GRILLED LOBSTER TAILS WITH HERB BUTTER

Grilled Lobster Tails with Herb Butter image

Slather the Neelys' recipe for Grilled Lobster Tails with Herb Butter, a homemade blend of chopped chives, tarragon and garlic from Food Network.

Provided by Patrick and Gina Neely : Food Network

Categories     main-dish

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 11

1 stick salted butter, at room temperature
2 tablespoons chopped chives
1 tablespoon chopped tarragon leaves
1 clove garlic, minced
Dash hot sauce
Freshly ground black pepper
4 (7-ounce) lobster tails
Olive oil
Kosher salt
Lemon wedges, for garnish
Chive sprigs

Steps:

  • Preheat your grill to direct medium-high heat.
  • In a small bowl blend butter, chives, tarragon, minced garlic, hot sauce, and black pepper with a rubber spatula. Blend thoroughly. Cover with plastic wrap and reserve.
  • Using kitchen shears, butterfly the lobster tails straight down the middle of the softer underside of the shell. Cut the meat down the center without cutting all the way through. Insert a metal skewer down the lobster tail so the tail stands straight. Brush the tails with olive oil and season with salt, to taste.
  • Grill lobsters cut side down over medium high heat about 5 minutes, until the shells are bright in color. Turn the tails over and spoon a generous tablespoon of herbed butter onto the butterflied meat. Grill for another 4 minutes, or until the lobster meat is an opaque white color.
  • Remove lobster tails from the grill and serve with more herb butter and lemon wedges. Garnish with chive sprigs.

GRILLED LOBSTER TAILS

I found this recipe on AllRecipes. This one did not need to be changed at all. Sheer perfection and the only way we eat lobster in our house anymore. I highly recommend still dipping the lovely lobster meat in melted butter, but it's not necessary. The flavor here is wonderful.

Time 27m

Yield 2 , 2 serving(s)

Number Of Ingredients 7

1 tablespoon lemon juice
1/3 cup olive oil
1 teaspoon salt
1 teaspoon paprika
1/8 teaspoon white pepper
1/8 teaspoon garlic powder
2 (8 ounce) rock lobster tail

Steps:

  • Preheat grill for high heat.
  • Squeeze lemon juice into a small bowl, and slowly whisk in olive oil. Whisk in salt, paprika, white pepper, and garlic powder. Split lobster tails lengthwise with a large knife, and brush flesh side of tail with marinade.
  • Lightly oil grill grate. Place tails, flesh side down, on preheated grill. Cook for 10 to 12 minutes, turning once, and basting frequently with marinade. Discard any remaining marinade. Lobster is done when opaque and firm to the touch.

I actually double the marinade if making it for just my husband and I as we love it so much. When we serve this for guests we keep the lobster as the main attraction, and pair it with a simple green salad with a light dressing, crusty bread, melted butter in heated ramekins for dipping, and a bottle of cold Chardonnay.

Time 40m

Yield 4

Number Of Ingredients 7

¼ cup butter
2 teaspoons lemon juice
1 tablespoon grated orange zest
⅛ teaspoon ground ginger
⅛ teaspoon chili powder
⅛ teaspoon aromatic bitters
4 (6 ounce) lobster tails

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil grate.
  • Melt the butter in a saucepan over medium heat, and stir in the lemon juice, orange zest, ginger, chili powder, and bitters. Simmer gently for 2 minutes, then set aside. Cut away the membrane on the underside of the lobster tails, and insert a metal skewer into each one. This will prevent them from curling up as they cook.
  • Cook the lobster tails shell-side up on the preheated grill for 10 minutes, then turn the tails over, and spoon the butter sauce over the meat. Continue cooking until the meat is no longer translucent in the middle, about 10 minutes more.

GRILLED LOBSTER TAILS

Grilled Lobster Tails image

I had never tried grilling lobster tails at home until I tried this convenient and deliciously different recipe. It turned out amazing, and has left me with little reason to ever order grilled lobster tail at a restaurant again. Here's how to cook lobster tails on the grill. -Katie Rush, Kansas City, Missouri

Provided by Taste of Home

Categories     Dinner

Time 25m

Yield 6 servings.

Number Of Ingredients 6

6 frozen lobster tails (8 to 10 ounces each), thawed
3/4 cup olive oil
3 tablespoons minced fresh chives
3 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Using scissors, cut 3 to 4 lengthwise slits in underside of tail to loosen shell slightly. Cut top of lobster shell lengthwise down the center with scissors, leaving tail fin intact. Cut shell at an angle away from the center of the tail at base of tail fin. Loosen meat from shell, keeping the fin end attached; lift meat and lay over shell. , In a small bowl, combine the remaining ingredients; spoon over lobster meat. Cover and refrigerate for 20 minutes., Place lobster tails, meat side up, on grill rack. Grill, covered, over medium heat for 10-12 minutes or until meat is opaque.

BEST GRILLED TROPICAL CITRUS LOBSTER TAILS

Best Grilled Tropical Citrus Lobster Tails image

Very easy grilled lobster tails. Keeping with the tropical theme, I love to serve this with my Recipe #407263 and grilled zucchini planks for a light healthy dinner. The grilled lobster is the star so I like to add dishes that will compliment the lobster and it's flavors. This is orange based butter vs lemon based, but equally as good.

Provided by SarasotaCook

Categories     Lobster

Time 20m

Yield 4-6 Lobster Tails, 4-6 serving(s)

Number Of Ingredients 11

4 -6 lobster tails, this sauce will serve up to 6 (depends on the size)
1 cup butter
1/4 cup orange juice
1 teaspoon orange zest
1/2 teaspoon lime zest
1 teaspoon lime juice
1 tablespoon pineapple juice (since I love to serve this dish with pineapple salsa, you will already have some pineapple juice on )
1 teaspoon honey
1 teaspoon shallot, grated
1 tablespoon garlic
1 tablespoon fresh cilantro, very fine chopped (more or less to taste)

Steps:

  • Lobster -- Take each tail, flesh side up and cut down the center of the tail. DO NOT cut all the way through the shell, you just want to cut the meat, so the good butter sauce can get all the way into the meat.
  • Butter -- Simply mix the butter, orange lime and pineapple juice, orange and lime zest, shallot, honey, garlic and cilantro. If you want you can use a small food processor to do this, but I just mix it by hand. Transfer to a small bowl and set to the side. You will need to melt this to brush on the lobsters. I just melt mine in the microwave - 10-15 seconds is all you need.
  • Grilling -- I start with the tails wrapped in a foil pouch so they don't dry out too much. Just add each tail to a piece of foil, shell side down, and butter the flesh side well. Wrap up each tail and put on the grill. I cook around 5-8 minutes (depends on the size of the tail) and then open up the foil pouch, remove the tail and finish on the grill. Brush again with the butter and put flesh side down on the grill. Cook 2 minutes, flip and finish cooking shell side down. When you flip the lobster, make sure to brush with the butter again. Cook another couple of minutes. You want the flesh opaque, firm to the touch and the shell red in color.
  • Serve -- Serve a little extra butter on the side if you want. The lobster meat will pull right out of the shell. ENJOY!

CRUSTED & GRILLED LOBSTER TAILS

Crusted & Grilled Lobster Tails image

When our sons were quite young, occasionally, after we put them to bed, my husband and I would have a special late night candlelight dinner. Instead of paying for a babysitter, we would fix something really special and just dine in. It was always more fun then going out;>) This was one of our favorites.

ORANGE-SCENTED GRILLED LOBSTER TAILS - REVIEW BY KAI ...
This is truly an outstanding recipe! Though I prefer using fresh ginger instead of the ground spice, I've made it both ways and it's still delicious. Ditto with the aromatic bitters. I have also had success in using my broiler instead of the grill (this winter has …
