¼ cup milk
⅛ teaspoon salt

Steps:

  • Break the eggs into a microwave-proof mixing bowl. Add milk and salt; mix well.
  • Pop the bowl into the microwave and cook on high power for 30 seconds. Remove bowl, beat eggs very well, scraping down the sides of the bowl, and return to the microwave for another 30 seconds. Repeat this pattern, stirring every 30 seconds for up to 2 1/2 minutes. Stop when eggs have the consistency you desire.

Steps:

  • Spray a microwave-safe bowl with nonstick cooking spray. Mix eggs and milk in another small bowl until well incorporated. Pour into the prepared bowl.
  • Place in the microwave and cook for 45 seconds. Stir and continue cooking until eggs have set, 30 to 45 more seconds. Season with salt and pepper.

2 tablespoons butter or 2 tablespoons margarine
6 eggs
1/4 teaspoon salt
1 dash black pepper
1/4 cup milk
1 (3 ounce) package cream cheese, cut into small chunks
finely chopped green onions or scallion

Steps:

  • In a 1 1/2- 2 inches deep glass baking dish or casserole, melt the butter in the microwave (20 seconds, aprox.) Add the eggs, the salt and pepper and the milk. Whisk to blend well. Microwave for 1 1/2 minutes and lightly mix. Repeat once more.
  • Sprinkle the cheese evenly and cook until cheese is melted and eggs are set to your liking. Remove from microwave and lightly mix. Serve hot, garnished with the green onions.

  • Use a fork to beat together the eggs, milk and a pinch of salt in a microwave-safe jug. Cook in the microwave on High for 30 seconds, then beat again and return to the microwave for another 30 seconds.
  • Beat again, breaking up any lumps of egg. Microwave for another 15 seconds, then beat again; the eggs will be loose at this stage so serve them straightaway if this is how you like them. If you prefer your eggs a little firmer, microwave for a further 15 seconds, beat, then serve.

Microwave cooking times vary and mine actually needs 55 seconds at each step instead of the 45 seconds listed. Don't add extra salt until you've tasted it.

2 tablespoons milk
1/8 teaspoon cayenne pepper
1/4 teaspoon salt
1 scallion, thinly sliced (green onion)
2 tablespoons cheddar cheese, grated
1 cherry tomatoes, quartered (optional)

Steps:

  • In a large (10oz) microwave-safe custard cup or ramekin, combine eggs, milk, cayenne pepper, and salt. Stir in scallion.

I can only eat so much oatmeal and peanut butter toast without getting bored. I started making scrambled eggs in the microwave to break up the breakfast monotomy at work! I serve these alongside a piece of whole wheat toast and a glass of vegetable juice. In order to cut down on unhealthy cholesterol but keep the healthy protein, I use only one egg yolk; three works fine too (just increase the water [or milk] to 3 T). I'll sometimes make these at home when I need a quick breakfast.
