1 cup unsalted, creamy natural cashew butter
1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, whisked together, set for 15 minutes)
¼ cup + 2 tablespoons coconut sugar
¾ teaspoon baking soda
½ teaspoon pure vanilla extract (optional)
¼ teaspoon salt (optional)

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
  • In a medium bowl, add all ingredients. Using a rubber spatula, stir and fold until thoroughly mixed.
  • Using a small or medium cookie scoop, scoop and drop cookie dough balls onto the prepared baking sheet, spaced evenly apart. Using a fork, press down on cookies to flatten. Repeat in the opposite direction, creating crisscross marks. Cookies will spread a bit.
  • Bake for 10-14 minutes. Mine took 12 minutes. Transfer cookie sheet to cooling rack, and allow to cool for 20-30 minutes-do not remove from sheet for at least 20 minutes, as cookies are very soft and fragile. Then, if desired, transfer cookies directly onto the cooling rack to cool completely. After cooling, cookies will be firm, but still fragile and melt-in-your-mouth. Handle with care. Enjoy! 2 cups cashew flour / ( about 240 g) (You can use 1/2 almond flour and 1/2 cashew flour if desired.)
1/2 cup Allulose (91g) (* more to taste. (yes, taste it before making the dough balls).)
1.5 tsp baking powder
1 tsp salt
2 eggs
1/2 cup butter (113.5g) (melted and cooled)
1 tsp vanilla extract
1/2 tsp xanthan gum (*optional- but highly recommended.)
1 egg (for egg wash - optional for browning)
24 cashews (whole or 12 halved - optional topping. See post for additional topping and spice ideas.)

Steps:

  • Preheat the oven to 350F and line a cookie sheet with parchment paper
  • Combine all the dry ingredients. Combine all wet ingredients in a separate bowl. And then combine them to make the dough.
  • Refrigerate the dough, covered for 30 minutes or so.
  • Add the wet ingredients to the dry ingredients to make a dough and roll into 24 evenly sized balls, about 2 tbsp each. I used a cookie scoop.

Steps:

  • In a large bowl, mix all ingredients. Roll level tablespoons into balls. Place on an ungreased baking sheet; flatten with a fork., Bake at 350° for 18 minutes. Remove to a wire rack to cool.

1/2 cup butter, softened
1 cup packed brown sugar
1 large egg, room temperature
1/2 teaspoon vanilla extract
2 cups all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup sour cream
1-3/4 cups chopped cashews
FROSTING:
1/2 cup butter, cubed
3 tablespoons half-and-half cream
1/4 teaspoons vanilla extract
2 cups confectioners' sugar
Cashew halves

Steps:

  • Preheat oven to 375°. In a bowl, cream together butter and brown sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. Combine dry ingredients; add alternately with sour cream to creamed mixture. Stir in chopped cashews. Drop by tablespoonfuls onto greased baking sheets. Bake until lightly browned, 8-10 minutes. Cool on a wire rack. For frosting, lightly brown butter in a small saucepan. Remove from the heat and cool slightly. Add cream and vanilla. Beat in confectioners' sugar until smooth and thick. Frost cookies; top each with a cashew half.
