Hearty butternut squash is often roasted as a seasonal side dish, but a whole one might yield too much for a single meal. This double-cheese quesadilla is a great way to use the leftovers.

1 cup mashed roasted butternut squash
1/2 cup crumbled goat cheese (about 2 ounces)
8 (8-inch) flour tortillas
1/2 cup chopped pickled jalapenos
2 cups shredded low-moisture mozzarella, such as Polly-O (4 ounces)
2 tablespoons unsalted butter
Pico de gallo, for serving

Steps:

  • In a medium bowl, mix together squash and goat cheese.
  • For each quesadilla, spread one tortilla with one-quarter of squash mixture (about 1/3 cup), then sprinkle with 2 tablespoons jalapenos and 1/2 cup mozzarella.
  • In a large nonstick skillet, heat 1/2 tablespoon butter over medium until bubbling. Add prepared tortilla to skillet, cheese side facing up. Top with second tortilla. Cook, flipping once, until cheese is melted and tortillas are golden, 2 to 3 minutes per side. Repeat with remaining tortillas. Cut into wedges; serve immediately, with pico de gallo.

BAKED PENNE WITH SQUASH AND GOAT CHEESE



Baked Penne with Squash and Goat Cheese image

1/2 cup panko breadcrumbs
2 tablespoons olive oil
1/4 teaspoon kosher salt
4 tablespoons (1/4 cup) unsalted butter
2 shallots, chopped
1/4 teaspoon red pepper flakes
2 teaspoons kosher salt, plus additional for the pasta water
1/4 cup all-purpose flour
4 cups whole milk
8 ounces goat cheese
1 1/2 cups shredded mozzarella
One 10-ounce delicata squash, halved lengthwise, seeds discarded and sliced into 1/4-inch half-moons
1 pound penne rigate pasta
1/2 cup freshly grated Parmesan
1 pound broccoli rabe, trimmed and chopped into 1-inch pieces

Steps:

  • For the topping: Preheat the oven to 400 degrees F.
  • Mix together the panko, olive oil and salt in a small bowl. Set aside.
  • For the pasta: Heat a large ovenproof braiser over medium heat. Melt the butter in the braiser and add the shallots, pepper flakes and 1/2 teaspoon salt. Cook until the shallots begin to soften, about 2 minutes. Whisk in the flour and stir to cook out some of the raw flour taste, about 2 minutes. Slowly begin to add the milk, adding a small amount at a time and whisking after each addition, until smooth. Bring to a simmer, then reduce the heat to maintain a simmer for 5 minutes. Stir in the goat cheese, 1 cup mozzarella and the squash. Season with the remaining 1 1/2 teaspoons salt.
  • Meanwhile, bring a large pot of water to a boil over high heat. Season well with salt. Cook the pasta for about 6 minutes (it should still be very firm). Using a pasta spider, remove the pasta directly to the sauce but do not yet stir it in. Sprinkle the plain pasta with the Parmesan and stir to combine. Add the broccoli rabe to the pasta water and cook for 30 seconds. Use the pasta spider to drain well, then add to the pasta. Stir to evenly distribute. Sprinkle the top with the remaining 1/2 cup mozzarella and the panko mixture. Bake until bubbly all over, 20 to 25 minutes. Switch to the broiler and broil for 5 minutes to brown the top, if desired.

1 large butternut squash or other large winter squash (about 4 pounds), scrubbed
1 garlic clove, finely grated
1/4 cup olive oil
1/4 cup finely chopped parsley
1 tablespoon finely chopped marjoram or oregano
1 1/2 teaspoons red wine vinegar, divided
Kosher salt, freshly ground pepper
3 ounces fresh goat cheese

Steps:

  • Preheat oven to 425°F. Place squash on a rimmed baking sheet and roast, turning once, until tender, 35-45 minutes. Let cool slightly.
  • Meanwhile, whisk garlic, oil, parsley, marjoram, and 1/2 tsp. vinegar in a small bowl to combine; season herb oil with salt and pepper.
  • Halve squash lengthwise and scrape out seeds. Using a large metal spoon, scoop out large pieces of flesh and place in a large bowl; discard skin. Add remaining 1 tsp. vinegar and gently toss to coat; season with salt and pepper.
  • Transfer squash to a platter and drizzle with herb oil. Crumble goat cheese over.

  • Herb oil can be made 1 day ahead. Cover and chill.

I had a version of this at a restaurant recently and decided to try recreating it at home. I'm posting the recipe as I made it (and enjoyed it), but might suggest if someone is feeling adventuresome that they might add a dash of nutmeg and/or cayenne to the squash while it is cooking.

CARAMELIZED ONIONS
2 large yellow onions
2 Tbsp butter
1 Tbsp olive oil
1 tsp sugar
salt and pepper
ADDITIONAL INGREDIENTS
1 butternut squash, about 1 1/2 - 2 lbs
2 Tbsp butter
salt and pepper
flour tortillas
goat cheese
monterey jack cheese
sour cream and sliced avocado, if desired

Steps:

  • 1. In large skillet over medium-high heat, melt 2 tablespoons of butter with olive oil. While heating, slice onions.
  • 2. Add onions to skillet. Add salt, pepper and sugar. Stir occasionally. As onions start to brown, as shown in picture, stir more frequently to avoid burning. Full caramelization will take about 20 minutes or so.
  • 3. While onions are cooking, place whole butternut squash in microwave for 2-3 minutes to make it easier to handle. Cut off top and bottom of the squash. If you have a sharp vegetable peeler, you can use it to remove the peel; otherwise use a knife. Cut the neck of the squash off from the rounded bottom. Then cut the rounded bottom in half and remove the seeds.
  • 4. Cut the squash into about 1" cubes. Melt butter, and add squash to skillet; salt and pepper the squash. Cook until squash is slightly browned and has softened (much like if you were making potatoes).
  • 5. Place a flour tortilla onto a griddle or skillet. Start building your quesadilla by adding as much or as little of the ingredients as you like. First, add the caramelized onion.
  • 6. Add some of the squash and top with crumbled goat cheese. Add a sprinkle of monterey jack cheese. Fold tortilla over in half and brown both sides, allowing cheeses to melt.
  • 7. Serve with side of sour cream and slices of avocado.

350g chopped butternut squash
100g feta , crumbled
160g bag watercress , spinach & rocket
8 small flour tortillas

Steps:

  • Heat oven to 200C/180C fan/gas 6. Boil the squash for 10 mins or until tender, drain and cool.
  • Divide the squash, feta and half the salad leaves over the tortillas and season well. Fold each tortilla into quarters, place on a baking tray and drizzle with a little olive oil. Put another baking tray on top and push down. Bake with the tray on top for 5 mins, take the tray off and bake for a further 5 mins until golden. Serve with remaining salad leaves.

Vegetable oil cooking spray
1 (2-pound) butternut or kabocha squash, peeled, seeded and cut into 3/4-inch cubes
1 onion, diced into 1/2-inch pieces
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1 pound penne pasta
1 cup (8 ounces) goat cheese, crumbled
1 cup coarsely chopped walnuts, toasted (see Cook's Note)
1 packed cup chopped fresh basil leaves
1/3 cup finely grated Parmesan

Steps:

  • Put an oven rack in the upper third of the oven. Preheat the oven to 425 degrees F.
  • Spray a baking sheet, liberally, with vegetable oil cooking spray. Set aside.
  • Mix the squash and onion together and arrange in a single layer on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper, to taste. Bake for to 40 to 45 minutes until the vegetables are golden and cooked through. Remove from the oven and set aside to cool slightly.
  • While the squash mixture is cooling, bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain and reserve about 2 cups of the pasta water. Put the pasta, goat cheese and 1 cup of pasta water in a large serving bowl. Toss until the cheese has melted and forms a creamy sauce. Add the squash and onion mixture, the walnuts and the basil. Toss well and season with salt and pepper, to taste. Garnish with Parmesan and serve.

2 tablespoons butter, plus more for frying tortillas
1 tablespoon olive oil
1/2 butternut squash, peeled, seeded and diced.
1/2 teaspoon kosher salt
1/4 teaspoon chile powder (more to taste)
Freshly ground black pepper
1 bunch kale, leaves torn, stalks discarded
8 small (fajita-sized) flour tortillas
1 1/4 cups grated Monterey Jack (more if needed)
1 1/4 cups goat cheese

Steps:

  • Heat 1 tablespoon of the butter and the olive oil in a large skillet over high heat. Add the squash and sprinkle with the salt, chile powder and pepper. Cook for several minutes, turning gently with a spatula, until the squash is deep golden brown and tender (but not falling apart). Remove to a plate and set aside.
  • In the same skillet, melt the remaining 1 tablespoon butter over medium-high heat and add in the kale. Toss it around with tongs and cook it for 3 to 4 minutes. Add in the cooked squash and gently toss together.
  • In a separate skillet, melt additional butter and lightly brown both sides of the tortillas.
  • Build the quesadillas one by one starting with a tortilla, adding a layer of the cheeses and a layer of the squash/kale mixture and ending with a second tortilla. You'll have four quesadillas when you're done.
  • Brown each quesadilla on both sides, adding more butter to the pan to make sure the tortillas are nice and golden and yummy. When the cheese is melted, remove each quesadilla from the skillet and cut it into four wedges.

This looks delicious and I'm posting here for safekeeping. Follow-up: Keep an eye on your roasting veggies. Mine were done in 30 minutes and I lowered the temp to 400 F. To please DH, I'm going to try sausage in the mix next time. All in all, a nice change of pace!

800g delicata, acorn or butternut squash
4 tbsp rapeseed or olive oil
25g pumpkin seeds (or use the seeds from the pumpkin or squash you're using)
10 sage leaves
2 tbsp good-quality red wine vinegar
250g pouch cooked puy lentils
100g soft goat's cheese
4 amaretti biscuits
100g kale, rinsed, dried, thick stems removed and leaves torn into crisp-sized pieces
½ tbsp rapeseed or olive oil
1 tbsp white sesame seeds
1 tsp red chilli flakes

Steps:

  • Heat oven to 160C/140C fan/gas 3. Toss the kale lightly in the oil, ½ tsp salt, sesame and chilli, massaging the leaves until coated with the oil and seasoning. Arrange the leaves in one layer in a roasting tin or baking tray - you might need to use more than one to keep them in an even layer. Roast for 15-20 mins until crisp and dry but not brown.
  • Once dried, remove from the oven and turn the heat up to 200C/180C fan/gas 6. Halve the squash and scoop out the seeds. Wash the seeds to remove the sticky membrane, dry them with kitchen paper and set aside. Cut the squash into 1cm thick slices (don't worry about peeling them), and arrange on a baking sheet or in a roasting tin. Drizzle over 1 tbsp oil, season, then turn and drizzle with a little more oil. Season again and roast for 30-40 mins until tender and caramelising, turning halfway through. Remove from the oven.
  • Heat the remaining oil in a non-stick frying pan over a medium to high heat until it's shimmering. Add the sage leaves and fry for 15-30 seconds, turning them once. Remove using tongs or a slotted spoon, place on kitchen paper and scatter with sea salt. Add the pumpkin seeds to the hot oil and fry for a few mins until puffed and crunchy. Drain the oil into a bowl and whisk with the red wine vinegar, a pinch of salt and freshly ground black pepper.
  • Dress the lentils with half the dressing, then spoon onto the plates or serving platter. Arrange the crispy kale and squash on top, crumble over the goat's cheese, and drizzle over a bit more dressing. Finally, top with the fried seeds, and crumble over the amaretti biscuits and crispy sage leaves.

  • Place the cubed butternut squash on the prepared baking sheet. Drizzle with 1½ tablespoons olive oil, and add the brown sugar, cinnamon, cayenne pepper and a good pinch of salt. Toss to coat. Roast for 20-25 minutes, stirring once halfway through, until the squash is tender and lightly browned. Transfer the squash to a bowl and mash with a fork. (A light mashing will do, friends. Texture is a good thing.)
  • While your squash is in the oven, fry up some sage leaves. Heat 2 tablespoons of olive oil in a small saucepan over medium-high heat. When the oil is very hot, add the sage leaves in batches and cook for 3-5 seconds until crisp. Place the fried sage leaves on a paper towel-lined plate and sprinkle with salt. Set aside until ready to use.
  • Now it’s time to build these bad boys. To assemble each quesadilla: Spread a quarter of the mashed butternut squash onto one half of the tortilla and sprinkle with 1 ounce goat cheese. Crumble 5 fried sage leaves over the goat cheese and top with 1/3 cup grated Fontina. Fold the empty tortilla half over the toppings to close.
