Moroccan-Spiced Seared Scallops with Green Grape and Lemon Relish image

A blend of six spices you probably have in your pantry and a preserved-lemon shortcut make this impressive, exotic dish feasible for a weeknight meal.

1 medium lemon
Kosher salt
1-1/2 cups seedless green grapes, quartered lengthwise and at room temperature
1/4 cup extra-virgin olive oil
2 scallions, thinly sliced
2 Tbs. chopped fresh cilantro
2 Tbs. chopped fresh mint
1 tsp. ground cumin
1 tsp. sweet Hungarian paprika
1 tsp. ground turmeric
1/4 tsp. ground cinnamon
1/4 tsp. ground ginger
1-1/2 lb. large all-natural "dry" sea scallops, side muscles removed
Freshly ground black pepper

Steps:

  • Using a vegetable peeler, remove the zest from the lemon in strips (yellow part only). Reserve the lemon. In a small saucepan, combine the lemon zest with 1/2 cup water and 1 tsp. salt. Bring to a simmer over medium-low heat and cook until the liquid reduces to about 1 Tbs., about 10 minutes. Drain, rinse, drain again, and pat dry. Finely mince the lemon zest and combine it with the grapes, 2 Tbs. of the olive oil, scallions, cilantro, and mint in a medium bowl.
  • In a small bowl, combine the cumin, paprika, turmeric, cinnamon, and ginger.
  • Pat the scallops dry. Season them liberally with salt and pepper and coat them with the spice mixture.
  • Heat 1 Tbs. of the olive oil in a 12-inch nonstick skillet over medium-high heat until shimmering. Add half of the scallops and cook, turning once, until seared on the outside but still translucent in the center, 1 to 2 minutes per side. Transfer to a warm plate. Repeat with the remaining 1 Tbs. oil and scallops.
  • Divide the scallops among 4 plates and serve with the relish. Cut the reserved lemon into quarters and squeeze over the scallops and relish. Serve immediately.

6 tablespoons extra virgin olive oil
1 whole sea bass, about 3 pounds, cleaned
3 cloves garlic
1/3 cup packed cilantro leaves, plus 10 sprigs cilantro
1/3 cup packed mint leaves, plus 10 sprigs mint
1 teaspoon sweet Spanish paprika
Juice of 1 lemon
Salt and freshly ground black pepper to taste

Steps:

  • Use 1/2 tablespoon oil to grease a baking pan large enough to hold fish. Rub 1/2 tablespoon oil over outside of fish. Preheat oven to 450 degrees.
  • Finely mince garlic by hand or by dropping it through feed tube of running food processor. Do same with the packed cilantro and mint leaves. Transfer garlic and herbs to a small bowl, and stir in paprika, lemon juice and 2 tablespoons oil. Season with salt and pepper.
  • Use a sharp knife to cut 3 or 4 slashes about 1/2 inch deep in each side of fish. Spoon a scant teaspoon of herb mixture into each slash. Place fish in baking pan, and stuff cavity with half the cilantro and mint sprigs.
  • Put remaining herb mixture and remaining oil in small saucepan.
  • Roast fish about 20 minutes, until flesh in the slashes looks opaque. Remove from oven, and let rest 5 minutes. Gently heat herb mixture until warm.
  • Transfer fish to a serving platter, remove herbs from cavity and garnish platter with remaining cilantro and mint sprigs. Serve fish, filleting it as you go and spooning herb mixture over each portion.

2 1/2 cups (or more) vegetable broth
1 cup red lentils,* rinsed
1/4 cup chopped fresh cilantro plus additional for sprinkling
1 1/2 pounds sea scallops, patted dry

Steps:

  • Mix first 3 ingredients in small bowl. Heat 1 tablespoon oil in heavy medium saucepan over medium-high heat. Add onion and sauté until translucent, about 4 minutes. Add 2 teaspoons spice mixture and sauté 30 seconds. Stir in 21/2 cups vegetable broth and lentils. Bring to boil; reduce heat to medium and simmer until lentils are tender, adding more broth by tablespoonfuls if dry and stirring occasionally, about 10 minutes. Stir in 1/4 cup cilantro; season to taste with salt and pepper.
  • Meanwhile, heat 1 tablespoon oil in heavy large skillet over high heat. Sprinkle scallops with salt, pepper, and remaining spice mixture; add to skillet and cook until browned on both sides and just opaque in centers, about 2 minutes per side. Top lentil mixture with scallops and sprinkle with additional cilantro.
  • Also known as masoor dal; sold at some supermarkets and at natural foods stores and Indian markets. If unavailable, use green lentils and increase cooking time to about 30 minutes.

12 sea scallops (about 1 lb.)
1/4 cup olive oil
1/4 cup shallot, minced
2 tablespoons fresh ginger, minced
12 ounces grape tomatoes or 12 ounces cherry tomatoes, halved
2 tablespoons red wine vinegar
1 tablespoon honey
1 lemon, juice of
2 tablespoons fresh parsley, chopped

Steps:

  • Coat grill with nonstick spray; preheat to medium-high.
  • Whisk yogurt, sugar, spices, lemon juice, salt, and pepper together. Add scallops and toss to coat; marinate 15 minutes.
  • Heat oil in a small skillet over medium heat. Add shallots and fresh ginger, and saute for 3 minutes (do not brown).
  • Pulse tomatoes, vinegar, honey, and lemon zest in a food processor; with machine running, drizzle in warm shallot mixture. Transfer to a bowl and stir in parsley
  • and salt to taste; let stand at room temperature until ready to serve. Remove scallops from yogurt mixture (discard remaining marinade).
  • Grill scallops on one side until seared, 2 to 3 minutes. Turn scallops over and grill 3 to 5 minutes, or until cooked through. To serve, spoon vinaigrette onto plates, then top with scallops.

1 lb sea scallops
2 tablespoons butter or 2 tablespoons margarine
3 garlic cloves, minced
2 tablespoons dry white wine
1 tablespoon fresh parsley, finely chopped
1/8 teaspoon salt
1/2 teaspoon coarsley ground pepper
1/2 cup flour

Steps:

  • Rinse scallops and pat dry with a paper towel.
  • Combine flour, salt, pepper and parsley.
  • Heat a 12-inch skillet over medium high heat.
  • Add 2 tbsp of butter or margarine and the garlic; cook and stir until butter is melted.
  • Dredge scallops in flour mixture, add to skillet and cook, stirring frequently for 2-3 minutes or until scallops turn opaque.
  • Remove scallops and add wine to skillet and stir for l minute.
  • Drizzle wine mixture over scallops and serve.

1 1/2 cups water
1/2 cup golden raisin
1 piece cinnamon stick (3 inches)
1/2 teaspoon sea salt
1/8 teaspoon cayenne pepper or 1/8 teaspoon crushed red pepper flakes
1 cup israeli couscous
2 medium tomatoes or 2 medium green tomatoes, chopped
2 tablespoons chopped of fresh mint
1 teaspoon finely shredded lemon peel
1 1/2 lbs small sea scallops
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon sea salt
1/8 teaspoon cayenne pepper or 1/8 teaspoon red crushed red pepper flakes
1 tablespoon extra virgin olive oil
mango chutney (optional)

Steps:

  • In a medium saucepan bring water, raisins, stick cinnamon, 1/2 teaspoon salt, and 1/8 teaspoon cayenne pepper to boiling; stir in couscous & reduce heat.
  • Cover; simmer for 10 to 12 minutes or until liquid is absorbed and couscous is tender; discard stick cinnamon.
  • Stir in tomatoes, mint, and lemon peel.
  • Meanwhile, in a medium bowl toss together scallops, cumin, coriander, 1/4 teaspoon salt, and 1/8 teaspoon cayenne pepper.
  • In a heavy large skillet (cast iron works well) cook scallops, half at a time, in hot oil for 5 to 6 minutes or until browned and opaque, turning once.
  • To serve, spoon couscous mixture onto a platter; top with scallops.
  • Serve with chutney, if desired.

1/4 cup plain yogurt (Greek yogurt, if you can find it)
2 teaspoons sugar
1/2 teaspoon curry powder
1/8 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon paprika
1/8 teaspoon cayenne pepper
1/2 lemon, juice of
salt, to taste
fresh ground pepper, to taste
12 sea scallops (approx. 1 lb, the large ones)
1/4 cup olive oil
1/4 cup shallot, minced
2 tablespoons fresh gingerroot, minced
12 ounces grape tomatoes, halved (may use cherry tomatoes)
2 tablespoons red wine vinegar
1 tablespoon honey
1 lemon, zest of, minced
2 tablespoons chopped fresh parsley

Steps:

  • Coat grill with nonstick spray and preheat to medium-high (I'm guessing about 350ºF on a Foreman grill).
  • In a large mixing bowl, whisk together the first ten ingredients (from yogurt to fresh ground pepper). Add scallops and toss to coat. Set aside to marinate for 15 minutes.
  • In a small skillet, heat olive oil over medium heat. Add shallots and fresh ginger. Saute for about 3 minutes, taking care not to brown it.
  • In a food processor, pulse the tomatoes, vinegar, honey and lemon zest. While processor is running, drizzle in the warm shallot-ginger mixture. Once blended, transfer this to a mixing bowl and stir in parsley. Season with salt to taste. Set aside (at room temperature) until serving time.
  • Remove scallops from marinade and discard remaining marinade. Place scallops on grill and sear for 2-3 minutes, then turn them over and grill for 3-5 minutes more (until cooked through. don't overcook or you will have little rubber scallops).
  • Spoon approximately half a cup of vinaigrette onto each serving plate, and top with three scallops per plate.
