Create a simple, crowd-pleasing canapé by spearing Spanish sausage and harissa shellfish then serving oven-baked with a garlic mayonnaise

12 mini chorizo sausages (for cooking chorizo cut into 12 pieces)
12 raw shelled prawns
1 tsp harissa
½ garlic clove , crushed
2 ½ tbsp mayonnaise
2 ½ tbsp Greek yogurt
1 tbsp chopped parsley

Steps:

  • Heat oven to 200C/180C fan/gas 6 and cook the chorizo on a tray for 12 mins. Meanwhile, mix together the prawns and harissa. In a bowl, combine the garlic, mayo and yogurt to make a dip.
  • Turn the chorizo, add the prawns to the tray and cook for 3 mins more. Sprinkle the parsley over the prawns, then thread each onto a skewer, followed by a sausage. Serve with the dip.

Number Of Ingredients 9

2 cloves garlic, finely chopped
2 teaspoons paprika
1/2 cup olive oil
1 pound Spanish chorizo, sliced into 1/2-inch pieces
2 pounds large shrimp, peeled and deveined, tails left on
20 (6-inch) bamboo skewers, soaked in water
Sea salt
Freshly ground black pepper
2 lemons, cut into small wedges

Steps:

  • In a small bowl, whisk together the garlic, paprika and olive oil. Set aside
  • Put a slice chorizo into the curve of a shrimp. Thread a skewer through the shrimp starting at the tail and working your way up through the chorizo into the shrimp. Repeat with remaining shrimp and chorizo.
  • Pour half of the marinade on the bottom of a large baking dish and spread out to evenly coat the bottom of the dish. Put the finished skewers on top and brush the remaining marinade evenly over the top of the skewers. Cover with plastic wrap and refrigerate for at least 10 minutes or up to 1 hour.
  • Heat a grill or grill pan to medium-high heat.
  • Season the skewers with salt and pepper, to taste. Grill the skewers for 3 minutes per side. Remove from the grill to a serving platter and serve with lemon wedges.

225g chorizo , sliced
16 cooked, peeled king prawns
zest 1 lemon
chopped parsley
1 crushed garlic clove

Steps:

  • Heat oven to 200C/180C fan/gas 6. Fry the chorizo until crisp on both sides. Skewer the cooked, peeled king prawns onto cocktail sticks and add a slice of chorizo to each, then transfer to a baking sheet and bake for 5 mins until warmed through.
  • To make the gremolata, mix lemon zest with some parsley and garlic. Sprinkle over the prawn and chorizo skewers to serve.

24 jumbo shrimp, peeled and deveined, tails intact (about 2 lbs)
2 garlic cloves, minced
1/4 cup extra virgin olive oil
2 tablespoons fresh lime juice
1 lime, cut into wedges
8 ounces chorizo sausage, links cut on the bias into sixteen 1 inch pieces
2 Hass avocadoes, halved, pitted, peeled, wedged
coarse salt & fresh ground pepper

Steps:

  • Soak 8 wooden skewers in water to prepare them for the grill.
  • Toss shrimp, garlic, oil, and lime juice in a large baking dish. Cover and marinate in the refrigerator for 30 minutes, turning occasionally.
  • Preheat grill to medium-high. Thread 3 shrimp and 2 slices of chorizo onto each skewer, alternating pieces. Season with salt.
  • Grill until shrimp are opaque and chorizo is slightly softened, about 3 minutes per side.
  • Arrange avocados on a platter. Squeeze lime wedges over avocados and season with salt and pepper. Serve with shrimp and chorizo skewers.
