LOW CARB CAJUN ANDOUILLE CHEESE DIP

Steps:
- Add the chopped Andouille sausage to a large skillet and place over a medium heat. Cook them for a few minutes, stirring regularly.
- Drain off the excess grease, then add the red pepper, garlic, and Cajun seasoning. Continue cooking for another 5 minutes.
- Then add the heavy cream, cream cheese, and shredded cheese and stir well. Once everything has melted, season with salt and pepper, and transfer the Andouille cheese dip to a serving bowl.
- Garnish it with sliced jalapeños, and provide celery sticks and cucumber sticks for dipping.

KETO CAJUN JAMBALAYA
This Keto Cajun Jambalaya includes a combination of Andouille sausage, chicken, shrimp and vegetables in a flavorful, creamy Cajun flavored sauce. Serve this dish over cauliflower rice for a low carb, gluten free dinner!

Steps:
- Add the olive oil to a large skillet over medium-high heat.
- Place the shrimp in the skillet and season with 1 teaspoon of the Cajun seasoning.
- Cook the shrimp until opaque, about 3-4 minutes, then remove to a plate.
- Add the chicken, sausage, and 1 teaspoon of the Cajun seasoning to the same skillet.
- Cook until the chicken is no longer pink in the center, about 5-7 minutes, and remove to the plate with the shrimp.
- Lower the heat to medium and add a drizzle of oil, if needed.
- Add the garlic and cook until fragrant, about 30 seconds.
- Stir in the peppers, onions, and the last teaspoon of Cajun seasoning.
- Cook until the peppers and onions are soft, about 5-7 minutes.
- Mix in cream and cook until thickened, about 1-2 minutes.
- Stir back in the shrimp, chicken, and sausage and cook until heated through, about 1-2 minutes.
- Serve with cauliflower rice.

This makes a lot, but it's so good, and a little different from most cheese dips. If you can't find crawfish tails, sub with lump crabmeat drained and rinsed and drained. Sure to be a hit at your next get together with family and friends

Steps:
- In medium pot over medium high heat, saute garlic and white parts of scallions in butter until slightly tender.
- Mix in crawfish or crab and cook for about 5 minutes on low.
- Pour mixture in bowl and set aside.
- Add cheese and tomatoes to empty pot and cook over medium low heat until melted and combined.
- Stir in reserved scallion mixture.
- Heat on low until well blned and very warm.
- Season with salt and pepper to taste.
- Garnish with sliced green scallion tops.
