STUFFED POBLANO PEPPERS
These Stuffed Poblano Peppers are the perfect way to mix things up for Taco Tuesday! Not to mention they're low carb and take under 30 minutes to make.

Steps:
- Move oven rack to 6 inches below the broiler. Preheat broiler on high.
- Cut poblanos in half and toss with oil. Place poblanos cut side down on a 9-inch round cake pan. Set the timer to 4 minutes. You want to cook these until the outsides are charred and blistered.
- Meanwhile in a 10-inch saute pan on high heat, cook ground beef until it is almost cooked through. Add 1.5 tablespoons taco seasoning. Cook until the beef is cooked through. Mix in chopped cilantro and set aside.
- Remove poblanos from the oven. Fill each poblano half with ground beef. Top with cheese. Return the poblanos to the oven and broil for 2-3 minutes until the cheese has melted and is bubbly. Garnish with additional cilantro if desired and serve.

- In a large skillet, start browning the sausage and ground beef. When done, drain excess grease.
- Add in the worcestershire sauce, cream cheese and 1/2 of the cheddar cheese. Mix until the cheeses are melted.
- Stuff the peppers with the meat mixture and top with remaining cheddar cheese.
- Spray the basket of the air fryer and cook at 350°F for 15 minutes.
- To cook in the oven first microwave the peppers for a few minutes or blanch them to pre cook them. Then prepare the stuffed peppers as above and tbake in a 350°F oven for 30 minutes or until peppers are soft and tender.

- Position a rack on the top of the oven and preheat to broil.
- Combine the vinegar, sugar, 1 teaspoon salt and 1/3 cup warm water in a mason jar. Cover and shake to combine until the sugar and salt dissolve. Add the onions and radishes and set aside.
- Drizzle the oil over the peppers, season with 1 teaspoon salt and arrange on a baking sheet cut-side up. Broil on the upper rack of the oven until blistered and softened, 4 to 6 minutes.
- Mix together the pork, garlic, paprika, chili powder, cumin and 2 teaspoons salt in a large bowl. Transfer to a large skillet over medium-high heat and cook, breaking up the pork into small pieces with a wooden spoon, until browned and cooked through, 5 to 6 minutes. Remove from the heat, drain the excess fat and set aside to cool.
- Stir half of the cheese into the pork. Distribute the mixture evenly in the cavities of the peppers. Top with remaining cheese and broil until melted and bubbly, 2 to 3 minutes.
- Top with the pickled onions and radishes. Garnish with cilantro and enjoy!

- Pierce the sausages a few times all over using a sharp knife (this is optional, but will help release more fat). Arrange the sausages in a single layer in an air fryer basket.
- Set the air fryer to 180C and cook for 10-15 mins, turning every 5 mins, until the sausages are cooked through. If you have a meat thermometer, check they have reached 75C in the middle. Serve as a side for breakfast or in buns.
