Making your own dumplings may sound scary, but these are really quite easy and are done in 30 minutes.

- In a large bowl, mix together ricotta, cheese, egg yolk, lemon zest, and 1/2 teaspoon salt until combined. Sift 1/2 cup flour over mixture and use a rubber spatula to gently fold together. Turn mixture out onto a lightly floured work surface and sift remaining flour over top. With fingertips, gently incorporate flour into dough and lightly knead just until dough comes together (do not overwork dough).
- Set a large pot of salted water to boil. Divide dough into 4 equal pieces. Roll each piece into a log about 3/4 inch thick and 20 inches long. With a knife or dough scraper, cut each log into 1/2-inch pieces.
- Drop pieces into boiling water. Cook until they plump up and float to surface, 2 minutes. Drain dumplings and shake off excess water.
- In a large skillet, melt 2 tablespoons butter over medium. When it sizzles, add dumplings and cook, undisturbed, until golden on one side, 6 minutes. Add 1 tablespoon butter to skillet and toss to coat. Transfer to a serving bowl and top with cheese. Serve warm.

SPINACH AND RICOTTA DUMPLINGS

- Bring a large, wide pot of salted water to a simmer. Put the spinach in a large bowl and separate it with your hands. Add the ricotta, 3/4 cup parmesan, the flour, eggs, 3/4 teaspoon salt, 1/4 teaspoon pepper and the nutmeg. Mix with a fork to form a slightly sticky dough.
- Spread some flour on a plate. Scoop out heaping tablespoonfuls of the spinach-ricotta mixture and roll into about 24 loose balls using floured hands. Gently roll the balls in the flour.
- Bring the marinara sauce to a simmer in a large skillet over medium heat. Whisk in the butter.
- Meanwhile, gently lower the dumplings into the simmering water and cook until they rise to the surface and are firm, about 5 minutes. Remove the dumplings with a slotted spoon, letting the water drain off, and add to the sauce. Gently toss to coat, then transfer to plates and sprinkle with the remaining 1/4 cup parmesan. Serve with bread.

- Combine water and citric acid in a small bowl; mix until dissolved.
- Pour milk into a large pot set over medium heat. Heat milk, stirring occasionally, until it registers 185 degrees F (85 degrees C) on an instant-read thermometer. Do not boil and stir often to prevent scorching. Stir in citric acid. Keep stirring until curds form.
- Scoop curds into a sieve lined with several layers of cheesecloth using a slotted spoon. Fold the edges of the cheesecloth over the curds and let drain over a bowl at room temperature, 20 to 30 minutes.
- Remove the cheese from the cheesecloth and cream and salt. Stir well to combine. Serve right away as-is or use in your favorite recipe.

SPINACH DUMPLINGS
These spinach dumplings stuffed with ricotta cheese are the perfect meatless comfort food. You can boil or steam them for an absolutely delicious dish!

- In a medium saucepan, combine the frozen spinach and 2 tablespoons of water. Cover and cook over low heat, stirring occasionally, until the spinach is completely thawed, about 15 minutes.
- Drain the spinach in a strainer and allow to cool.
- Place the spinach on a clean dish towel or cloth napkin, then grab the corners to form a pouch. Twist to squeeze out as much liquid as possible, then set aside.
- Beat the eggs in a large bowl.
- Add the bread crumbs, Italian seasoning, ricotta, Parmesan, scallions, parsley, basil, garlic, nutmeg, and black pepper. Mix well. Add the spinach and mix again until the spinach is well-incorporated.
- Cover and refrigerate for 24 hours.
- Line two baking sheets with parchment paper. Lightly dust with flour.
- Take a generous teaspoonful of the chilled dough, roll it into a ball, then place on the prepared baking sheet. Repeat with remaining dough, making sure the dumplings don't touch.
- Make a dent in the middle of each dumpling with the end of a wooden spoon or your thumb.
- Select a saucepan that will fit a bamboo steamer. Fill it half-full with water and bring to a boil.
- Place the dumplings in a steamer basket, making sure they don't touch.
- Place the basket on top of the saucepan and steam over high heat for 10 minutes.
- Transfer the dumplings to a covered dish to stay warm while you steam the remaining dumplings.

LEMON CHICKEN SOUP WITH SPINACH RICOTTA DUMPLINGS
This is a great way to use leftover rotisserie chicken or turkey, or just even use up a couple of those chicken breasts in your freezer. Fresh lemon, dill, spinach and creamy ricotta dumplings make this a light but hearty soup. My favorite ways to serve this recipe are with a fresh tomato panini, basil and gruyere, or a portabello burger with fresh garden toppings. Something light for a healthy dinner.

- Dumplings -- I make them ahead, because the soup cooks pretty quick. Also, once you make them, put them in the freezer for 20-30 minutes so they firm up. This just makes them easier to cook in the broth.
- In a small bowl, mix up the ricotta, spinach, parmesan, egg, flour, salt and pepper. Dust your hands with flour and roll the ricotta mix into dumplings. I make them about 1/2 the size of a golf ball or small walnut sized. Place on a baking sheet lined with parchment paper and put in the freezer. Just about 20-30 minutes as you start the soup. This will help the dumplings to firm up and steam well in the soup.
- Egg Mixture -- In a small sauce pan, bring 1 cup of the broth to a simmer on medium heat. In a small bowl or measuring cup, mix the lemon juice, flour and eggs and mix well. Once the broth warms up, slowly drizzle 1/2 of the broth, a little at a time into the egg mixture. This will temper the eggs, which means the eggs will warm up to the temperature of the broth and they won't scramble when added into the warm broth. Now, slowly add all the egg mixture back into the rest of the broth in the pot. Then cook the egg and broth mixture on medium heat until slightly thickened. Don't let it boil. Once it thickens, just turn off the heat, this will be added later.
- Soup Base -- In a large soup pot, add the olive oil and bring to medium-medium high heat. Add in the onion, garlic, celery mushrooms and pinch of salt, and saute for 3-4 minutes until tender. Add the broth and bring to a light boil boil for about 5 minutes.
- Dumplings -- Now, depending on the size of your pot you may be able to cook the dumplings all at once, but I don't like to crowd them. I add in 1/2 the dumplings and a time, you don't want to over crowd them and cook 4-5 minutes until done. They will start to float. Remove to a bowl and add the remaining dumplings, cook another 4-5 minutes.
- Finish Soup -- Reduce the temperature of the soup to medium low, and then slowly add the egg mixture to the soup, along with the chicken, cooked orzo, dill and check for seasoning. Add in the dumplings and just heat and serve.
- Serve -- Garnish each bowl or soup with a lemon slice and fresh ground black pepper and ENJOY!

- Cook broccoli in large saucepan of boiling salted water until crisp-tender, about 4 minutes. Using slotted spoon, transfer broccoli to bowl of ice water and cool. Drain well. Return water in saucepan to boil. Add potato; cook until tender, about 15 minutes. Drain. Transfer broccoli to food processor and blend well. Add potato and process to puree. Add 1/2 cup broth and blend well. With machine running, gradually blend in extra-virgin olive oil. Season to taste with salt and pepper. DO AHAED: Broccoli sauce can be made 1 day ahead. Cover and refrigerate.
- Using electric mixer, beat ricotta in large bowl until smooth. Beat in mozzarella. Form mixture into 6 rectangular dumplings, each about 3 1/2 x 2 x 3/4 inches. Place on baking sheet; cover and refrigerate 4 hours.
- Pour enough olive oil into very large skillet to reach depth of 3/4 inch. Heat oil to 350°F. Whisk 1 1/2 cups water, yolk, and pinch of salt in large bowl; whisk in 3/4 cup flour. Set batter aside. Place remaining 1 cup flour in medium bowl. Coat each dumpling in flour, turning to coat. Dip into batter, then fry until very pale golden, about 3 minutes per side. Using slotted spoon, transfer to paper towels to drain.
- Bring broccoli sauce to simmer in medium saucepan, thinning with more vegetable broth if necessary.
- Spoon 1/3 cup sauce into center of each of 6 plates; spread with back of spoon into round. Top each with 1 dumpling.

- In a skillet, saute onion in butter till tender.
- Add spinach, cook and stir over medium heat until liquid has evaporated, about 5 minutes.
- Stir in ricotta; cook and stir for 3 minutes.
- Transfer to a large bowl.
- Add 3/4 cup of flour, Parmesan cheese and garlic salt.
- Cool for 5 minutes.
- Stir in eggs; mix well.
- Place remaining flour in a bowl.
- Drop batter by tabelspoonfuls into flour; roll gently to coat and shape each into an oval.
- In a large saucepan; bring water and bouillion to a boil-reduce heat.
- Add a third of the dumplings at a time, simmer, uncovered for 8-10 minutes or until a toothpick inserted into a dumpling comes out clean.
- Remove from the liquid with a slotted spoon; keep warm.
- Drizzle with butter and sprinkle with Parmesan cheese.
RICOTTA CHEESE DUMPLINGS
Cheese dumplings can be served with your favorite pasta sauce, or just tossed in brown butter. My favorite is warmed in browned butter with 4-5 sprigs fresh thyme.

- 1. Add all ingredients to a food processor and blend until very smooth. You should have a stiff, sticky batter. Refrigerate for one hour.
- 2. Bring a large pot of salted water to a boil. Have a large bowl of cold water nearby, and a skimmer or wire strainer to remove the cooked dumplings.
- 3. Using a small spoon, scoop out a rounded teaspoon of the batter. Use a second spoon to scrap it off into the boiling water. Do batches of 8-10 dumplings. When the water comes back to a boil, and the dumplings float, cook them for 3 minutes.
- 4. Remove to the dumplings to the bowl of cold water. Carefully drain and reserve until ready to serve. Reheat in the sauce of your choice, and serve topped with Parmesan cheese.
GOAT CHEESE DUMPLINGS
Steps:
- Put the goat cheese, ricotta, egg yolks, Activa, salt, and cayenne in a blender and puree until smooth. Pour the mixture into a squeeze bottle.
- Spray the inside of a magnetic sphere mold or spherical ice cube tray with nonstick cooking spray and wipe it with a dry paper towel. The fine film remaining will ease the unmolding process. Close the sphere mold and fill each cavity, squeezing the cheese mixture through the top opening. Fill all the spheres and tap the mold on the counter to force out any air bubbles. If necessary, top off the mold with any remaining goat cheese. Alternatively, you could substitute small chocolate molds for the spheres. Loosely cover the top of the sphere mold with plastic wrap and refrigerate for eighteen hours.
- Remove the mold from the refrigerator and carefully remove the top section. The spheres will have set and there will be a small extension on each sphere from the fill hole. Use a paring knife to cut this cheese extension off of each sphere. Gently remove each sphere from the mold and place in a shallow container.
- To serve, gently warm the spheres in simmering water to heat through. When hot, remove them from the water and place them in a serving dish with the desired sauce and glaze.
