DIVINELY CREAMY LOW-FAT FETTUCCINE ALFREDO

Divinely Creamy Low-Fat Fettuccine Alfredo image

One of my favorite things to eat is fettuccine alfredo, but I don't always like all the fat associated with this dish. I found this recipe and it is really very good. Be sure to use imported Italian Parmigiano-Reggiano, which has an intense, buttery flavor that makes all the difference. If you are following Weight Watchers, this recipe has 6 points per 1 cup serving.

Categories     Healthy

Time 25m

Yield 4 serving(s)

Number Of Ingredients 7

8 ounces fettuccine
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
3/4 cup 1% low-fat milk
1/2 cup freshly grated parmigiano-reggiano cheese
1 tablespoon fresh lemon juice (fresh makes all the difference too)
1/4 teaspoon nutmeg

Steps:

  • Cook the fettuccine according to package directions, omitting salt if desired.
  • Drain, reserving 1/4 cup of the cooking water.
  • Place the pasta in a serving bowl and keep warm.
  • Meanwhile, melt the butter in a medium nonstick skillet.
  • Add the flour and cook, stirring constantly, until the mixture becomes straw-colored and fragrant, about 45 seconds, then remove from the heat and whisk in the milk.
  • Return the pan to the stove, raise the heat to medium-high, and continue cooking, whisking constantly, until slightly thickened, about 2 minutes.
  • Add the reserved cooking water, the cheese, the lemon juice and nutmeg; stir until just smooth.
  • Pour over the hot pasta, toss gently to coat, and serve at once.

FETTUCCINE ALFREDO

Fettuccine alfredo image

Hankering for a comforting bowl of pasta in creamy sauce? This sumptuous Italian dish is for you. It takes just 25 minutes so it's an easy midweek meal

Provided by Orlando Murrin

Categories     Dinner, Lunch, Main course, Supper

Time 25m

Number Of Ingredients 7

227g tub clotted cream
25g butter (about 2 tbsp)
1 tsp cornflour
100g parmesan, grated
freshly grated nutmeg
250g fresh fettuccine or tagliatelle
snipped chives or chopped parsley, to serve (optional)

Steps:

  • In a medium saucepan, stir the clotted cream, butter and cornflour over a low-ish heat and bring to a low simmer. Turn off the heat and keep warm.
  • Meanwhile, put the cheese and nutmeg in a small bowl and add a good grinding of black pepper, then stir everything together (don't add any salt at this stage).
  • Put the pasta in another pan with 2 tsp salt, pour over some boiling water and cook following pack instructions (usually 3-4 mins). When cooked, scoop some of the cooking water into a heatproof jug or mug and drain the pasta, but not too thoroughly.
  • Add the pasta to the pan with the clotted cream mixture, then sprinkle over the cheese and gently fold everything together over a low heat using a rubber spatula. When combined, splash in 3 tbsp of the cooking water. At first, the pasta will look wet and sloppy: keep stirring until the water is absorbed and the sauce is glossy. Check the seasoning before transferring to heated bowls. Sprinkle over some chives or parsley, then serve immediately.

DREAMY LOW-FAT FETTUCCINE ALFREDO

Dreamy Low-Fat Fettuccine Alfredo image

It's a shame that alfredo is, for most people an occasional indulgence. Now, with this recipe cutting gobs of fat and cheese, it makes a great candidate for weeknight cooking. You'll be surprised that the trick is using a butter and flour roux to provide the same mouth feel as thickened heavy cream. To help speed up this recipe, prepare the sauce while bringing the water to a boil.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 9

1 teaspoon unsalted butter
2 teaspoons all-purpose flour
3/4 cup whole milk
1/4 cup half-and-half
1 garlic clove, peeled and lightly crushed
1/2 teaspoon black pepper
1 pinch nutmeg
1 cup grated parmesan cheese
9 ounces fettuccine pasta, fresh is best

Steps:

  • Bring 4 quarts of water to a boil in a large pot over high heat. I sometimes use a ladle, fill each of four serving bowls with about 1/2 boiling water and set aside.
  • Meanwhile, in a large saucepan, heat the butter over medium heat until foaming. Whisk in the flour until mixture is smooth and golden, 1 to 2 minutes. Whisk in the milk, half-and-half, garlic, 1/2 tsp salt, pepper and nutmeg. Bring to a simmer.
  • Reduce heat to medium-low and simmer until sauce is slightly thickened, 1 to 2 minutes. Discard garlic, stir in Parmesan and remove from heat.
  • Stir pasta and remaining salt into the boiling water and cook, stirring constantly, until al dente, about 2 to 3 minutes.
  • Reserve 1 cup pasta cooking water, then drain pasta.
  • Return sauce to low heat, add 1/3 cup pasta water and the cooked pasta. Toss until evenly coated. Cook until sauce has thickened slightly, about 1 minute. Add more water as needed to thin sauce to desired consistency and adjust seasonings.
  • Working quickly, empty the water from the warmed bowls and fill with pasta. Serve immediately.

FETTUCCINE ALFREDO -LOW FAT AND HEALTHY!

Fettuccine Alfredo -Low Fat and Healthy! image

I got this recipe from a container of organic yogurt. It looked really good. I love alfredo sauce, but it's so high in calories and fat. This looks like a possible alternative. I haven't tried it - if you try it, please review it!

REDUCED FAT SHRIMP ALFREDO

Reduced Fat Shrimp Alfredo image

We love Alfredo Sauce and also have to watch the fat content. Smart Balance Margarine makes a spread with 67% vegetable oil that you can use in cooking and that's what I used.

Provided by carole in orlando

Categories     Cheese

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 9

2 tablespoons low-fat margarine (like Smart Balance for cooking)
2 tablespoons flour
1 1/4 cups carnation low-fat evaporated milk
salt
pepper
1 pinch nutmeg
20 -36 frozen pre-cooked shrimp, 5 per person
3/4-1 1/2 cup freshly grated parmesan cheese
1 lb fettuccine pasta

Steps:

  • Make a Bechamel Sauce by melting the margarine in a pan, adding the flour and making a smooth mixture.
  • Slowly add the milk and stir constantly with a whisk until well blended and of the thickness you desire.
  • Add as much Parmesan cheese as you like, we thought 3/4 Cup was enough and let it melt and blend with the Bechamel Sauce.
  • Defrost the shrimp in cold water, remove the tail if necessary, and add to the Alfredo Sauce until heated.
  • Do not over cook as the shrimp with toughen.
  • Cook the pasta as directed on the package, mix the pasta and Alfredo Sauce and serve with garlic bread and a tossed salad.
