LOADED POTATO PANCAKES
Fried potato pancakes with a crispy fried outside and a cheesy potato filling. These loaded potato pancakes are a staple around here!

Steps:
- In a large bowl, combine all pancake ingredients and mix well.
- Place the remaining 1/2 cup flour in a small, flat dish.
- Using 1/4 cup of the potato mixture, form a patty and flatten slightly so it's about 1/2" thick. Place in flour to coat and flip to coat remaining side.
- Heat vegetable oil in a skillet over medium heat. There should be enough oil to coat the bottom of the pan.
- Place pancakes in heated pan without touching. Fry on each side for about 3-4 minutes or until golden brown.

LOADED MASHED POTATO CAKES
These Leftover Mashed Potato Cakes make an amazing side dish or light dinner or lunch! These are the perfect way to enjoy leftover potatoes and the flavor combinations are endless!

- Fry the bacon until crispy and drain on a paper towel until cool. Crumble into small bits. Place the bacon bits into a large bowl.
- Pour off all but 2 tbsp of bacon grease from the frying pan and cook the garlic, and white onion if using, over medium heat until translucent. (If using green onion, no need to precook).
- Add to the bacon bits along with remaining ingredients (except butter/margarine) and blend well with a spoon or your hands (it'll be sticky).
- Wash and dry your frying pan, then melt 1 tbsp of butter or margarine in it over medium heat.
- Scoop up about ¼ of a cup of the potato mixture and form it into a ball. Place it in the hot pan, flattening it out until it's about ½ - ¾″ thick.
- Fry for about 3 minutes on each side, until they are lightly golden brown.
- For best results, serve immediately, while hot and crispy.
- Top with green onions, sour cream or ketchup.

CLASSIC POTATO PANCAKES
This is the classic latke, made with little more than grated potatoes and onions, with egg and flour for binding.

- Preheat oven to 200°F. Place 2 nonstick baking sheets in oven.
- Using box grater or food processor fitted with grating disc, coarsely grate onion and place in colander set in sink. Coarsely grate potatoes, add to colander, and set aside to drain.
- In large mixing bowl, lightly beat eggs, then whisk in flour.
- Press potatoes and onion to extract as much liquid as possible, then add to egg/flour mixture. Season with salt and freshly ground black pepper. Using wooden spoon or hands, mix well, but do not overwork.
- In heavy-bottomed, 12-inch skillet over moderately high heat, heat 1 tablespoon oil and 1 tablespoon butter until hot but not smoking. Drop 4 scant 1/4-cup portions of potato mixture into pan and flatten with spatula to form four 3-inch pancakes.
- Fry until bottoms are golden-brown, 4 to 5 minutes, then turn over and fry until golden-brown and crisp, an additional 4 to 5 minutes. Transfer to paper towels to drain; season immediately with salt and pepper. Keep warm on baking sheets in oven while making remaining pancakes.
- Using paper towels, carefully wipe out pan. Add 1 tablespoon oil and 1 tablespoon butter and fry 4 more pancakes. Repeat with remaining batter, wiping out pan and adding 1 tablespoon oil and 1 tablespoon butter before each batch.
- Serve pancakes hot with applesauce and/or sour cream.

PERFECT POTATO PANCAKES
I like to serve these potato pancakes with barbecued sausage. They're also nice with baked ham and applesauce or with breakfast sausages. And, with these and other types of meals, they're a good alternative to french fries. My children are married, and I'm a widow. So I don't do as much cooking as I once did. Guests always ask for the recipe when I serve this dish, though. And when my son and his family visited me from Winnipeg not long ago, one of the first things he asked for were Perfect Potato Pancakes!

- To start, boil the potatoes on the stove in water for about 20 minutes until fork tender. Let cool. Chop green onions, set aside. Allow cream cheese to soften on the counter. Cut into chunks.Once potatoes have cooked, transfer them to a large mixing bowl. Using a fork, start mashing up the potatoes. Be careful not to create mashed potatoes, just mash enough to make it fluffy. Some potato chunks are fine!Add in the 1/4 of a cup of milk. Stir well.
- Prepare your fresh bread crumbs by placing a slice or two of white bread into a food chopper or blender. Pulse until crumbly.
- Add in the chopped green onions, bacon bits, parmesan cheese, cheddar cheese, cream cheese, fresh bread crumbs, salt, and pepper. In a small bowl, crack the large egg, and whisk just enough to break up the yolk. Add whisked egg yolk into the bowl of potatoes. Mix all ingredients. Do NOT over mix! It's okay to have some chunks of cream cheese.
- Preheat griddle to about 200 degrees. Or if you are using a skillet, turn the burner on low to medium heat. Add oil.On a separate plate, pour panko bread crumbs enough to cover the bottom of the plate. Form your potatoes into a ball, and roll in the panko bread crumbs.
