LOW CARB ZUCCHINI FRIES
A baked zucchini fry with crushed almonds replacing bread crumbs makes a very light, tasty dish. Zucchini are prepped first to get rid of extra liquid so they do not become soggy in the oven. Like having fried food without the oil.

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Cut zucchini into 3-inch lengths, then cut each piece into 9 fries. Place zucchini fries into a colander and sprinkle with salt. Let the zucchini pieces drain for at least 1 hour to remove excess liquid.
- Beat eggs in a shallow bowl. Mix almonds, Parmesan cheese, and Italian seasoning in a second shallow bowl. Rinse salt off zucchini and pat dry with paper towels.
- Dip each zucchini piece into beaten egg and roll in the almond coating. Place coated fries on prepared baking sheet.
- Bake in the preheated oven until the zucchini are tender and the coating is crisp and browned, about 25 minutes, turning them halfway through cooking time.

Steps:
- Preheat the oven to 400F.
- Cut the zucchini into matchsticks, ensuring that each stick has some peel left on.
- Add the eggs and cream to a bowl and stir well.
- Place the pork rinds in a food processor and process into breadcrumbs. Add the Parmesan, process again, then place them in a second bowl.
- Dip each piece of zucchini into the egg mixture, then the pork rind mixture, and then place on a baking rack over a baking sheet.
- Roast for 15-20 minutes until starting to crisp at the edges. Serve warm.

- Get started: Pre-heat the oven to 400 degrees and line a rimmed baking sheet with parchment paper.
- Cut the zucchini: Rinse zucchinis and trim off the ends on each. Cut each zucchini in half lengthwise. Then, cut each of those halves in half again, and then one more time to get thinner slices. Finally, cut each of the strips in half so they're a few inches in length. You should have a total of 16 strips per zucchini. Lightly season the strips with salt. Before dipping the zucchini strips in the whisked egg and parmesan mixture, be sure to pat the zucchini strips dry with a paper towel.
- Make the fries: In a shallow bowl, whisk an egg and set aside. In another bowl, stir together freshly grated parmesan, garlic powder and red chili flakes. After, dip each of the zucchini strips in the whisked egg (remove excess or dripping egg mixture before dipping in parmesan mixture) and then roll in the parmesan mixture. Place each zucchini strip on the prepared baking sheet a few inches apart.
- Bake and serve: After coating all zucchini strips with the egg and parmesan blend, place the pan in the oven and bake for roughly 20 minutes, until golden brown. We usually bake our strips for a full 20 minutes. As soon as the zucchini fries are done baking, remove from the oven and serve immediately (best to eat while still warm).We recommend serving the zucchini fries with a dipping sauce such as our favorite garlic aioli sauce (recipe below zucchini fries -- just takes a few minutes to make!). You could also consider ranch dressing, marinara sauce, or sugar-free ketchup.
