CREAMY CARAMELIZED ONION SOUP

I love caramelized onions. I love cream soups. Why not combine the two? As a side note, caramelizing the onions takes a while. You don't want to burn them, you want to caramelize them. Be patient! :]

2 medium white onions, chopped
6 tablespoons butter
1 tablespoon garlic, minced
1/4 cup flour
2 cups milk, warm
4 cups vegetable broth
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1 teaspoon salt
1 teaspoon pepper
1 large parsnip, chopped
4 ounces portabella mushrooms, chopped
3 red potatoes, chopped

Steps:

  • In a medium pot, melt the butter over medium heat. Add onion and garlic. Stir continuously until onions are caramelized (brown, but not burned), about 30 minutes or more.
  • Whisk in flour, cook for 2 minutes.
  • Add milk or half-and-half, whisk until smooth.
  • Add balsamic vinegar, Worcestershire sauce, salt, pepper, and broth. Let simmer for 20 minutes.
  • Add vegetables, mix thoroughly, and let simmer for 20 minutes, or until vegetables are tender.
  • Turn off heat and let it cool for a few minutes.
  • Puree soup in batches until at least half of the soup is blended. Mix thoroughly.
  • Cook over medium heat until hot.

If you have a cold this soup will help clear your nasal passages, although I'd omit the cheese in this case. Smoked turkey can be used in place of the chicken.

3 medium onions, thinly sliced (about 2 1/2 cups)
2 teaspoons cajun seasoning, to taste
2 tablespoons cooking oil
1 tablespoon brown sugar
1 tablespoon flour
4 cups vegetable broth or 4 cups chicken broth
1 1/2 cups cooked smoked chicken (can substitute BBQ-flavored tofu)
1/4 cup dry white wine
1/8 teaspoon black pepper
1/4 cup gruyere cheese or 1/4 cup blue cheese, crumbled
1 tablespoon fresh parsley, minced

Steps:

  • NOTE: Cajun seasoning is easy to prepare at home and there are several good recipes on this site. As a suggestion this is one I like: Recipe #34011 (omit the oil.).
  • In a medium stock pot cook the onions in hot oil until onions are tender and softened, about 20 minutes, stirring frequently.
  • Add the Cajun seasoning and sprinkle the brown sugar onto the onions. Cook for 1 to 2 minutes or until onions are golden.
  • Stir in the flour, cook for 1 minute more, breaking up any lumps.
  • Stir in the broth, chicken (or tofu), wine and black pepper. Cook and stir soup until heated through.
  • Taste and adjust seasoing if necessary. Top each serving with cheese and parsley.

2 yellow onions, diced
3 tablespoons butter
1 tablespoon olive oil
1 large pear
3 large yukon gold potatoes, diced
3 cups chicken broth
1/2 cup milk
2 ounces blue cheese (Stilton)
salt and pepper

Steps:

  • Melt butter and Olive oil in large pot.
  • Add diced onion and cook over medium heat until well browned and caramelized.
  • Core, peel and dice pear.
  • Add to onions, stirring until lightly browned.
  • Add potatoes and chicken broth.
  • Simmer, covered, until potatoes are tender.
  • Puree with an immersion blender. (or regular blender).
  • Add milk and 1 1/2 ounces of Stilton. Heat through.
  • Serve garnished with remaining Stilton crumbled on top.

This version of the French classic is just right for a light lunch. Cook the onions slowly over a medium heat, so that the natural sugars caramelize for that wonderful rich flavour. Dont be tempted to caramelize them to quickly though, as they will burn, leaving you with a bitter tasting soup.

50 g butter
6 large Spanish onions, thinly sliced
2 tablespoons caster sugar
4 garlic cloves, crushed
300 ml dry white wine
1 1/4 liters hot chicken stock
2 tablespoons Worcestershire sauce
2 tablespoons french brandy

Steps:

  • Melt the butter in a large pan and add the slice onions. Sprinkle in the sugar and cook over a medium heat for 10-12 minutes, stirring frequently until you get a lovely caramel brown tinge to your onions. Add the garlic and cook for a further 030 seconds.
  • Pour the wine into the pan and cook vigorously for 1-2 minutes. Stir in the stock and worchestershire sauce, bring to the boil, reduce the heat and simmer for 15-20 minutes until the onions are tender. Stir in the brandy,and divide between warmed serving bowls. Serve topped with thin slices of toasted french bread.

Classic onion soup gets even better with caramelized onions, silky cream and zesty croutons for the finishing touch. It's worth the time it takes to cook the onions for the wonderful depth of flavor.

2 tablespoons butter
4 onions, halved and thinly sliced
1/2 teaspoon dried thyme
salt and pepper
2 garlic cloves, minced
1/4 cup dry sherry or 1/4 cup red wine
4 cups reduced beef stock
1 cup water
1 cup 35% cream
thick slices baguette
1/4 cup crumbled canadian blue cheese, softened

Steps:

  • In pot, melt butter over medium heat; add onions, thyme and 1/4 teaspoons each salt and pepper and sauté for 2 minutes or until starting to soften. Reduce heat to medium-low, cover and cook, stirring often, for about 20 minutes or until onions are very soft. Uncover and cook, stirring often, for 15 to 20 minutes or until caramelized. Increase heat to medium-high; add garlic and sauté for 1 minute. Add sherry and bring to a boil, scraping up bits stuck to pot. Add beef stock and water and bring to a boil. Reduce heat and boil gently for about 10 minutes or until flavours are blended.
  • CROUTONS:.
  • Preheat broiler. On a baking sheet, lightly toast both sides of baguette slices. Spread one side with softened blue cheese.
  • To serve, stir cream into hot soup and season to taste with salt and pepper. Ladle soup into ovenproof soup bowls . Float one crouton in each bowl and broil for about 2 minutes, or until cheese is melted. Serve immediately.

  • Uncover once the onions are caramelized, then increase the heat to medium. Add the flour and stir the onions for 1 minute to coat them with flour.
  • Add the red wine, and stir, scraping (with a plastic scraper or wooden spoon) any excess onion from pan bottom and sides.

  • First, you’ll want to caramelize your onions. Melt butter in a sauté pan over medium-low heat.
