Beef Enchilada Casserole is layers of seasoned ground beef, corn tortillas, enchilada sauce, and cheese. It makes a great family friendly Mexican dinner. It is like having authentic beef enchiladas without all the work!

1 lb ground beef (prefer 85/15 for flavor and less grease)
1 medium yellow or white onion (diced )
3 garlic cloves (chopped )
1 tsp kosher salt
2 tsp chili powder
1 tsp cumin
3 tbsp water
1/3 cup fresh cilantro **OPTIONAL (chopped )
2 10 oz cans red enchilada sauce (If you make your own sauce you will need about 2 1/4 cups.)
15 corn tortillas
8 oz block of cheddar cheese, shredded

Steps:

  • Preheat the oven to 350°
  • In a large skillet brown and crumble the ground beef, drain any excess grease.
  • Add the onions, garlic and salt saute for about 5 minutes until the onions are slightly softened. Stir in the 3 tbsp water, 2 tsp chili powder, 1 tsp cumin.
  • If using the cilantro, stir it in now. Remove the pan from the heat.

1/4 cup picante sauce
12 corn tortillas
2 lbs ground beef
1 onion, chopped
1 -1 1/2 teaspoon salt, to taste
1/8 teaspoon pepper
2 teaspoons ground cumin
1 tablespoon chili powder
1 teaspoon garlic powder
1 can ripe olives, sliced
1/2 cup butter or 1/2 cup margarine
2 tablespoons all-purpose flour
1 1/2 cups milk
16 ounces sour cream
2 cups shredded cheddar cheese

Steps:

  • In large, shallow dish, mix water and 2 Tablespoons picante sauce.
  • Place tortillas in mixture for 5 minutes, then drain.
  • Brown ground beef and onion in heavy skillet, then drain.
  • Stir in salt, pepper, cumin, chili powder, garlic powder, olives, and 1/4 cup picante sauce.
  • Simmer meat mixture for 5 minutes.
  • In heavy saucepan, melt butter over low heat.
  • Add flour, stirring until smooth.
  • Cook 1 minute, stirring constantly.
  • Gradually stir in milk.
  • Cook over medium heat, stirring constantly, until bubbly and thickened.
  • Remove from heat and add sour cream, stirring until well blended.
  • Place 1/2 of tortillas in a 13 x 9 x 2 inch baking dish.
  • Pour 1/2 of sour cream mixture over tortillas.
  • Spoon 1/2 of meat mixture evenly over sauce.
  • Sprinkle 1/2 of cheese over meat mixture.
  • Repeat layers with other half of ingredients.
  • Bake in pre-heated 375 degree oven for 25 minutes.

1.25 pounds lean ground beef
½ onion (diced)
10 ounces red enchilada sauce ((1 can))
1.5 cups shredded cheddar cheese
4 ounces chopped green chiles ((1 can))
8 corn tortillas ((or 12 street taco sized corn tortillas))

Steps:

  • Preheat oven to 425˚F.
  • Cook the ground beef and onion in a large skillet over medium high heat until the beef is cooked through and the onion is clear. Drain any excess fat.
  • Turn the burner off and add the enchilada sauce (reserve 1 tablespoon) and green chiles. Mix to combine.
  • In a 8x8 casserole dish, pour the reserved enchilada sauce and spread to cover the bottom. Lay half of the tortillas in the bottom of the dish. You can cut the tortillas to fit if needed.
  • Add half the beef mixture, then top with half the cheese. Repeat with tortillas, meat, and cheese.
  • Bake for 20 minutes, or until the edges are bubbling and the casserole is hot throughout.
  • Garnish with your choice of chopped green onions, fresh cilantro, or pico de gallo.

1 cup chopped onion
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup sour cream
1 can (4 ounces) chopped green chilies
3 cups shredded cheddar cheese, divided
3 cans (10 ounces each) enchilada sauce, divided
12 flour tortillas (8 inches), warmed

Steps:

  • Preheat oven to 350°. In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Add soup, sour cream, chilies, 1 cup cheese and 1/2 cup enchilada sauce; heat through., Spread 1/4 cup enchilada sauce into each of two ungreased 13x9-in. baking dishes. 2 lbs ground beef
1 (1 1/4 ounce) packet taco seasoning
1 (4 ounce) can diced green chilies
16 ounces sour cream
2 (10 1/2 ounce) cans cream of chicken soup
10 flour tortillas
1 cup cheddar cheese, shredded
salsa (optional)

Steps:

  • Brown meat, then drain grease.
  • Add taco seasoning and ½ green chilies.
  • Combine sour cream, soup, and other ½ chilies in a saucepan and heat through.
  • Pour enough soup mixture into a 9 x 13" pan to coat bottom.
  • Heat tortillas 30 seconds in the microwave.
  • Fill tortillas with meat mix, wrap, and place in pan.
  • Pour the rest of the soup mixture over the top of tortilla wraps and sprinkle with cheese.
  • Bake at 350 degrees; for 35-40 minutes, or until cheese is melted and soup is bubbling on the sides.
  • Serve with salsa, if desired.

This was an experimental meal, but when my guys tasted it, they said it was a winner. Very quick and easy, suitable for beginning cooks. You can embellish this basic version however you choose by adding chopped green chilies, black olives, etc. I like to add fresh lettuce, onions, tomatoes, and salsa on top at serving time. 1/8 of the casserole is 7 WW points. After obtaining calorie counts for each ingredient listed in the recipe from My Fitness Pal, the ENTIRE casserole comes in at 2200 calories. One serving would be 275 calories.

6 flour tortillas
2 (9 3/4 ounce) cans cooked chicken, drained
1 (10 1/2 ounce) can low-fat condensed cream of chicken soup
3/4 cup water
1 (1 1/4 ounce) envelope taco seasoning mix
1 (15 ounce) can black beans, rinsed and drained or 1 (15 ounce) can chili beans, not drained
2 cups shredded low-fat cheddar cheese, divided

Steps:

  • Grease a 9x13 pan with shortening or spray.

1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
2 garlic cloves, minced
1 (15 ounce) whole kernel corn, drained
1 (15 ounce) ranch style beans, drained
1 (10 1/2 ounce) fat-free cream of mushroom soup, undiluted
1 (10 1/2 ounce) Rotel Tomatoes, drained
1 (1 1/4 ounce) package taco seasoning mix
8 corn tortillas, halved
1/3 cup fat free sour cream
1/3 cup reduced-fat Mexican cheese blend
1/2 bunch chopped fresh cilantro

Steps:

  • Brown the beef with onions, peppers, and garlic, stirring to break up the beef.
  • Cook until no longer pink. Drain the meat mixture well. I like to press the mix with paper towels to remove as much excess fat as possible.
  • Return the beef to the skillet.
  • Add the corn, beans, Rotel tomatoes, soup, sour cream and taco mix to the beef and simmer on low for 5 minutes.
  • Spray a 13x9 pan with cooking spray.
  • Layer 8 halves of tortillas on the bottom of pan and top with 1/2 of the beef mixture. Repeat layer with remaining tortillas and beef.
  • Bake at 350°F for about 30 minutes.
  • Remove from oven and top with grated cheese.
  • Let set 5-10 minutes, then top with fresh chopped cilantro and serve.

  • Preheat oven to 325 F. Trim fat from meat. In a small bowl, combine 4 teaspoons of the chili powder, the cumin and oregano. Sprinkle spice mixture evenly over all sides of beef, rubbing it in with your fingers.
  • Place beef in shallow roasting pan, top with sliced onions, pour broth and vinegar over the meat. Roast in oven, covered, about 3 hours or until meat is fork tender. Let meat stand in pan juices about 15 minutes or until cool enough to handle. Remove meat from pan. Using a slotted spoon, remove onions; reserve pan juices. If you trimmed the meat well you shouldn't have too much fat on the surface, but if you do, skim off with a spoon or use a fat seperator (I use Oxo, got it from Amazon, works great). Halve meat crosswise. Shred meat using two forks. Stir onions into the shredded meat; stir in enough of the reserved pan juices to moisten (1/2 to 1 cup). Set meat mixture aside and discard remaining pan juices.
  • In a medium saucepan combine undrained chile peppers and the remaining 1/2 teaspoon chili powder; cook about one minute or until heated through. Stir in flour. Cook and stir for one minute more. Remove from heat. Stir in sour cream and 1/2 cup of the cheese.
  • Increase oven temperature to 350 F. Grease or spray a 13x9 baking dish; set aside. Divide the shredded meat mixture among tortillas, placing meat mixture along one edge. Top with sour cream mixture and roll up tortillas (they will be full). Arrange in baking dish, seam side down. Bake, covered, for 30 minutes; uncover. Spoon salsa verde over the enchiladas, and sprinkle with the remaining 1 1/2 cups of cheese. Bake uncovered, 10 minutes more, or until cheese is melted and enchiladas are heated through.
