DIETETIC DIABETIC PINEAPPLE PUDDING
I am on a rather strict diet at the moment, and came up with this yummy dessert that meets the letter of the 'law' if not the spirit! Be sure to use pineapple in its own juice, NOT pineapple in syrup. Cook time is chill time - this is very quick to make.

Steps:
- Mix the pineapple, with its juice, the soymilk and the tapioca in a medium sized pot.
- Heat over medium heat, stirring frequently.
- Once it begins to simmer, turn it down and continue stirring, until thickened, about 10 minutes. There should not be any white specks left in the tapioca.
- Remove from the heat and stir in the vanilla.
- Divide amongst small serving dishes and garnish with a few berries if desired; blueberries, strawberries or raspberries would all be good.
DIABETIC LEMON PUDDING
Low fat, low sugar and yummy. This is a small recipe it doesn't make a lot. It helps to place the paper cups into a muffin tin for support until set. The prep time is actually chill time.

PINEAPPLE CREAM PIE (DIABETIC)
This wonderful pie is just too good for words! I think it's the sour cream that adds so much richness without overpowering. I got this recipe from a junior high school cook I work with. She brought this pie to a get together and I JUST HAD to have the recipe! So smooth, creamy and sweet, it does not taste diabetic! I love this pie!

DIABETIC RICE PUDDING FOR TWO
My husband loves rice pudding, but he's diabetic (we both are). This is a simple recipe which only makes enough for two servings. He can't pig out! I usually set aside cooked rice just to make this for him.

LIGHT PINEAPPLE PUDDING
This light dessert can be made even lighter if you choose the fatfree instant pudding. Note that vanilla yogurt gives this dessert a richer flavour.

- Spoon into serving dishes and chill until serving time (needs only 30 minutes at the most in the fridge before they're ready to eat).
- These look particularly attractive when garnished with a few fresh berries-- try blueberries or raspberries.
- If taking to a potluck, don't spoon it into individual dishes but rather leave it in the bowl.
