CHICKEN ADOBO - LOWER FAT AND SODIUM
This recipe uses bone-in skinless chicken breasts and less fat and soy sauce than usual. Lemon juice instead of vinegar gives it a different flavour, although use vinegar if that's what you like. You can substitute a whole chicken, cut up and with skin removed. Serve with steamed rice and vegetables.

Steps:
- Heat oil in a large, deep non-stick skillet over medium heat.
- Add onion and cook for 8-10 minutes, stirring occasionally, until browned.
- Remove onion from skillet and set aside.
- Add chicken, garlic, lemon juice, soy sauce, water, pepper and bay leaf to the skillet and stir to combine.
- Bring to a simmer and then reduce heat to low; Cook covered for 25-30 minutes.
- Add browned onion to the chicken and stir.
- Cook, uncovered, an additional 5-10 minutes until chicken is cooked through and tender.

Steps:
- Marinate chicken in vinegar, soy sauce, garlic, jalapeño and pepper, for at least an hour (overnight is ideal).
- Put chicken, 1/2 cup water, bay leaves and marinade into a deep nonstick skillet and cook on medium-low heat. Cover and cook until the meat is tender, about 45 minutes.
- Remove the cover and cook an additional 15 minutes, until the sauce reduces.
- Discard bay leaves and serve over rice if you wish.

- Mix vinegar, soy sauce, pepper, garlic, and chili peppers.
- Marinade chicken in vinegar mixture for 2 to 3 hours.
- BBQ or grill chicken until it is almost cooked through.
- While you are grilling the chicken, remove the minced garlic from the marinade and saute it in the olive oil.
- Add the chicken to the garlic.
- Add the rest of the marinade to the chicken and garlic.
- Boil until chicken is cooked through and the marinade is reduced to 1/2.

- Combine the marinade ingredients (up until the bay leaves) in a large glass bowl or a dish with a lid. Add the chicken and mix well. Cover and refrigerate for 2 hours or up to overnight (the longer the better).
- If possible, give the chicken a stir from time to time to unsure it marinates equally. You can also transfer everything into a large freezer bag as that makes it easier to manipulate.
- Heat oil over medium-high heat in a very large skillet. When the oil is hot, add the chicken to the pan (reserving the marinade) and brown it on all sides.

- Without separating or peeling the cloves, cut entire head of garlic in half through the “equator” (it’s fine if some cloves become detached). Thinly slice 1 green chile, removing seeds if desired for less heat.
- If you got whole chicken legs (if not, go to the next step), cover surface of cutting board with a double layer of plastic wrap and place legs skin side up on top (this is to protect your board from any possible contamination; if you have a cutting board that you use for raw meat, use that). You’re going to split the legs into thighs and drumsticks. Working one leg at at time, wiggle drumstick so you can see the joint connecting the thigh and drumstick. Slice down with your knife crosswise between the two, aiming for the joint, until you hit bone. Grasp leg with thigh in one hand and drumstick in the other and break the joint, then cut the rest of the way through with your knife. Repeat with remaining legs.
- Heat 1 Tbsp. vegetable oil in a large Dutch oven over medium. Add chicken skin side down and cook, lifting pieces with tongs once or twice toward the end to let hot fat flow underneath, until fat is rendered and skin is crisp and golden brown, 7–10 minutes. Transfer skin side up to a plate. Because drumsticks are covered entirely in skin, you can brown both sides, but it’s not necessary.
- Add ¾ cup vinegar, ¾ cup soy sauce, 1 Tbsp. brown sugar, 5 bay leaves, and reserved garlic and sliced chile to Dutch oven. Bring to a simmer, then reduce heat to low, stirring to dissolve sugar. Season generously with pepper. → Wait a second, what is white vinegar, anyway?
