EGG-FREE, WHEAT-FREE, DAIRY-FREE CHOCOLATE CHIP COOKIES
I threw these cookies together yesterday for a family dinner. My fiance thinks they are the best cookies I've ever made - very soft and a little crumbly. I didn't actually measure each ingredient as I tend to eyeball certain things but I've been baking for years so my approximations are usually close!

Steps:
- Preheat oven to 350°F and line cookie sheets with parchment paper.
- Cream together butter and sugar.
- Stir in vanilla.
- Stir in applesauce.
- Combine flour, cornstarch, salt, and baking soda.
- Stir dry mixture into creamed mixture.
- Stir in chocolate chips.
- Drop spoonfuls of cookie dough onto prepared sheets and bake, one sheet at a time, for about 8 minutes or until golden-brown.
- Allow to cool 5 minutes on cookie sheet before removing to drying rack.

- Preheat the oven to 325 degrees F (165 degrees C). Line 2 baking sheets with parchment paper.
- Whisk together flour, baking soda, and salt.
- Beat brown sugar and vegan butter in a large bowl for 2 to 3 minutes. Mix in eggs and vanilla. Add flour mixture and mix until combined. Fold in vegan chocolate chips.
- Drop small spoonfuls of dough 2 inches apart onto the prepared baking sheets.
- Bake in the preheated oven until edges are golden, rotating halfway through about 10 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely.

Steps:
- Preheat oven to 350°F (175°C).
- Mix flour, baking soda and salt.
- In a large bowl mix brown sugar, powder sugar, butter and vanilla extract.
- Add bitten egg whites to sugar mixture.
- Gradually alternate and add milk and dry ingredients to the sugar + egg mixture.
- Mix in the chocolate chips.
- Using two spoons, place cookie portions onto baking sheet lined with baking paper. Make sure to leave a lot of space between cookies.
- Bake for 10-12 minutes, until center of cookie is stable - DO NOT over bake!.
- Place baked cookies on cooling net.
- * When cookies are ready they are moist and soft - they are not supposed to be dry and hard.

- Remarks:.
- * When using a mixer follow the same order of directions: first the sugar mixture, egg-whites and lastly the dry ingredients and the chocolate chips.
- * If you'd like the recipe to be Pareve, you can use margarine instead of butter, and water instead of milk - but I am not sure about the taste -- .
