PINEAPPLE AGUA FRESCA
A delicious pineapple agua fresca that's perfect for hot summer days! Sweet pineapple, water, and lime juice blended together to make a refreshing drink!

Steps:
- Add the pineapple chunks and water in a high speed blender and puree until smooth. Don't fill your blender more than two-thirds of the way full. Work in batches if needed.
- (Optional) Strain the pineapple pulp for a smoother consistency with a medium sieve.
- Pour the pineapple juice in a large pitcher and add the sweetener and lime juice. Adjust according to how sweet your pineapple is. If using herbs, muddle them gently before adding them to the pitcher. Serve chilled or over ice. Makes about 8 cups.

- Place pineapple, lime juice, mint, and sugar in blender. Blend on HIGH until mixture is frothy, about 30sec. to 1min.
- Pour into a tall pitcher. Add club soda and stir once or twice to mix. Immediately pour into sugar-dipped, ice-filled glasses. Garnish each serving with a mint sprig.

PINEAPPLE AND LIME AGUA FRESCA

When I made this, I made a half batch, but my limes were small and I used 1/2 lb of pineapple and 2 limes - and probably could have used 3. I also used sparkling mineral water, and it was fine. Sugar will be to taste, depending on how tart your fruit is.

Steps:
- Peel the pineapple and chop the flesh, removing core and "eyes.".
- You should have about 1 lb of fruit.
- Put pineapple in food processor or blender and add the lime juice and half the mineral water.
- Puree to a smooth pulp.
- Stop processor and scrape the mixture from the side once or twice during processing.
- Place a strainer over a large bowl.
- Tip the pineapple pulp into the strainer and press it through with a wooden spoon.
- Pour the strained mixture into a large jug, cover and chill in the fridge for about 1 hour.
- Stir in the remaining mineral water and sugar to taste.
- Serve with ice.
- (I'm thinking the grown-ups may want to add something else as well - rum or vodka or tequila all come to mind).

Steps:
- Pour water into a large pitcher, add sugar and stir until all the sugar has dissolved. Chill for at least one hour.
- Using a zester or grater, remove the zest from all the limes, making sure to only get the colored zest and not the pith.
- Squeeze the juice from the limes and add to the sugar water, along with the zest.
- Stir well and chill until needed.
- Serve over ice in a tall glass.
- Garnish with lime slices.
AGUA FRESCA DE PINA (PINEAPPLE)
I love aguas and this one is a little different. The mint makes it refreshing. Note: To make your glasses look festive you can wet the rim of the glass with water, juice or by running a lime or lemon along the rim. Then, dip the glass in decorative sugar of your choice.
