Grandma's Fall Off the Bone BBQ Country Style Pork Ribs image

My Grandma's recipe for country style pork ribs baked in the oven are literally fall-off-the-bone tender and topped with jammy sweet onions in a homemade BBQ sauce.

5 pounds bone-in country style pork ribs
kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
2 tablespoons canola oil
2 medium yellow onions (, sliced 3/8" thick)
3/4 cup ketchup
3/4 cup water
1/2 cup granulated sugar
1/3 cup dry sherry wine
2 tablespoons apple cider vinegar
1 1/2 tablespoons soy sauce
1 1/2 tablespoons Worcestershire sauce
2 cloves garlic (, pressed or minced)
1 teaspoon kosher salt
3/4 teaspoon paprika
3/4 teaspoon chili powder

Steps:

  • Line a baking sheet with a cooling rack. Working in batches, season the pork ribs on all sides with kosher salt and black pepper and lightly toss in flour. Transfer the ribs to the baking sheet and set aside.
  • Add 1 tablespoon of the oil to a large cast iron skillet or dutch oven (with a lid) over medium/medium high heat. When the oil is warm and shimmering, brown the ribs in batches, turning on all sides until golden, about 15-20 minutes per batch. Be careful not to overcrowd the pan or the ribs will steam and won't get that delicious golden crust.
  • Transfer the browned ribs back to the baking sheet and wipe any burned pieces out of the pan. Add the remaining oil, and continue browning the rest of the ribs.
  • While the ribs are cooking, mix the BBQ sauce ingredients together and preheat the oven to 325°F.
  • Add all of the ribs back to the dutch oven, snuggling them evenly together. Scatter the tops with the sliced onions. Whisk the BBQ sauce and pour evenly over the onions and ribs.
  • Cover tightly with the lid and bake for 1 1/2 to 2 hours or until the onions are soft and jammy and the pork is tender. Midway through cooking, I usually open the oven and spoon the sauce over the ribs and onions.
  • Skim any excess fat from the sauce if needed (depending on how fatty the ribs are) and serve hot with au gratin or mashed potatoes with the sauce and onions spooned on top.

3 pounds bone-in country-style pork ribs
Kosher salt and freshly ground black pepper
3 tablespoons vegetable oil
1 carrot, chopped
1 stalk celery, chopped
1 onion, chopped
4 cloves garlic, minced
2 tablespoons tomato paste
1/4 cup apple cider vinegar
1 teaspoon crushed red pepper flakes
2 bay leaves
2 1/2 cups chicken stock
Creamy Polenta, recipe follows
2 tablespoons chopped fresh parsley, for garnish
Vegetable cooking spray
1 1/3 cups half-and-half
1 cup milk
2 tablespoons butter
1/3 cup coarse polenta, or corn grits
Kosher salt
1/2 cup grated Parmesan
Freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Pat the ribs dry and sprinkle with salt and pepper. Heat 2
  • tablespoons of the oil in a Dutch oven over medium-high heat and brown the ribs
  • on all sides, working in batches if needed. Remove the ribs and set aside. Add
  • the remaining 1 tablespoon of oil to the Dutch oven and reduce the heat to medium.
  • Add the carrots, celery, onions and some salt and pepper and cook until soft,
  • about 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Add
  • the tomato paste and cook, stirring, to remove the raw flavor, about 3 minutes.
  • Deglaze the pan with the vinegar, and then add the red pepper flakes and bay
  • leaves.
  • Add the ribs back to the pan and add enough stock to reach
  • halfway up the sides of the ribs. Bring the pan to a simmer, cover and place in
  • the oven. Braise until the meat is tender, about 1 1/2 hours. During the last
  • half hour, uncover to allow the liquid to reduce and the pork to brown.
  • Serve the ribs with Creamy Polenta, spooning the sauce on
  • top, and garnishing with parsley.
  • Spray the insert of a slow cooker with cooking spray (for easier clean up) and preheat on high.
  • In a medium saucepan, add 1 cup of the half-and-half, the milk, 1 tablespoon of the butter and the polenta. Season with salt and bring to a boil over medium-high heat, whisking constantly to keep the mixture lump-free. Boil for 2 to 3 minutes. Pour the mixture into the slow cooker and cook on high for 2 hours, stirring once or twice per hour.
  • Once you are ready to serve, open the slow cooker and whisk in the remaining 1 tablespoon butter, the remaining 1/3 cup half-and-half and the Parmesan. Salt and pepper conservatively since the polenta will be served with a robustly salted dish.

6 tablespoons brown sugar
6 tablespoons paprika
3 tablespoons mr. pepper seasoning, we used 1 T. black pepper, 1 T. white pepper and 1 T. cayenne pepper in place of Mr. Pepper seasonin
6 tablespoons garlic powder, we used Lawry's garlic powder with parsley, as it intensifies the flavor
1 1/2 teaspoons salt
9 tablespoons Dijon mustard or 9 tablespoons yellow mustard, we used Dijon
2 tablespoons liquid smoke, we omitted this (optional)
3 pork rib racks, 9 lbs. or 4 racks of baby-back pork ribs, 8 lbs
your favorite barbecue sauce, we used Ah-So Chinese Style Sauce

Steps:

  • Adjust oven rack to upper-middle position, and preheat oven to 250.
  • Mix sugar, paprika, pepper, garlic powder and salt in a small bowl.
  • If using liquid smoke, mix mustard and liquid smoke in a small bowl.
  • Brush both sides of each slab with mustard, then sprinkle both sides with the dry rub.
  • If using just mustard, brush directly on each slab, then sprinkle both sides with the dry rub.
  • ***Line a lg. jelly roll pan or other shallow roasting pan with a sheet of heavy-duty aluminum foil.
  • Place the pan on the oven floor (if oven is gas), or bottom oven rack (if oven is electric), making sure the foil covers the entire oven level.
  • Roast ribs until fork-tender- 2-3 hours for spare ribs, and 1 1/2-2 hours for baby-back ribs.
  • Remove foil-lined pan from oven, and pour off fat. Transfer ribs to foil-lined pan, meat side down. Turn on broiler. Brush ribs with 1/2 the Ah-So Chinese Style Sauce.
  • Put pan under broiler until glaze bubbles vigorously. Remove pan, turn the ribs, brush with the remaining sauce, and return to the.

  • ***Note: My Aunt Ann makes these directly on the racks in her self-cleaning oven, and just put aluminum foil on the bottom rack to catch everything. Once the ribs are made she just soaks the racks to clean, and turns on the automatic cleaning system for her oven.

I found this recipe years ago in a magazine and it has become a favorite. They are not only the best-ever, but also the easiest-ever. These finger-licking ribs start with a dry spice rub and end with an out-of-this-world sauce. And, they have one other distinct advantage: They're cooked mostly in advance, so they require very little last-minute tending. For a finishing touch, all you need to do is give them a quick crisping on the grill (or under the broiler.) Preparation time does not include marinating.

2 tablespoons dry rub seasonings, recipe follows (I usually use a little more)
4 lbs country-style pork ribs (I prefer bone-in, but you could use boneless)
3 cups ketchup
1 1/2 cups beer (beer is better) or 1 1/2 cups water (beer is better)
3/4 cup cider vinegar
1/4 cup Worcestershire sauce
1 tablespoon prepared mustard (such as French's yellow mustard)
2 tablespoons brown sugar (light or dark, doesn't matter)
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon black pepper

Steps:

  • Rub Dry Rub all over ribs. Place in a glass baking dish; cover and refrigerate several hours or, even better, overnight.
  • Stir together ketchup, beer (or water), vinegar, Worcestershire sauce, mustard, brown sugar (add more, if you like your sauce sweeter), oregano, basil, thyme, and pepper in a medium-size bowl.
  • Transfer ribs to a 5-quart Dutch oven. Reserve 1 cup sauce for basting later; pour remainder over ribs. Cover pot and cook the ribs over low heat for about 45 minutes or until ribs are tender. (Ribs may be prepared up to a day ahead and refrigerated.).
  • Prepare grill or heat broiler. Remove ribs from sauce; discard sauce. Spread ribs with half the reserved sauce.
  • Cook ribs over medium coals (or medium direct heat on a gas grill) or broil until crispy and browned, about 5 minutes. Turn ribs over. Spread with remaining sauce. Cook 5 minutes more.
  • DRY RUB for COUNTRY-STYLE RIBS: Combine 2 tablespoons salt, 3 tablespoons brown sugar, 3 tablespoons granulated sugar, 2 tablespoons dried lemon peel (found in the spice section of your supermarket), 3 tablespoons black pepper, and 1 tablespoon paprika in a small bowl. Store unused dry rub in an airtight container in a cool, dark place.

1/2 cup sugar
1/2 cup catsup
1/4 cup cider vinegar
1/4 cup water
1 teaspoon salt
1/2 teaspoon Worcestershire sauce
red pepper flakes, to taste

Steps:

  • Heat oven to 350 degrees.
  • Place ribs or chops in roasting pan.
  • In 2 quart saucepan combine remaining ingredients.
  • Cook over medium heat, stirring occasionally, until mixture comes to a full boil (5 to 8 minutes).
  • Pour over ribs or chops turning to coat all sides.
  • Bake, turning every 20 to 30 minutes, for 2 to 2 1/2 hours, or until meat is fork tender.
  • Serve with cooking sauce.

garlic powder, enough to coat roast well
1 large onion, cut into thin slices

Steps:

  • Place roast, fat side up, on a rack in a shallow roasting pan.
  • Sprinkle all over with garlic powder and rub into meat.
  • Cut onion into slices, and put all over top of roast, and hold in place with tooth picks.
  • Bake at 350°F for 2 hours or until meat thermometer registers 145°F (med-rare).

4 -5 lbs country-style pork ribs or 4 -5 lbs ribs, of your choice
2 liters Dr. Pepper cola, do NOT use diet
5 garlic cloves, sliced
1 tablespoon liquid smoke
1 large onion, halved, and sliced
barbecue sauce, I use Lloyd'sBarbecue Sauce and I use Sweet Baby Ray's barbecue sauce

Steps:

  • Place ribs in lg. stock pot, and pour Dr. Pepper over ribs to cover.
  • Add garlic, liquid smoke, and onion. Bring to a boil, lower to simmer, and cook until ribs are tender, 1-1 1/2 hours.
  • Place ribs in a baking pan, and pour BBQ sauce over ribs. Do NOT cover.
  • Bake at 350, for about 35-45 mins., or they can be put on the grill, and grill over med-low. heat until the ribs glaze over, 10-20 minutes.
  • Makes 4 servings.
