Categories     Dessert

Time 55m

Number Of Ingredients 13

1 cup old-fashioned rolled oats
3/4 cup white whole wheat flour
1/3 cup light brown sugar
1/4 teaspoon ground ginger
1/4 teaspoon kosher salt
6 tablespoons unsalted butter (melted (or substitute melted coconut oil to make vegan/dairy free))
2 cups small-diced strawberries (about 10 ounces, divided)
1 teaspoon cornstarch
1 tablespoon freshly squeezed lemon juice (from about 1/2 small lemon)
1 tablespoon granulated sugar (divided)
1/2 cup powdered sugar (sifted)
1/2 teaspoon pure vanilla extract
1 tablespoon milk (any kind you like)

Steps:

  • Place a rack in the center of your oven and preheat to 375 degrees F. Line an 8x8-inch baking pan with parchment paper so that the paper overhangs two sides like handles.
  • In a medium bowl, combine the oats, flour, brown sugar, ginger, and salt. Pour in the melted butter and stir until it forms clumps and the dry ingredients are evenly moistened. Set aside 1/2 cup of the crumble mixture, then press the rest into an even layer in the bottom of the prepared pan.
  • Scatter half of the strawberries over the crust. Sprinkle the cornstarch evenly over the top, then sprinkle on the lemon juice and 1/2 tablespoon of the granulated sugar. Scatter on the remaining berries, then the remaining 1/2 tablespoon sugar. Sprinkle the reserved crumbs evenly over the top. You will have some fruit showing through.
  • Bake the bars for 35 to 40 minutes, until the fruit is bubbly and the crumb topping smells toasty and looks golden. Place the pan on a wire rack to cool completely (you can speed this process along in the refrigerator).
  • While the bars cool, prepare the glaze: In a medium bowl, briskly whisk together the powdered sugar, vanilla, and milk until smooth. Feel free to add more milk if a thinner consistency is desired. Using the parchment-paper handles, lift the bars from the pan. Drizzle with glaze, slice, and serve.

STRAWBERRY OATMEAL BREAKFAST BARS

Strawberry Oatmeal Breakfast Bars image

I'm always on the lookout for easy and delicious things to make for breakfast that are on the one hand, relatively healthy and good for you, while on the other hand, not too good for you. I think these really do fit the bill. These are normally made with strawberry preserves, but here we're using fresh strawberries for a little lighter and lower-sugar approach. For best results, refrigerate before serving.

Time 2h

Yield 8

Number Of Ingredients 11

1 pound fresh strawberries
½ lemon, juiced
2 tablespoons white sugar
2 teaspoons cornstarch
1 ½ cups old-fashioned rolled oats
½ cup all-purpose flour
½ cup whole wheat flour
½ cup packed light brown sugar
½ teaspoon kosher salt
¼ teaspoon ground ginger
8 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x12-inch baking dish.
  • Remove the green tops from strawberries using the tip of small, sharp knife or strawberry huller. Place the berries cut-side down on a work surface and cut in half. Slice each half lengthwise 3 to 5 times before turning and cutting across in a nice, uniform dice.
  • Combine diced strawberries, lemon juice, sugar, and cornstarch in a mixing bowl and stir until thoroughly combined and the cornstarch disappears. Set aside until needed.
  • Combine oats, all-purpose flour, whole wheat flour, brown sugar, salt, and ginger in a mixing bowl. Pour in melted butter and stir thoroughly until dry ingredients are evenly coated.
  • Transfer 60% of the oatmeal mixture into the prepared baking dish and spread out into an even layer. Press the mixture down with the back of a spoon or spatula to compress slightly.
  • Place strawberries over the top using a slotted spoon. Do not press down. Reserve any accumulated juices in the bowl. Top with remaining oatmeal mixture and press down lightly with the back of a spoon or spatula. Drizzle reserved juices on top.
  • Bake in the preheated oven until the top is golden brown, about 45 minutes. Press the top down with a spatula to compress slightly. Let cool completely, about 1 hour. Cut into bars and serve.

Time 45m

Yield 8-10 serving(s)

Number Of Ingredients 7

1 cup flour
1 cup rolled oats
1/2 cup butter, softened
1/3 cup light brown sugar, firmly packed
1/4 teaspoon baking powder
1/8 teaspoon salt
3/4 cup strawberry jam

Steps:

  • Preheat oven to 375°F.
  • In a large bowl, mix everything together but the jam.
  • Measure out 2 cups of this mixture. Leave the rest in the bowl and set aside.
  • Take the 2 cups of the mixture and press it into the bottom of an 8 inches square pan, coated with cooking spray. Using a large spoon, distribute jam on top of the mixture in the pan. Spread it evenly all over. (I used the squeeze-bottle spread for this and it made this part of the process a lot quicker).
  • Take the remaining mixture and spread it over the jam. Press down lightly.
  • Bake 25 minutes.
  • Remove the pan from the oven and allow to cool for at least 15 minutes before cutting into bars.

  • To melt the coconut oil, heat it in the microwave for 30 seconds then set it aside until ready to add. In a small bowl whisk together the Greek yogurt (or vegan yogurt) and egg. Then add the coconut sugar, vanilla, cinnamon, ginger, baking soda, baking powder and salt. Whisk until smooth and there are no chunks of baking powder or soda. Add the oat flour, gluten free flour mix and coconut oil and mix until a dough forms. Let set for about 5-10 minutes.
  • On a lightly floured surface or in between two pieces of wax paper, roll out the dough to 1/4 inch thick or 10 x 12 square. Using a knife or pastry scraper slice the dough into 8 equal squares. Remove the extra edges to save for 1-2 more bars.
  • Spread an even layer of jam in the center of each square filling it lengthwise down the center. Leave a 1-inch border on either side so it does not squish out the sides. Carefully using your hands or a pastry scraper lift one of the sides over, then the next overlapping the edges and over the filling. Flip each pastry onto the baking sheet so that the seam side is down. Push and close any openings with hands to seal before baking. Repeat with any extra dough from the edges until the majority of the dough is used.
