1 onion, sliced
1/2 cup chili sauce
2 tablespoons brown sugar
1 clove garlic
12 -24 ounces beer

Steps:

  • Preheat oven to 350.
  • Place meat in a 9x13 inch pan or roasting pan.
  • Cover with onion slices.
  • In a bowl, combine the chili sauce, brown sugar, garlic, and beer.
  • Pour over the meat.
  • Bake for 3½-4 hours.
  • Add barbecue sauce to any leftover meat, sliced, and serve on crusty rolls!

Slow-cooked in the oven, this mouthwatering venison roast with carrots, onion, potatoes is topped with homemade flavorful gravy. The whole family will love it!

4 pounds venison shoulder (or butt roast)
1/8 teaspoon kosher salt
1/8 teaspoon cracked black pepper
5-6 large carrots
1 medium yellow onion
4 garlic cloves
1/4 cup olive oil
1/3 + 1 1/2 cups quality beef stock
1 Tablespoon onion soup mix
1 fresh rosemary sprig
2 Tablespoons fresh parsley (chopped)
6 medium potatoes (peeled or unpeeled)
2 Tablespoons unsalted butter
3 Tablespoons flour
2 Cups Roast drippings and broth

Steps:

  • Generously season both sides of your thawed roast with kosher salt and cracked black pepper. Set it aside and turn on your oven to 250˚ F.
  • Peel and chop the carrots, slice the onion and peel the garlic cloves. In a large stockpot on the stove using medium-high heat, pour in 1/4 cup olive oil. When the oil is hot, lay down your onion rings and garlic cloves. Cook for 2 minutes on each side or until the onions are translucent and crispy brown edges are formed. Remove the onions and garlic and set aside in a large bowl.
  • Using the same method, sear your carrots for about two minutes per side. When the carrots start to show browning on both sides, pull them out and add them to your bowl of onions and garlic.
  • Make sure you still have some oil at the bottom of the pan before laying down one side of the seasoned meat into the pan. Place the roast in the stockpot to brown for one minute on each side before removing it to rest one more time.
  • Working quickly, whisk 1/3 cup of beef stock into the browned bits at the bottom of the stockpot and keep whisking until they are part of the stock. Turn off your heat.
  • Layer the bottom of the stockpot with the onions, carrots and garlic and top with the browned roast. Split the rosemary sprig in two and lay it on top of the meat followed by one tablespoon of onion soup mix per pound of meat. Also add the fresh chopped parsley and 1 ½ cups of quality beef stock.
  • Cover the pot and bake for 3 hours at 250˚ F.
  • At three hours, slide the pot out and carefully add the potatoes around the edge of the meat and on top of the carrots, onions and stock. Move the rosemary from the top of the meat and poke it down into the juices. Slide the covered pot back into the oven and bake for an additional 3 hours at 250˚ F.
  • When the six hours has ended, carefully remove the stockpot from the oven, take out the roast, and place it on a platter. Cover it with foil so it stays warm. Remove all of the vegetables and place them in a bowl and cover with foil. Strain the remaining stock using a fine mesh strainer or a gravy separator and pour it into a liquid measuring cup and set it aside.
  • To make gravy, add the butter to the same pot and allow it to melt. Whisk in the flour and form a paste. Allow it to cook for 1 minute and then whisk in your reserved stock and drippings. Whisk just until it is thickened and turn off the heat.
  • Shred the meat and serve with carrots, potatoes and gravy.

1 large cooking onion, cut in large chunks
2 stalks celery, chopped in 3 inch lengths

1/4 cup soy sauce
1 teaspoon Worcestershire sauce
1 tablespoon HP steak sauce or 1 tablespoon A.1. Original Sauce
1 garlic clove (crushed or minced)
2 bay leaves

2 bouillon cubes
1/2 teaspoon oregano
1 pinch thyme (optional)
water, to cover
flour, and
milk, for gravy

Steps:

  • Rub garlic on roast.
  • Put roast in a small roasting pan with some onion under roast and some around it.
  • Surround with carrots and celery.
  • Fill pan with water just so the top of the roast is exposed.
  • Add soya sauce, steak sauce, Worcestershire, bouillon and all spices pouring over roast and in water cover and bake in oven on 300 degrees for 4 hours.
  • It should cut with a fork when done.
  • Serve roast, with veggies in a bowl and mashed potatoes.
  • Make gravy with the stock by putting the roasting pan on the burner on high, mix 1/2 cup milk and 3 TBSP flour well and gradually whisk into broth to make a gravy stirring constantly.
  • Add more if needed to thicken.

  • 1. Cut 10 deep slits in roast; place a garlic clove in each slit. Combine the rosemary, 1 teaspoon onion powder, garlic powder and thyme; rub over entire roast. Cover; refrigerate for 2 hours. • Add 1/2 in. of water to a roasting pan. Place the roast, carrots and onions in pan. Cover and bake at 325° for 2-1/2 to 3 hours or meat is tender. Remove meat and vegetables to a serving platter; keep warm. • Strain drippings into a measuring cup. In a large saucepan, combine 3 cups drippings, bouillon, browning sauce and remaining onion powder. Combine cornstarch and cold water until smooth; stir into drippings. 2 cups mushrooms, sliced

2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
2 sprigs fresh thyme

Steps:

  • Coat a large skillet with nonstick spray and bring to high heat. Season roast with 1/4 teaspoon each salt and pepper. Cook and rotate until all sides are browned, about 5 minutes. Place in a slow cooker. Add all remaining ingredients except cornstarch, including 3/4 teaspoon each salt and pepper. Gently stir. Cook on high for 3 to 4 hours or on low for 7 to 8 hours, until roast is cooked through. Turn off slow cooker. In a small bowl, dissolve cornstarch in 2 tablespoons cold water. 3 slices Bacon (Cut into 3 pieces.)
3 lb Elk Roast (Venison, moose, and beef work well too.)
Salt + Pepper (To taste, and use Kosher salt.)
1 Onion (Chopped.)
3 cloves Garlic (Chopped.)
1 cup Mushrooms (Sliced.)
1/2 cup Beef Broth
1/2 cup Red Wine
1 tsp Thyme
2 Bay Leaves
2 tsp Rosemary
1 tbls Corn Starch

Steps:

  • If you have time, drain the elk roast in a colander set in a bowl overnight to try to get some of the blood out.
  • Turn on the instant pot so it gets hot enough to cook the bacon and brown the meat.
  • Par-cook the bacon slices in the bottom of the pot. What you're looking for is there to be enough grease left over to brown the meat and cook the vegetables. This step probably takes about 5-8 minutes.
  • Shake some salt and pepper all over the elk roast - feel free to use a generous amount; if the elk roast is thick enough, a thick crust of salt and pepper will make it wonderful! Kosher salt, not table salt.
  • When the bacon is done, remove it and set aside. Add the elk roast to the instant pot to sear and brown on all sides in the bacon grease - about 5 minutes per side. You may have to do this in batches if you're doing multiple roasts (like with smaller venison roasts).
  • If you haven't already, use this time to chop your onions, chop your garlic, and slice your mushrooms.
  • Once the elk roast is browned, remove it and set aside. Add the onions, garlic, and mushrooms to the pot and saute until translucent and cooked. (In a pinch, I'll use dried mushroom powder from the mushrooms I foraged for over the summer and dehydrated at home.)
  • Add the elk roast back to the pot, top with bacon, and add the remaining ingredients (but not the corn starch).
  • Cook the elk roast in the instant pot for 1-2 hours. Release the pressure, and then check the cut of the elk roast and decide if you want to cook it a bit more.
  • Once the elk roast is done, remove the roast to a cutting board, turn up the heat on the instant pot (no lid needed) to start boiling the liquid. Take 3 tablespoons of the juice and add it to a small bowl. Stir the 1 tablespoon of corn starch into the juice until well mixed. Pour the corn starch mix into the elk roast juice, and stir to incorporate. Let this mixture boil until thick - this usually takes the time it takes to cut up the elk roast.
  • Slice the elk roast and serve the gravy on the side as an option to pour on top. The gravy is so good, it could be it's own side.

1 and 1/2 tsp. salt, divided
1 Tbsp. high heat tolerant cooking fat (duck fat, avocado oil, clarified butter/ghee)
1 and 1/2 cups venison stock or beef stock*
2 Tbsp. tomato paste
1 Tbsp. balsamic vinegar
1 and 1/2 tsp. Worchestershire sauce
1 tsp. dried thyme
1 tsp. dried parsley
1 tsp. pepper
5 garlic cloves, minced
1 large, yellow onion, cut into large pieces
1 lb. baby yellow potatoes
4-5 carrots, peeled and cut into 2-inch pieces
2 Tbsp. tapioca starch, arrowroot powder or cornstarch

Steps:

  • Remove your roast from the packaging and dry thoroughly with a paper towel to remove any liquid or old blood. Then, sprinkle 1/2 teaspoon of the salt all over the meat.
  • Heat the oil/fat in a large skillet over medium-medium high heat and sear the roast on all sides until brown. If you go to flip the meat and it's sticking to the pan, it's not ready to be flipped. When a sear forms, it will release from the skillet.
  • Once seared all over, remove the roast from the skillet and place it in the bottom of a slow cooker.
  • Pour in the stock or add frozen stock to the bottom of the slow cooker. Then, add the tomato paste, balsamic vinegar, Worchestershire sauce, thyme, parsley, pepper, half of the garlic and 1/2 teaspoon of the salt. Rub that all over the meat the best you can.
  • Then, add the onions, carrots and potatoes on top. Sprinkle on the remaining salt and garlic.
  • When you're ready to serve, remove the meat and shred it on a board. Toss the veggies in the juice and move them to a platter to add with the pulled venison roast. You can halve the potatoes if you like.
  • If you want gravy, mix the cornstarch (or tapioca or arrowroot powder) with a bit of the strained pot drippings to make a slurry. Then, add the rest of the drippings and the slurry to a small saucepan and reduce over medium-low heat for 10 minutes.
  • Serve & ENJOY!

  • Three days before making the sauerbraten, bring the vinegar, red wine, juniper, cloves, bay leaves, salt, pepper, onion, and two cups of water to a boil in a pot.
