Provided by Danny Boome

Time 20m

Yield about 8 cups

Number Of Ingredients 4

12 organic lemons
1 liter 100 proof-vodka
3 cups sugar
4 cups water

Steps:

  • Wash the lemons thoroughly. Using a peeler, take off the skins being careful not to get any of the white lemon "pith" onto your peelings or it will add bitterness to your limoncello. Place peels into a large wide-mouth jar with all the vodka. Seal tightly. Place the jar in a cool, dry place for 2 to 3 weeks. Shake the jar to remix everything everyday or so. You will notice the color of the liquid changing to yellow as the peels lose their color.
  • After 1 week, dissolve the sugar completely with the water by heating it on the stove in a large saucepan. Let simple syrup cool to room temperature. Strain the lemon peels from the alcohol and discard. Mix the alcohol with the simple syrup. At this point you can serve it right away or pour the alcohol into a bottle with the simple syrup and place in the freezer to chill. Once chilled it becomes thick and syrupy.

Time P8DT48m

Yield approximately 36 ounces

Number Of Ingredients 4

2 pounds lemons, about 8 to 10
750 ml vodka, 100 proof
2/3 cup water
2/3 cup sugar

Steps:

  • Carefully remove the zest from the lemons using a microplane or rasp grater, being careful not to remove any of the white pith. Reserve the lemons to make lemonade or squeeze and freeze the juice for later use.
  • Put the lemon zest into a lidded glass container that is at least 2-quarts in size. Pour the vodka over the zest, and let sit in a cool dark place for 7 days.
  • After 7 days, strain the liquid through a fine mesh strainer lined with muslin or several layers of cheesecloth and return the vodka to the container.
  • Combine the water and sugar in a small saucepan set over high heat and cook, stirring continually, until the sugar is completely dissolved, approximately 3 minutes. Once completely cool, add the sugar syrup to the vodka, and stir to combine.
  • Cover and put the container in the freezer for at least 4 hours. Limoncello can be stored in the freezer for up to a year.

LIMONCELLO (LEMONCELLO, LIMONCELLA)

Limoncello (Lemoncello, Limoncella) image

Limoncello, Sicily's signature liqueur, is easy to make at home. Perfect for those hot summer days... a cool explosion of the senses. This is the best Limoncello recipe I have come across, I think the secret that makes this one stand apart is the addition of the zest from one lime. Please use organic lemons and limes for this recipe. If they are not organic soak them in water for 1/2 an hour or so before zesting. Also it has been pointed out that it is best to use under-ripe fruit. Once made... there are so many uses; spiking lemonade, flavoring cocktails and splashing onto ice cream, poundcake or fresh fruit. You can substitute the peel of 15 limes for the lemon peel. Total time: 30 minutes, plus at least 4 weeks infusing time

Provided by NcMysteryShopper

Categories     Beverages

Time 30m

Yield 9 1/4 Cups, 74 serving(s)

Number Of Ingredients 5

12 lemons (thick skinned, meyers, Amalfi, Lisbon, Femminello St. Teresa..)
1 lime (thick skinned)
2 (750 ml) bottles 100 proof vodka, divided
2 cups water
2 cups granulated sugar

Steps:

  • Remove yellow part of lemon peel either with micro-plane or sharp peeler. If any pith remains on the back of a strip of peel, scrape it off.
  • Place peels in a large jar with screw-top lid or sealed with clamps and cover with one bottle of vodka.
  • Leave mixture to mellow for 2 weeks in a dark place.
  • After mixture sets, combine sugar and water in a small saucepan, bring to a boil over medium heat, stirring frequently, until the sugar has dissolved. Allow the syrup to cool to room temperature (This is very important- if the sugar syrup is still warm the limoncello will result cloudy instead of limpid).
  • Using a coffee filter or fine sieve, strain the vodka from the peels and mix it with the remaining bottle of vodka and the syrup. Put the liqueur in bottles, seal tightly (cork or screw-top lid) and let the components marry, in a dark place, for at least 10 days before using.
  • For drinking straight, store the Limoncello in the freezer.
