I whipped this sugar-free snack up last night because I wanted something that resembled a fruit crisp, but without the calories, of course. I find I am not impressed with baked foods containing granulated splenda, but I do enjoy items I buy at the store containing splenda, such as sugar-free maple syrup, chocolate syrup, hot cocoa, etc. So I came up with this which is very easy and yummy and versatile! (play around with different fruits, different cereals, added ingredients...) Also, amazing topped with Free Cool Whip. And just to let you know, all of these ingredients can be adjusted, in amounts, to your own personal liking. Let me know how you like it! ^_^

1 large golden delicious apple (peeled, cored, and sliced into thin, smaller pieces)
2 -3 strawberries (cubed, or any way you like)
1/2 cup Special K cereal
1/2 cup sugar-free maple syrup
1 teaspoon cinnamon

Steps:

  • Place the apple & strawberry pieces in a microwave safe dish (I used a 16 oz. Ramekin).
  • Pour syrup on top & drizzle and lightly mix the fruit up with the syrup, to make sure most of the fruit is glazed.
  • Add cinnamon by sprinkling on top, or mixing in, whichever you like.
  • Put in the microwave on high for approximately 5 minutes (or until the apples are tender).
  • When fruit is cooked to your desire, take the dish out of the microwave and add as much special K as you like, stirring and mashing it up with the fruit.
  • Top with Cool Whip Free, if you so desire, and enjoy your quick & yummy snack! :).

1/2 cup watermelon, diced
1/2 cup honeydew melon, diced (approx 20 pieces per cup)
1/2 cup cantaloupe, diced
1/2 cup pineapple, fresh, diced
1/2 cup strawberry, fresh, halves
1/2 cup raspberries, fresh

Steps:

  • Clean fruits in your normal fashion. eg - wash , dry, peel, destem etc.
  • Dice fruits and place diced pieces into a large mixing bowl.
  • Stir to combine the pieces.
  • Dish into individual serving bowls.
  • Eat as a stand alone snack or with your favorite low fat yogurt or topped with low fat whipped cream. Also great on a bed of lettuce with a scoop or two or cottage cheese!

TROPICAL "FRUIT BOWL" SHAKE

I didn't really think this combination would work, but I wanted to use up some excess fruits and surprise! They went together quite well. You'll want a straw for this one.

1/3 cup orange juice (add as desired)

Steps:

  • Blend all in a food processor, adding more o.j. if you like, till smooth. This would also be great with some "superfood" (i.e. flaxseeds or ground nuts) sprinkled on top.
  • Enjoy!

1/2 cup apple juice
1/4-1/2 teaspoon cinnamon (I use 1/2 tsp)
1/4 teaspoon nutmeg (this is my addition)
1 tablespoon grated lemon peel

Steps:

  • In an 3 quart microwave safe baking dish, arrange the apples into two rows.
  • Pour apple juice over apples.
  • Sprinkle with spices and lemon peel.
  • Cover and microwave on HIGH for 7 minutes or until apples are tender - turning midway through.

AMARANTH BREAKFAST FRUIT BOWL - ELIMINATION DIET



Amaranth Breakfast Fruit Bowl - Elimination Diet image

Cooked amaranth, berries, maple syrup, cinnamon and a splash of rice milk so much better than oatmeal!! This has become a staple for me on this Elimination Diet. I cook up a big batch of amaranth. Then, throughout the week I can put this together in under 5 minutes. Great for a quick breakfast or yummy filing desert. I love the "pop" of the amaranth! I use the 3 berry frozen mix from Costco. Frozen fruit is a must for me as I am doing this diet in the middle of winter. Use whatever non-dairy, non-soy milk you choose. I like rice milk. Adjust the toppings to your liking. Time to cook does NOT include the cooking of the amaranth. AMARANTH: This grain cooks up soupy. Don't add salt to the amaranth while cooking.

1 cup amaranth
2 1/2 cups water
1/4 cup frozen berries, to taste
1 tablespoon maple syrup, grade B, to taste
2 tablespoons rice milk, to taste
1/4 teaspoon cinnamon, to taste

Steps:

  • To cook amaranth:.
  • Place amaranth and water in a 2 quart pot with a lid.
  • Bring to a boil then reduce heat to low and simmer for between 20 and 30 minutes or until liquid has been absorbed.
  • Put amaranth in storage container and refrigerate for up to a week.
  • To put together fruit bowl:.
  • Spoon desired amount of cooked amaranth into a bowl.
  • Add frozen berries.
  • Cover with plastic wrap and place in microwave on high for 2 1/2 minutes.
  • When heated, add maple syrup, cinnamon and chilled rice milk.
  • Stir and enjoy!
