CREAMY CHICKEN, GREEN CHILE & ZITI CASSEROLE
Serve up something unexpected with our Creamy Chicken, Green Chile & Ziti Casserole. This hearty ziti casserole has just the right amount of heat.

Steps:
- Cook pasta as directed on package, omitting salt. Meanwhile, mix soup, sour cream, green chiles and cumin in large bowl until blended.
- Drain pasta. Add to soup mixture along with the chicken; mix well. Spoon half the pasta mixture into 13x9-inch baking dish sprayed with cooking spray; top with half the cheese slices. Repeat layers.
- Cover with plastic wrap, then foil. Freeze up to 1 month.
- When Ready to Serve
- Heat oven to 350ºF. Remove plastic wrap from casserole; re-cover with foil. Bake (frozen) casserole 1 hour or until heated through, uncovering after 45 min. Top with cilantro before serving.

- Bring a large pot of salted water to a boil. Drop in pasta and cook for 8 to 10 minutes or until al dente. Drain.
- Meanwhile, put olive oil and minced garlic in large skillet. Cut chicken into small pieces and brown in skillet. Add tomatoes and rosemary and stir together. Parboil broccoli (by partially cooking it in boiling water, just to soften) and add it to the chicken mixture. Pour cream over all, stir together and bring to a simmer. Add chicken mixture to cooked pasta and toss to coat. Top with cheese and serve.

Steps:
- Spray a large nonstick skillet with Pam; heat.
- Add the chicken and cook, turning as needed, until lightly browned, 5-6 minutes.
- Transfer to a plate.
- Preheat the oven to 375.
- Spray the same skillet with more Pam.
- Add the onion and garlic; cook, stirring as needed, until softened, about 5 minutes.
- Add the tomatoes, Italian seasoning and pepper; bring to a boil.
- Reduce the heat and simmer, uncovered, stirring as needed, until the mixture is thickened slightly, 8-10 minutes.
- Meanwhile, cook the ziti according to package directions.
- Drain and mix with the ricotta cheese.
- Pour half of the tomato mixture into a 13x9" baking pan, layer with the ziti mixture, the chicken and the remaining tomato mixture.
- Sprinkle with the cheeses.
- Bake until hot and bubbling and the cheese is melted, 15-20 minutes.

KELLY'S ASIAN CHICKEN
From my new "Garlic Lovers' Greatest Hits--20 Years of Prize-winning Recipes from the Gilroy Garlic Festival" book. According to the book, this chicken dish was unanimously selected as the First Place Winner in the first Great Garlic Recipe Contest and Cook-off. DH and I made this for dinner a few nights ago and thought it was really good. However, we would have liked more sauce. We are not sure if it reduced too quickly and we need to be more careful for next time or if we should double the sauce recipe. We used chicken breasts instead of a frying chicken and served over Udon noodles. I should mention that I always use reduced sodium soy sauce (I prefer San-J Tamari).

Steps:
- Heat oil in large, heavy skillet and brown chicken well on all sides, adding garlic and peppers toward the end.
- Add remaining ingredients and cook over medium-high heat until chicken is done and sauce has been reduced somewhat. This will not take long, less than 10 minutes.
- If you are cooking both white and dark meat, remove white meat first, so it does not dry out.
- Watch very carefully so the sauce does not burn or boil away. There should be a quantity of sauce left to serve with the chicken, and the chicken should appear slightly glazed.
- Serve with Chinese noodles, pasta, or rice.
CHICKEN KELLY
Steps:
- Cut chicken into 1-inch cubes, put in plastic bag. Add eggs and marinate in fridge for 4 hours.
- Mix together bread crumbs, parsley, and garlic powder. Add chicken to mixture & shake well so all is covered. Saute chicken till brown.
- Layer in dish the chicken, mushrooms and cheese. Repeat layers. Pour chicken broth over mixture.
- Bake covered 40 minutes at 350°F. Uncover, sprinkle last layer of cheese, return to oven, uncovered until cheese is melted.

- Add the diced chicken into a skillet and cook over medium-heat until done. Set aside. While the chicken is cooking, prepare your sauce; add the tomato sauce, dried oregano, dried basil, garlic powder, dried thyme, dried rosemary, onion powder, salt and pepper in a medium-sized pot. Cover and simmer over medium-heat for 20 minutes. Preheat oven to 350 degrees.
- In the pot you cooked the pasta in, combine the pasta, tomato sauce and chicken; mix thoroughly. Pour the mixture into a 9x13 baking dish, add the shredded cheese on top. Bake for 10 minutes or until the cheese has melted.

ASIAN STYLE CHICKEN, BROCCOLI AND ZITI
If you like the "normal" chic, broc, ziti recipe but would like a tasty variation, this recipe will work nicely for you. Also great to make ahead the 3 main ingredients (cook the ziti, steam the broccoli and cook the chicken) and then combine and heat when ready to serve. The marinating takes the longest to do but once that's done, this dish comes together quickly.

Steps:
- Marinate bite sized pieces of chicken for an hour or more (the longer the better) in marinade of olive oil, Tamari(Soy Sauce), crushed garlic cloves & crushed black pepper, to taste.
- Cook Ziti as per package directions.
- Steam broccoli.
- When you're ready to begin, put chicken and marinade in a large pan (I use my wok).
- Add the stick of butter or margarine and cook until chicken is done.
- Add steamed broccoli, cooked ziti and 1 cup Romano or Parmesan.
- Heat through & serve.

- Boil pasta until cooked all the way through.
- Drain, and pour into a 13x9-inch baking dish.
