- Preheat oven to 375°F.
- Combine dry ingredients in a large bowl and mix well.
- Combine wet ingredients in a different bowl and beat well together.
- Add beaten wet ingredients to dry ingredients; stir until moistened.
- Fill baking cups 2/3 full and bake for 20-25 minute.

WHOLE WHEAT BANANA BREAD MINI MUFFINS
This is a variation on my mom's banana bread, only healthier! Her recipe called for shortening, white flour, 2 eggs, and a full cup of sugar. I wanted to lighten it up and make it a healthy snack for my 4 year old daughter so I just cut out all of the "bad" stuff and threw in some substitutes I had in my kitchen and let it go. I find that it works best in mini muffins. My daughter LOVES them.

- Preheat Oven to 350.
- Mix all but bananas together.
- Mash bananas with fork or potatoe masher.
- Add bananas to other mixture and mix until combined.
- Pour into mini muffin pan-about 48 muffins.
- Bake about 20 minutes or until toothpick comes out clean.

VEGAN OIL-FREE WHOLE WHEAT BANANA MUFFINS - AND TASTY!
This recipe makes wonderful, very healthy banana muffins or mini loaves, although they're more dense than yoru typical banana bread if baked into mini loaves.They're especially tasty with walnuts and chocolate chips. Another recipe from my crazy experiments in the kitchen!

- In one bowl, sift together the dry ingredients. In another bowl, mix the wet ingredients together.The walnuts and chocolate chips are optional but recommended.
- Pour the wet mixture into the dry mixture and mix until just combined. Pour batter into 3 well-greased mini loaves or a muffin pan, and bake at 350F for 25-30 minutes. Let sit for a couple of minutes before transferring to a cooling rack.

Steps:
- Preheat oven to 350°F (180°C).
- In a large bowl, mash the bananas into a fine paste using a fork.
- Add the eggs and whisk together until well incorporated.
- Add in the Greek yogurt, honey, and vanilla extract, then mix.
- Pour the flour over the wet mixture then sprinkle in the baking soda.
- Using a spatula, fold the wet and dry ingredients together until the dry bits of the flour have disappeared.
- Using a medium ice cream scoop, portion the batter evenly into a greased muffin tin.
- Top the muffins with your choice of toppings.
- Bake for 20 minutes, until the muffins have risen and set.
- Unmold from the tray and serve.

WHOLE WHEAT BANANA MUFFINS (HEALTHY!)
These muffins are a healthy option because of the wheat flour and flax seed. The sugar could probably be reduced further, if desired, but I haven't tried to do that yet. If you don't want to use the wheat flour, just use 1 1/2 cups all-purpose flour. I add some quick oats to the topping, for presentation. Also good in a mini-muffin pan!

- Preheat oven to 375 degrees. Grease muffin pan or use muffin papers.
- Mix up the flours, flax, baking soda, baking powder, salt and cinnamon in a large bowl.
- In a smaller bowl, mash bananas. Add sugar, egg and melted butter to bananas.
- Add banana mixture to flour mixture and stir.
- Divide mixture evenly into muffin cups, filling each about 3/4 full.
- Prepare streusel topping. Sprinkle onto tops of muffins and lightly press struesel into batter (so it will stay in place as muffin rises).
- Bake at 375 degrees for about 20 minutes. They should pass the toothpick (or knife) test.

WHOLE WHEAT HONEY BANANA MUFFINS
These muffins are delicious and have a great texture, and they are 100% healthy! No refined flour or sweeteners. We have a big family, so this recipe makes a lot of muffins, but it is easily halved for a smaller group. To make the muffins lower in fat, replace half of the oil with unsweetened applesauce. I also use "white whole-wheat" flour, which is softer than that made with red wheat (but has the exact same nutritional value).

- Beat oil and honey together; add eggs and beat well.

I actually abandoned my "family" banana bread in favor of this one... It's more a like a cake than a bread. I have increased the bananas from the original recipe, and I prefer to omit the nuts. I like mine warm with butter on top. Yummy!

Steps:
- Melt butter.
- Put the butter, sugar, bananas and eggs in a blender. Blend until nice and smooth.
- Now transfer to a mixing bowl.
- In a separate bowl, stir together flours, salt, and baking soda.
- Add dry ingredients to banana mixture alternately with hot water.
- Stir in chopped nuts.
- Cut a piece of waxed or parchment paper the size of the bottom of your loaf pan.
- (This helps the loaf come out in one piece while still warm).
- Put the paper in the loaf pan and spray the pan well with non-stick spray.
- Scoop the batter into the pan.
- Bake in a preheated 325 degree F oven for one hour and 10 minutes.
- Test with a cake tester to make to make sure it's done.
- Sometimes it takes a little bit longer.
- If the top gets too brown, cover it with a piece of aluminum foil so it doesn't get too much darker.

- Preheat the oven to 350°F.
- Spray your mini muffin pans with non stick spray.
- Beat the butter and sugar together.
- Add the egg and mix well.
- Then add the oat bran and mix well.
- In a separate container combine the mashed banana with the 2 tablespoons water.
- Mix the dry ingredients together.
- Add the banana mix to the butter alternatively with the mixed dry ingredients. Mix well.
- Add the vanilla and the pecans.
- Bake for about 15 minutes or until the muffins start to brown.
