SEAFOOD CREOLE
This is a spicy sauce similar to etouffee. By adding seafood, it becomes Seafood Creole. Due to the seasoning mix, it is quite spicy. This can be controlled by adjusting the amount of the peppers. I like mine full strength, but for the wife I have to cut the peppers down to 1/8 teaspoon each. This recipe can easily be doubled or quadrupled for large affairs. It goes great with rice, garlic bread, a green salad and a good white wine, such as white Merlot, white Cabernet, Johannisburg Riesling, or Gewurztraminer. Use your favorite firm, white fish fillets in this recipe. Canned diced tomatoes can be used in place of chopping fresh tomatoes.

SHRIMP & CRAB CREOLE
I love Creole dishes, as long as they are not to spicy, which seems to be the case when I eat it out. I usually give up on ordering it in restaurants and make my own. You can adjust the spice in this one to suit your taste. You can also substitute crawfish for shrimp in this dish. Enjoy!

Steps:
- 1. Melt butter in a large skillet. Add celery, bell pepper and onions and saute vegetables until clear. Stir in tomato soup and sauce. You may add some water if it is too thick. Add roux and simmer until roux is dissolved.
- 2. Season crabs and shrimp with steak seasoning, salt and pepper. Add seafood to the gravy and simmer on low heat for approximately 2 hours, stirring often. Shrimp should be very tender and the crab meat should begin to break into the gravy.
- 3. Add water to desired thickness. Serve over cooked rice.

- In a large stockpot or gumbo pot, heat the oil over medium heat, then stir in the flour. Cook until roux is your desired color - we find that a dark brownish color, almost the color of a Hershey bar, works best. You will need to stir the roux pretty frequently so that it doesn't burn, but if you park your cutting board next to the stove, you can get all your vegetables diced up while the roux cooks.
- While cooking the roux, you can also bake your okra in the oven - about 350°F for 30 minutes, stirring as needed. (This will help get rid of that slimy okra texture that so many people hate.)
