SPICY CHILI BEAN BURGERS
Come and get 'em! Veggie burgers packed with fiber-rich cereal are ready in less than 30 minutes.

Steps:
- Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
- In medium bowl, mash beans with fork until no whole beans remain. Add crushed cereal, oats, onions and egg; mix well. Shape mixture into 5 patties, each about 3 1/2 inches in diameter.
- Spray 12-inch skillet with cooking spray. Add patties; cook over medium heat about 10 minutes, turning once, until brown.
- For each sandwich, place 1/4 cup spinach leaves and 1 tomato slice on bottom half of bun; top with bean burger and top half of bun.

HEALTHY CHILI BEAN AND BULGUR BURGERS
Don't let these veggie burgers fool you: They may look like fried-chicken sandwiches, but they're actually packed with plant protein and fiber and flavor! We love the simple broiler method for cooking the patties. A light coating of cooking spray makes the outside come out nice and crunchy.

- Bring the bulgur and 1 1/2 cups water to a boil in a small saucepan. Reduce the heat to medium-low, cover and simmer until tender, 10 to 12 minutes. Strain, and let cool completely.
- Meanwhile, heat the oil in a small skillet over medium-high heat. Add the tomato paste, chili powder, cumin and cayenne, and whisk until the oil is yellow and the spices are fragrant, about 45 seconds. Let the chili oil cool to room temperature.
- Whisk together the sour cream, lime zest and juice, a pinch of salt and 1 tablespoon water in a small bowl. Refrigerate until ready to serve.
- Position an oven rack at the top of the oven, and preheat the broiler. Line a baking sheet with foil. Mash the beans, cooked bulgur, cheese, breadcrumbs, scallions, chili oil and 1/2 teaspoon salt with a potato masher in a large bowl until the mixture is well combined and holds together when squeezed. Form into 4 uniform patties about 3/4 inch thick.
- Arrange the patties on the prepared baking sheet, and generously coat each with cooking spray. Broil until a golden-brown crust forms, 4 to 5 minutes. Remove the baking sheet from the broiler, flip each patty with a metal spatula and coat the tops with cooking spray. Broil until the tops are golden brown, 4 to 5 minutes more.
- Halve, pit and slice the avocado. Put each patty on a muffin bottom and sprinkle with additional cheese if using; top with some sour cream-lime sauce, avocados and sprouts, and sandwich with the muffin top.

SPICY BLACK BEAN BURGERS
Super yummy and simple black bean burgers with a spicy jalapeno twist!

- Whisk egg, cumin, chili powder, and chile-garlic sauce together in a bowl.
- Mash black beans in a separate bowl until they reach a paste-like consistency.
- Stir jalapeno pepper, corn, and garlic through the black bean paste.
- Mix the egg mixture into the black bean mixture.
- Scatter the bread crumbs over the black bean mixture; mix with your hands to evenly incorporate.
- Form the resulting mixture into 4 patties.
- Pour flour into the bottom of a shallow dish; coat the patties in the flour to help them hold shape.
- Heat vegetable oil in a skillet over medium heat. Cook the patties in hot oil until cooked through, about 5 minutes per side.

BEAN CHILI VEGGIE BURGERS

- Pulse the oats, cumin, chili powder, oregano, and beans in a food processor until a coarse puree forms. Add the pimentos, celery, parsley, and shallots. Pulse just until evenly distributed throughout. Form the mixture into 4 patties to match the diameter of the buns. Heat the oil in a large skillet over medium heat. Add the patties and cook, turning once, until crisp and browned on the outside and hot inside, about 10 minutes. Divide the greens and tomato slices among the bottom buns, top with the patties and sauce, and sandwich with the top buns.
- For Toppings: Fold together the ingredients (for each topping separately) until well-mixed.
SPICY BLACK BEAN BURGERS WITH OATS
Here is a healthy vegetarian alternative to your typical hamburger. I have included several spicy ingrecients to kick up the blandness of the black beans and oats.

- Heat a nonstick frying pan over medium heat until hot. Add the oil and when it is warm, add the onion. Stir-fry for 5 minutes.
- Add the jalapeno peppers and cook for another 2 minutes, stirring occasionally.
- Add the garlic and cook for another 2 minutes, stirring occasionally.
- Turn off heat and stir in the chili powder, ground cumin and oregano. Remove from heat and set aside to cool.
- Meanwhile, rinse and drain (several times) the black beans and then put them into a large mixing bowl.
- Roughly mash the black beans with a potato masher or a fork.
- Add the uncooked oats and stir to combine.
- Add the cooked onions and stir to combine.
- Add the eggs,cilantro (more or less depending on how much you like cilantro), salt and pepper. You can add a bit more pepper if desired.
- Mix well and form into patties. They are easier to fry if you make a smaller size pattie and use a smaller hamburger bun.
- Heat a frying pan over medium-high heat and cook 4-5 minutes on the first side, or until well browned. Carefully flip over the burgers and cook about 3 minutes on the second side. Like most vegetarian burgers, they can crumble, so extra care needs to be taken when frying them.
- Serve with your favorite garnishes.
CHILI BEAN BURGERS (VEGGIE BURGERS)
Great veggie burger recipe with a chili and cumin kick in it. We make these all the time to get a vegetarian protein fix. Adapted from a great Moosewood Restaurant Recipe. These are really filling, so we've found that slightly thinner, smaller patties are usually better, and you can fit toppings on that way. We will also sometimes add a tbsp of crushed red pepper flakes in with the cumin and chili pepper to really spice it up!

- Saute onions and garlic in oil for about 5 minutes until the onions begin to soften.
- Add carrots, chili powder and cumin. Cook on low heat for 5 minutes. Set aside.
- Mash the beans in a large bowl with a potato masher or the back of a spoon, or run through a food processor.
- Add the mustard, soy sauce, ketchup or tomato paste and the sauteed vegetables.
- Mix in the oats.
- Add salt and pepper to taste.
- Moisten your hands and form the burger mixture into six or so patties.
- Oil a nonstick skillet and cook burgers on medium-low heat for 5-8 minutes on each side. Put them on a bun and they are good to go with ketchup or whatever sauce you like and toppings (lettuce, tomato, onion, etc.)!
SPICY LENTIL BURGERS
I got this recipe out of "The WIC Bean Book." I altered it a little to fit my tastes, adding chili powder and the veggie cheese. The chili powder is appx. is use your best jugdement. These burgers turned out really good; nice and tender, not hard like many of the frozen patties you can buy. Even my husband "the meat eater" liked these!

- Wash lentil, add water and bring to a boil in a large saucepan.
- Lower heat, cover, and cook 15 minutes.
- Add onions and carrots.
- Cook 15 min.
- more or until lentils are very tender.
- Remove from heat and cool slightly.
- Stir in bread crumbs, egg, garlic salt, oregano, and salt.
- Melt butter in large skillet and drop lentil mixtute by one-half cupfulls in hot butter; flattening mounds w/ spatula.
- Cook until firm and golden brown on both sides.
- Top each patty w/ 1 slice cheese; heat until melted.
- Serve on toasted buns.

- Preheat a grill for high heat. When the grill is hot, lightly oil the grate.

SPICY CHILI BEAN BURGER
I got the original recipe for this from Betty Crocker. I made a few minor modifications to the list of ingredients and the prep method. These are a great way to get added fiber to your diet. I haven't tried freezing these yet, but I have refrigerated the final burgers and warmed them up with good results. I like to use chili beans in spicy sauce. Prep time includes time to refrigerate the patties.

- Place all ingredients in a food processor and process until smooth.
- Transfer mixture to container and refrigerate to firm up mixure (I usually let it set overnight, but I would think 2 hours would be enough to firm it up).
- When ready to cook the burgers, take the mixture and form into 5 patties.
- Coat a large skillet with non-stick cooking spray and heat over medium heat.
- Place patties in skillet and cook for 15-20 minutes, turning once. The patties will get a little brown when done (although it's hard to tell because the mixture is brown to begin with! When they are firm, they're done).
