1 1/4 cups chocolate wafers (about 20 to 22 wafers), crushed
1/4 cup (1/2 stick) unsalted butter, melted
1 cup and 2 tablespoons granulated sugar, divided
1/4 cup hot, brewed coffee mixed with 1/4 cup very hot water
1/4 teaspoon salt
14 ounces Godiva 72% dark chocolate bars, divided
16 ounces cream cheese, softened
4 large eggs, room temperature
2 teaspoons vanilla extract
Whipped cream, optional
Fresh raspberries
1 1/4 cups heavy whipping cream
1 tablespoon granulated sugar
2 1/2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 325 degrees Fahrenheit.
  • In a springform pie pan, combine cookie crumbs, melted butter, and 2 tablespoons of granulated sugar. Firmly press the crust mixture onto the bottom of the pan. Chill in the fridge.
  • Stir together salt and hot coffee mixture. Set aside.
  • Chop half of the dark chocolate bars into small chunks. Set aside the rest.
  • Place the chocolate chunks into a large, microwave-safe bowl. Microwave at 50 to 60% power for 1 minute and stir. Heat in 30-second increments and stir until chocolate is smooth and melted. Cool for 5 minutes.
  • Meanwhile, beat softened cream cheese at low speed until smooth and lump-free, about 4 minutes. Gradually add the remaining 1 cup of sugar and beat for 2 minutes or until well-combined.
  • Beat in the eggs, 1 by 1, blending well after every addition. Gradually beat in the coffee mixture and vanilla extract. Pour the cooled melted chocolate and mix until combined.
  • Pour batter into the prepared pie crust. Bake for 55 to 65 minutes, or until the cheesecake is puffed in the edges, but still slightly jiggly in the middle.
  • Let the cheesecake cool on a wire rack completely. Cover the pan with foil and refrigerate for at least 6 hours.
  • Spread optional whipped cream on top and grate the remaining dark chocolate. Or, instead of chocolate, top with fresh raspberries. Slice with a serrated knife and enjoy!

I recently went on a Carnival Cruise where I ate the most delicious low carb cheesecake! Upon returning home I was on the hunt to find the supplier or a recipe that would do it justice. I don't recall where I stumbled upon this one, but it is by far the best low carb cheesecake I have EVER had. Creamy, moist, yummy crust- not rubbery, no weird aftertaste- none of that. The only difficult part is getting the nut crust fine enough, but even without a crust it's great. Many steps to this, but so worth it!

1 cup whole almond
2 tablespoons melted butter
2 tablespoons Splenda granular
1 1/2 lbs cream cheese, at room temperature
4 eggs, preferably room temperature
1 1/2 teaspoons vanilla
1 1/2 teaspoons lemon juice
1 1/3 cups Splenda granular
1/4 cup sour cream

Steps:

  • Crust Preparation.
  • Pulse almonds in food processor until the largest pieces are as big as lentils or split peas. You can use a blender as well.
  • Add the butter and the sweetener. Blend until it's mixed evenly and push evenly into bottom of springform pan.
  • Bake for 8 to 10 minutes, until fragrant and beginning to brown. Remove from oven and raise oven heat to 400°F.
  • Filling Preparation.
  • Put cream cheese in mixing bowl, and beat until fluffy. Add other ingredients, scraping the bowl and beaters each time (this is very important), fully incorporating each ingredient. When all ingredients are combined, scrape one more time, beat one more minute, and pour mixture into springform pan over crust.
  • Put the cheesecake on a sheet pan in case of drippage. After putting the cheesecake in the oven at 400 F, turn the oven down to 350°F Bake for 60 to 90 minutes, checking often after an hour. When the cake is firm to touch but slightly soft in the center, or the center reaches 155 F, remove from oven.
  • Chill completely. To speed this up I put the cheesecake in the freezer for about 1/2 hr and then check it to make sure it's not completely frozen. I leave it in there until it's cold, but not frozen solid. Then transfer to refrigerator. Keep refrigerated otherwise it will go bad quickly on the countertop because there is no sugar to act as a preservative.
  • You can make a strawberry sauce from sugar free jam. I just take a couple of spoonfuls and stir in a small bowl until smooth, add a tiny bit of water and pour on top of cheesecake.

I've tried a lot of different cheesecake recipes over the years of low carbing, but this is by far the best I've come up with. hard to eat just one piece!

2 lbs cream cheese (not light, it has more carbs!)
1 cup Splenda granular (or use the equivalent sweetening power of your favourite sugar substitute...liquid splenda lowers th)
4 eggs
1 egg yolk
1 tablespoon lemon juice
2/3 cup regular sour cream
1 teaspoon vanilla

Steps:

  • Preheat oven to 300 degrees.
  • Cream softened cream cheese with splenda until very smooth.
  • Blend in sour cream, vanilla, and lemon juice.
  • Add eggs one at a time and beat until smooth but don't overbeat.
  • Pour mixture into an 8 or 9 inch springform pan and wrap bottom and sides of pan with tin foil to form a watertight barrier.
  • Set pan in larger pan (I use a big roaster) and add water to about half way up the springform.
  • Place into oven and cook 1 hour. Reduce heat to 200 and cook another hour.
  • Cool slowly at either room temp or it is actually best to turn off the oven and leave the cheesecake in it overnight to cool. (Cheesecakes most often crack due to overbeating and cooling too rapidly).
  • Place in fridge for several hours before serving.
  • Top with your favourite fresh fruit if desired and whipped cream.

1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/4 cup cocoa
3 (8 ounce) packages cream cheese, softened
1 cup sugar
4 eggs
1 cup sour cream
2 cups chocolate chips
1/2 cup butter or 1/2 cup margarine
1 cup heavy cream, whipped
1 -2 cup raspberries, fresh or frozen
semisweet chocolate, shaved

Steps:

  • Crust: Melt butter in saucepan.
  • Stir in crumbs, sugar and cocoa.
  • Mix well.
  • Press into bottom and 3/4 way up sides of ungreased 10 inch springform pan.
  • Do not bake.
  • Filling: Beat cream cheese and sugar until blended.
  • Add eggs, 1 at a time, beating after each addition.
  • Mix in sour cream.
  • Combine chocolate chips and butter in saucepan over low heat until melted.
  • Stir often.
  • Add chocolate to cheese mixture.
  • Pour into prepared pan.
  • Bake in 325 degree oven for about 90 minutes until center is firm.
  • Cool at room temperature, then chill.
  • Top with whipped cream, raspberries and shaved chocolate.

2 teaspoons vanilla extract
1 cup heavy cream

Steps:

  • Make the chocolate crust:.
  • Preheat oven to 325°F.
  • Tightly wrap bottom of 9-inch springform pan with heavy-duty aluminum foil.

  • Refrigerate crust while preparing filling.

  • Pour boiling water into roasting pan so that the water comes halfway up the side of the springform pan.
  • Bake for 60 to 70 minutes or until center is firm.
  • Leave cheesecake in the oven and turn off the oven.
  • Prop oven door open and allow cheesecake to cool in the oven for 1 hour.
  • Remove cheesecake from roasting pan.
  • Cool cheesecake in the pan on wire rack.
  • When cheesecake is cooled, cover pan with aluminum foil and refrigerate at least 6 hours or overnight.
  • Make the whipped cream topping:.
  • Loosen edge of cheesecake with a knife. Remove side of springform pan.
  • Beat cream, sugar and vanilla in mixing bowl until stiff peaks form, using electric mixer at medium speed.
  • Reserve 1 cup whipped cream for garnish.
  • Spread remaining cream over top of cheesecake.
  • Sprinkle with grated chocolate.
  • Fill a pastry bag fitted with a large closed star tip (such as Ateco #5) with reserved whipped cream.
  • Pipe a border of rosettes around edge of cheesecake.
  • Decorate with chocolate coffee beans.
  • Cut cheesecake into wedges.
