LISA'S MACARONI AND CHEESE
I use three kinds of cheese to make this rich, baked macaroni and cheese. My husband considers it a special treat, and my six-year old son especially likes the 'stringy cheese'! The shape of the baking pan will affect the outcome. I like lots of 'crunchy stuff,' so prefer a long, shallow pan. A deeper, narrower pan will yield more of the soft 'insides.'

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a large bowl, combine macaroni, Swiss, mozzarella and Cheddar and stir until cheeses melt. Stir in milk. Season to taste with salt, onion powder, garlic powder, and parsley. Spoon into prepared dish, and dot with margarine.
- Bake in preheated oven 50 to 60 minutes, or until top is crunchy.

OLD FASHIONED MACARONI AND CHEESE
This has been one of my favorite side dishes. Make it a meal by adding leftover ham or some smoked sausage.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Combine cooked macaroni, butter, cheese, salt and pepper.
- Place in a greased 1 1/2 quart baking dish.
- Combine eggs and milk; pour over macaroni.
- Bake for 40 to 50 minutes.
HOMEMADE MACARONI AND CHEESE

Steps:
- Cook pasta to box directions.
- Melt butter.
- In a large bowl add pasta, melted butter, Monterey jack and mozzarella; stir well to combine.
- Add mixture to a large deep casserole 13x9x4.
- Cube Velveeta and push the Velveeta down into pasta mixture (do it evenly).
- Add eggs to 1 1/2 cups of milk and pour evenly over pasta.
- Slowly pour half and half over the pasta (you may not need the whole quart).
- Top with 2 cups of the cheddar.
- Bake in preheated oven at 350° until brown and bubbly (about an hour or so). Put a cookie sheet under casserole dish in case it cooks over.

LISA'S HOMEMADE MACARONI WITH CHEESE
My family loves my macaroni with cheese. They are so delicious and cheesy. I made them from scratch and it is so easy to fix it. I love it.

- Preheat oven to 350 F. Cook macaroni to according package to directions. Put the butter in a microwaveable medium bowl. Put in microwave for 20 seconds until melted. Put the flour and mix with butter and add milk and whisk until well blended. Put in microwave for seven minutes until thickens. Put the cheese in flour mixture and mix well until cheese melted. Put egg, salt and pepper and mix well. Drain macaroni and put macaroni in 9X13 baking dish and put cheese mixture in macaroni and mix well. If you like to put more cheese on top. Bake for 30 minutes.

- Cook box of macaroni according to directions while cooking, make sauce.
- melt over medium heat 2 tablespoons butter and then blend in 2 tablespoons of flour with whisk remove from heat.
- blend in SLOWLY one pint of whipping cream (done a little at a time to prevent lumps). If you cannot get whipping cream you can substitue heavy cream.
- put back on medium heat stir constantly once hot to touch but not boiling add milk, once this is hot to touch again, add white cheese one slice at a time so it melts break cheese up into pieces, and then add in velveeta also broken up, one slice at a time.
- Stir constantly so it will not stick or burn.
- drain macaroni and pour into large pan (deep lasagna size pan 11 x 13) pour melted cheese sauce over it and mix.
- Cover with tin foil and bake in 375 oven for 30 minutes.
