FRIED TOMATOES WITH GARLIC (BANADOORA MAQLIYA MA' THOOM)
A yummy-looking mezze dish, posted for World Tour 05. Do not try to cook more than two servings at a time or the tomatoes will end up overcooked. This type of tomato appetizer is great scooped up onto Arabic bread.

Steps:
- Thoroughly mix the garlic with the pepper, salt, and hot pepper; then stir in the parsley and set aside.
- Heat the oil in a frying pan over medium heat. Add the tomato slices and cook for about a minute on one side; then turn and sprinkle slices with the garlic, hot pepper, and parsley mixture. Continue to cook for another minute, shaking the pan occasionally; then turn the slices again and cook until they are done, but not mushy.
- Slide the tomato slices onto a plate, and serve immediately.

GREEN TOMATO PASTA SAUCE
Excellent tangy sauce and a great way to use up those fall green tomatoes. You can add cooked chicken into the sauce to make it heartier if you like.

Steps:
- Preheat oven to 300°F.
- Spray a large shallow baking dish with cooking oil. Lay the tomatoes in the dish and season with salt and pepper. Drizzle with the olive. Bake uncovered until tomatoes soften somewhat, about 25 minutes.
- In a mini food processor, chop the garlic and basil together. Sprinkle the garlic/basil on top of the tomatoes. Cover with foil and bake until soft and lightly carmelized, another 25 minutes. Remove from oven and place in a food processor or blender. Pulse a few times, but leave the sauce chunky. Put in sauce pan to reheat and add cooked chicken if desired.
- Serve over hot cooked pasta and top with freshly grated Parmesan.
SAUTEED BLACK OLIVES WITH TOMATOES
This is from Martha Stewart. I've used dried herds and it's still great. This is nice to serve over grilled chicken. I've also eat it alone. It would also be great on crusty bread and served cold on crackers.

- Rinse and drain olives; you can pit them or not, whichever you prefer. Combine tomatoes and salt in a medium bowl. Set aside.
- Heat olive oil in a medium skillet, add garlic, and cook over medium-low heat until just starting to brown, 2 to 5 minutes.
- Add olives and thyme. Cook over medium heat, stirring often, 3 to 4 minutes. Add tomatoes, cook over medium heat until juices thicken a bit and flavors are combined, 5 to 8 minutes. Season to taste with pepper. Serve this colorful antipasto with chunks of crusty bread. Just before serving, stir in the parsley.

EASY OLIVE AND MUSHROOM PASTA SAUTE
Olive-lovers this is one you should not pass up! This is easy and quick to make with so much flavor, and can be on the table in an hour or even less. If you are in a hurry, just cook for 25 minutes, or even simmer for a longer time, this is even better if made a day ahead to allow flavors to blend. Prep time includes boiling the pasta.

Steps:
- Heat oil in a Dutch oven over medium-high heat.
- Add in chopped onion, garlic, oregano and crushed red pepper flakes; saute for about 5-6 minutes.
- Add in tomatoes with juice and drained mushrooms along with black and green olives; simmer on low heat for about 25-30 minutes, or until mixture starts to thicken.
- Add in cooked pasta shells and 3/4 - 1 cup grated Parmesan cheese; toss to combine.
- Serve with more Parmesan cheese.

CHICKEN BREAST WITH TOMATO OLIVE SAUCE
I got a calendar for 2007 with a recipe and food picture on each month. This is the first one that caught my eye!

Steps:
- Mix basil, garlic powder, thyme and pepper and rub into both sides of chicken. Cover and let stand for 30 minutes.
- Melt 2 Tbs. butter and olive oil in a heavy skillet over high heat. Add chicken and saute until golden brown, about 5 minutes per side. Transfer to plate.
- Melt 3 Tbs. butter in heavy skillet over medium-high heat. Add onion and saute until softened.
- Add garlic and tomatoes and cook 2 minutes.
- Add olives and cook 5 minutes more, stirring frequently.
- Season with salt and pepper to taste and serve over chicken breasts.

ZUCCHINI, TOMATO & BLACK OLIVE GRATIN
This colourful "summer vegetable" gratin, by Todd Clarmo (a guest chef on my favourite Canadian talk show), can be served as a side dish or vegetarians will enjoy as an entree.

Steps:
- Saute onion in 2 oz of the oil over medium high heat for 5 minutes.
- Add garlic, thyme, chili flakes, salt& pepper and continue cooking until onions are until golden brown& semi soft (about 5 more mins).
- Remove from the heat, let cool& add olives.
- In a bowl, toss zucchini with basil& 2 oz of olive oil.
- Layer the onion/olive mixture evenly in the bottom of an 8 x 8 inch casserole dish.
- Start alternating the zucchini mixture and the tomatoes/red peppers in layers on top of the onion mixture.
- Season each layer with salt& pepper to taste.
- Mix bread crumbs, parmesan& parsley in a bowl; sprinkle over top of vegetables.
- Bake in preheated 375F oven for 25 minutes.
