Mini pizza bites are a quick and tasty recipe made with frozen fillo shells and pizza sauce that is the perfect appetizer.

1/3 cup pizza sauce
3 tablespoons minced green onions
1/4 cup pepperoni slices, cubed
1/2 cup diced mozzarella cheese
1/4 cup grated Parmesan cheese
30 frozen mini filo shells

Steps:

  • Preheat oven to 350 F.
  • In a small bowl, combine the pizza sauce green onions, pepperoni, and mozzarella cheese.
  • Fill filo shells with this mixture.
  • Top the filo shells with the Parmesan cheese.
  • Bake the little filo shells for 15 to 20 minutes or until cheese is melted and cups are bubbly.
  • Let stand 5 minutes, then serve.

9 flour tortillas (6 inches)
3 tablespoons olive oil
TRADITIONAL PIZZAS:
1/3 cup chopped pepperoni
3/4 cup shredded Colby-Monterey Jack cheese
1 jar (14 ounces) pizza sauce
MEDITERRANEAN PIZZAS:
1/2 cup chopped seeded tomato
1/3 cup sliced ripe olives
3/4 cup crumbled feta cheese
1/4 cup thinly sliced green onions
1 carton (7 ounces) hummus
MARGHERITA PIZZAS:
9 thin slices tomato
1 package (8 ounces) small fresh mozzarella cheese balls, sliced
1 tablespoon minced fresh basil
1 cup prepared pesto

Steps:

  • Brush one side of each tortilla with oil. Place oiled side down on grill rack. Grill, uncovered, over medium heat for 2-3 minutes or until puffed. Brush tortillas with oil; turn and top with pizza toppings. , For Traditional Pizzas: Top three grilled tortillas with pepperoni and cheese. Cover and grill for 2-3 minutes or until cheese is melted. Cut into wedges; serve with pizza sauce. , For Mediterranean Pizzas: Top three grilled tortillas with tomato, olives, feta cheese and onions. Cover and grill for 2-3 minutes or until cheese is heated through. Cut into wedges; serve with hummus. , For Margherita Pizzas: Top three grilled tortillas with tomato slices, mozzarella cheese and basil. Cover and grill for 2-3 minutes or until cheese is melted. Cut into wedges; serve with pesto.

1 13.8-ounce package refrigerated pizza dough
3/4 cup grated Fontina cheese (about 2 ounces)
8 cherry tomatoes (about 3 ounces), quartered
2 tablespoons grated Parmesan cheese
2 teaspoons extra-virgin olive oil
1/3 cup thinly sliced fresh basil
1 1/2 ounces thinly sliced prosciutto, coarsely torn into strips

Steps:

  • Preheat oven to 475°F. Lightly sprinkle rimmed baking sheet with flour. Roll out pizza dough on lightly floured surface 1/4-inch thick. Using 2 1/2-inch diameter cookie cutter, cut 16 dough rounds. Arrange rounds on prepared baking sheet. Sprinkle rounds with Fontina cheese, dividing equally. Place 2 tomato quarters on each round, pressing gently into dough. Sprinkle tomatoes with Parmesan cheese. (Can be prepared 2 hours ahead. Cover and chill.)
  • Bake pizzette until golden brown, about 12 minutes. Drizzle pizzette with olive oil, then sprinkle with basil and lightly with salt and pepper. Drape prosciutto strips over. Arrange on platter and serve immediately.

3 Triscuit crackers
3 pepperoni slices
3 teaspoons shredded cheddar cheese, or a mozzarella and cheddar mixture

Steps:

  • Top each of 3 Triscuit crackers with 1 pepperoni slice and 1 teaspoon shredded cheddar cheese or cheddar/mozzarella mixture. (I love mozzarella on regular pizza, but found that using all mozzarella cheese in this recipe tasted a little bland to me.).
  • Microwave on high 15-30 seconds or until cheese is melted.
  • When making a bunch, I filled up a microwaveable plate with as many crackers as I could, then cooked them for about 45 seconds, or until the cheese was melted. I didn't have to keep them warm between batches because as I brought each group out, they were eaten even before the next batch was done cooking.

  • Bring pizza dough to room temperature to make it easier to work with. Make small 1-oz balls out of dough. Cover with kitchen towel until dough is room temperature and oven is hot.
  • Press out each small ball of dough or use rolling pin to form small pizza crusts. Place small handful cornmeal on rimless cookie sheet and place dough on cornmeal. Shake pan to make sure dough is not sticking to pan. Repeat with more crusts. Make as many as will fit on your pizza stone.
  • Add your favorite toppings to the pizzas in whatever order you like. Shake the pan once more and add more cornmeal under the pizzas if they are sticking.
