Delicious, healthy and easy-to-make black bean dip.

¼ cup extra virgin olive oil
2 small yellow onions, chopped
4 cloves garlic, peeled and chopped into large chunks
2 jalapeño peppers, seeded and chopped*
2 (15.5 ounce) cans black beans, rinsed and drained
1½ teaspoons salt
½ teaspoon ground cumin
2 tablespoons fresh lime juice, from one lime, plus more if desired
3 tablespoons water
¼ cup fresh chopped cilantro, plus more for garnish (optional)

Steps:

  • Heat the olive oil over medium heat in a small saucepan. Add the onions, garlic and jalapeño peppers and cook, stirring occasionally, until very soft, about ten minutes. Do not brown.
  • Transfer the cooked onion mixture to a blender or food processor and add the black beans, salt, cumin, lime juice, water and cilantro. Blend until smooth (if you're using a blender, you may need to stop and stir a few times to help it out). If the dip is too thick, add more water or lime juice, little by little, to thin it out. Taste and adjust seasoning, then transfer to a serving bowl. Serve warm, cold or room temperature with tortilla chips.
  • *Most of the heat from the jalapeños is in the seeds and ribs, so leave those out. If you like a spicier dip, reserve the seeds and add them little by little when you're blending the dip.

1 tablespoon canola oil
1 small yellow onion, diced
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon chipotle chile powder
1/4 teaspoon cayenne pepper
One 4-ounce can diced green chiles
Two 15-ounce cans black beans, rinsed and drained
1 cup vegetable broth
2 tablespoons chopped fresh cilantro
1/4 cup Cotija cheese

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Add the garlic, cumin, salt, chile powder and cayenne and cook until fragrant, about 30 seconds. Add the chiles, beans and broth and bring to a simmer. Cook, stirring occasionally, until the beans have softened and the sauce has thickened, 5 to 7 minutes. Transfer to a serving bowl and sprinkle with cilantro leaves and Cotija.

  • Puree two 14-ounce cans black beans (drained and rinsed), 2 minced garlic cloves, 1/4 cup each olive oil and lemon juice, 1 tablespoon white wine vinegar, 1 teaspoon ground cumin and a pinch each of salt and pepper in a food processor until almost smooth. Let sit 15 minutes before serving.

3 green onions (chopped)
1/4 cup fresh cilantro

Steps:

  • Combine first six ingredients in food processor. Mix till well combined. While mixing add enough olive oil to reach desired consistency. Season with salt and pepper to taste.
  • Serve with chips, on pita bread, or on warm tortillas.

Consistently eaten by the batchful, this dip is meant to be shared. Super easy & very very tasty - the spiciness depends on how much spice you add. I like to serve this with white tortilla chips and strips of sweet bell peppers (the colors look nice together). This recipe is adapted slightly from Lean & Lovin' It! by Don Mauer.

1 teaspoon olive oil
1 green pepper, chopped
1 red onion, chopped
2 (15 ounce) cans black beans, drained & rinsed & 1/4 cup liquid reserved
1 1/2 teaspoons cumin
1/2 teaspoon salt
2 tablespoons cider vinegar
1/2 teaspoon chili powder (more or less as you like)

Steps:

  • Heat olive oil in large nonstick skillet over medium heat.
  • Add the green pepper & red onion.
  • Cook, stirring occasionally, until softened (about 5 minutes).
  • Add beans with reserved liquid to the skillet.
  • Simmer, covered, for about 10 minutes.
  • Place the mixture along with remaining ingredients in a food processor.
  • Pulse to combine, but do not puree. Leave it a little chunky for better scooping.

  • Place garlic, jalapeño, and cilantro in the bowl a food processor (or canister of a blender). Pulse until finely chopped, scraping down sides halfway through. Add black beans, cumin, garlic salt, chili powder, oregano, pepper, lime juice, vinegar, and 2 tablespoons water to food processor. Process until all ingredients are smooth, adding additional water one tablespoon at a time (if necessary) until preferred consistency is reached. Taste and adjust seasonings as desired.
  • Garnish with cilantro. You can also add a little cheese (cotija, cheddar, Monterey Jack, etc.) and a sprinkle of diced tomatoes for color. Serve as a dip with tortilla chips or raw vegetables.
