Unbelievably simple applesauce made right on the stovetop with 3 ingredients. Ready in less than 30 minutes, no added sugar, delicious applesauce every time.

2 medium honeycrisp apples, peeled, cored, and chopped in bite-size pieces
1/4 tsp ground cinnamon ((plus more to taste))
2-3 Tbsp water
1 tsp lemon juice or apple cider vinegar ((for preserving / keeping fresh longer / tartness))
1-2 tsp maple syrup ((or other sweetener of choice // optional) )

Steps:

  • To a medium saucepan (see notes for Instant Pot instructions) add peeled chopped apples, cinnamon, a dash of water (~2-3 Tbsp / 30-45 ml as original recipe is written), and lemon juice or apple cider vinegar. Stir.
  • Cover and cook over medium heat until it simmers, then reduce heat to low / medium-low and continue cooking until the apples are very tender and slightly caramelized - about 15-20 minutes. Stir occasionally.
  • Use the back of a wooden spoon or potato masher to mash into a loose sauce. You could also blend with an immersion blender, in a food processor or high-speed blender for smoother texture (optional) - a helpful step if you left the skins on. Add a dash of maple syrup or sugar of choice to sweeten (optional - depends on sweetness of your apples).
  • Enjoy fresh, or store cooled leftovers in the refrigerator up to 4-5 days, or in the freezer up to 1 month. Enjoy cold or reheated in the microwave or on the stovetop over low heat until hot (add more water as needed if dry).

We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

4 pounds assorted apples, such as Golden Delicious, Gala, Honeycrisp or McIntosh (about 8), peeled, cored and chopped
1/4 cup sugar
Kosher salt
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon ground cinnamon

Steps:

  • Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
  • Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
  • Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

Steps:

  • Combine all ingredients in a large pot and cook over medium heat, stirring occasionally, for 25 minutes.
  • Carefully puree in a food processor or blender (don't fill too full; split into two portions if needed) until smooth. Store in the fridge and serve by itself, over pork chops, over ice cream, over pancakes...or any place where applesauce is needed!

2 teaspoons fresh lemon juice
1/3 cup brown sugar or 1/3 cup Splenda brown sugar blend
1/3 cup water
2 dashes salt or 2 dashes salt substitute
1 teaspoon allspice

Steps:

  • Place water,salt and lemon juice in blender.
  • Add half of the apple slices with half of the sugar or Splenda blend.
  • Pulse 3 or 4 times.
  • Add other half of apples. Add the other half of sugar or Splenda blend and add allspice.
  • Pulse until all is blended.
  • Taste. If you want more sugar, add 1 tsp at a time. Stir until blended.

18 McIntosh apples (about 6 pounds), peeled, cored, and quartered
1 cup apple cider
1 large cinnamon stick
1/2 vanilla bean
1 teaspoon ground ginger
1/2 teaspoon ground cardamom
1/2 teaspoon ground nutmeg
1/2 teaspoon ground mace
1/2 cup sugar, or to taste
2 tablespoons freshly squeezed lemon juice

Steps:

  • Combine apples, apple cider, cinnamon, vanilla bean, ginger, cardamom, nutmeg, mace, sugar, and lemon juice in a large, wide, heavy-bottomed saucepan.
  • Place the saucepan over medium heat, and cook, stirring often with a wooden spoon to prevent scorching, until apples are broken down and saucy, about 50 to 60 minutes. Mash any large pieces of apple with a large wooden spoon to help them break down. Adjust seasoning to taste with more sugar and spices. Remove the apple mixture from the heat, and let stand to cool completely before serving, discarding cinnamon sticks and vanilla pod.

I got the inspiration for this recipe from Rita L. (and stole the idea from ronabarrett.com. except my version is much, much less expensive.) Use fresh or dried lavender.

1 1/2 lbs apples, cored, seeded (your choice to peel)
1 -2 tablespoon dried lavender, crushed to release flavor (read *NOTE)
1/2 vanilla bean, sliced down the side to release flavor
1/4 cup lemon juice or 1/4 cup apple juice
1 teaspoon orange zest or 1 teaspoon lemon zest
2 tablespoons honey (or 1/4 cup raw sugar)
1 tablespoon butter

Steps:

  • *NOTE: Begin by using 1 tablespoon lavender then add more if needed once applesauce is cooked. Another option is to use 1/2-1 teaspoon fresh lavender flowers.
  • STOVE TOP DIRECTIONS: Cut apples into 2" chunks. Combine all ingredients in a pan and bring to boil. Reduce heat, cover pan and simmer until apples are softened, about 40 minutes. Remove vanilla bean pod.
  • CROCK POT DIRECTIONS: Cut apples into 2" chunks. Combine all ingredients in crock pot. Cover pot, and cook apple mixture on LOW for 3-4 hours or until apples are soft enough to puree. Remove vanilla bean pod.
  • Using potato masher or immersion blender puree mixture to desired consistency.
  • Taste and adjust seasoning if necessary. Serve warm or chilled.
  • Freezes well.
