste)
salt (to taste)
pepper (to taste)
1 tablespoon flour (optional)

Steps:

  • Heat oil in a large stockpot over medium heat.
  • Add onion and garlic and saute for a few minutes, stirring often.
  • Add celery, carrot, potatoes and peppers and saute until slightly softened, about 5 minutes (NOTE: if potatoes stick, add a little more oil).
  • If you prefer thicker chowder, add the flour now and stir constantly for 2 minutes until cooked
  • Add corn, broth and milk and Bay leaf and bring to a simmer.
  • Simmer over medium-low heat for about 20-25 minutes or until vegetables are softened.
  • Gently stir in can of crabmeat and Old Bay seasoning.
  • Salt, Pepper and butter to taste.

6 ounces fresh crabmeat or 1 6-ounce can, drained
1 1/2 cups fresh white breadcrumbs
1/2 cup chopped green onions
4 1/2 tablespoons mayonnaise
1 teaspoon Old Bay or other seafood seasoning
1 egg yolk
1 1/2 tablespoons Dijon mustard
Vegetable oil
4 large slices French bread

Steps:

  • Mix crabmeat, 1 cup breadcrumbs, green onions, 2 tablespoons mayonnaise and Old Bay seasoning in medium bowl. Season with salt and pepper. Mix in egg yolk. Form mixture into four 2 1/2-inch-diameter patties. Place remaining 1/2 cup breadcrumbs in shallow bowl. Dip patties into crumbs, coating completely. Mix remaining 2 1/2 tablespoons mayonnaise with mustard in small bowl to blend.
  • Prepare barbecue (medium-high heat) or preheat broiler. Brush barbecue rack with oil. Grill burgers until golden brown, about 4 minutes per side. Grill bread slices until lightly toasted, about 1 minute per side. Spread toasts with mustard dressing. Top each with a burger.
