The key to these sweet, lightly crisp cookies is rich white chocolate and the refreshing hint of lime in each bite!

1/2 cup butter or margarine, softened
3/4 cup packed brown sugar
2 tablespoons granulated sugar
1 1/2 teaspoons vanilla
1 egg
2 1/3 cups Original Bisquick™ mix
Green food color, if desired
1 package (6 ounces) white baking bars (white chocolate), cut into chunks
1 tablespoon grated lime peel

Steps:

  • Heat oven to 350°F. Beat butter, sugars, vanilla and egg in large bowl with spoon until well mixed. Stir in Bisquick mix. Stir in 6 drops food color, white chocolate chunks and lime peel.
  • Drop dough by rounded teaspoonfuls onto ungreased cookie sheet.
  • Bake 8 to 10 minutes or until set but not brown. Cool 1 minute; remove from cookie sheet to wire rack.

2 1/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon cream of tartar
1/4 teaspoon salt
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1 cup sugar
1 tablespoon finely grated lemon zest (from 2 lemons), plus 1 tablespoon fresh lemon juice
2 large eggs
1/2 teaspoon pure vanilla extract
1 1/2 cups white chocolate chips

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, baking soda, cream of tartar and salt in a medium bowl; set aside.
  • Beat the butter, sugar and lemon zest in a large bowl with a mixer on medium-high speed until light and fluffy, 3 minutes. Beat in the eggs, one at a time, then beat in the lemon juice and vanilla. Reduce the mixer speed to low; beat in the flour mixture in two batches until combined. Stir in the white chocolate chips with a wooden spoon.
  • Drop heaping tablespoonfuls of dough about 2 inches apart on the prepared pans. Bake, switching the pans halfway through, until the cookies are just golden around the edges, 10 to 12 minutes. Let cool 3 to 5 minutes on the baking sheets, then transfer to a rack to cool completely.

¼ cup butter
½ lime, zested
1 egg
⅓ cup white sugar
1 teaspoon vanilla extract
1 teaspoon fresh lime juice
⅔ cup all-purpose flour
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 8x8-inch baking dish.
  • Combine white chocolate, butter, and lime zest in a saucepan over medium-low heat; cook and stir until completely melted, 5 to 10 minutes. Remove from heat.
  • Beat egg in a bowl using an electric mixer until thickened and foamy; add white chocolate mixture, sugar, vanilla extract, and lime juice. Mix well. Fold 2/3 cup plus 1 tablespoon flour into mixture until batter is just mixed. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 15 to 25 minutes. Cool blondies before cutting into bars.

1/2 cup butter, softened
2 large eggs
1 tablespoon grated lime zest
1 1/4 cups white chocolate chips
3 cups sifted powdered sugar
2 teaspoons grated lime rind
5 -6 tablespoons fresh lime juice

Steps:

  • Preheat oven to 350°; position oven rack in the upper third of oven; spray cookie sheets with nonstick cooking spray.
  • In a big bowl, add half of the cake mix, softened butter, eggs, and lime zest.
  • Blend with an electric mixer on med-high speed for 1-2 minutes, until blended and smooth.
  • Stir in remaining cake mix and white chocolate chips with a wooden spoon until all dry ingredients are moistened.
  • Drop dough by teaspoonfuls, 2 inches apart, onto prepared cookie sheets.
  • Bake 10-13 minutes or until set at edges and just barely set at center when lightly touched.

Enjoy a sweet and sultry variation on the standard (yet always fantastic) white chocolate chip/macadamia nut cookie. People will go nuts for these! White chocolate chips aren't really available here in the United Kingdom so I chopped up some good quality Cadbury's white chocolate instead. Back at home in the States it was always so easy to find a bag of white chocolate chips in pretty much any grocery store, but not here! And if you can't find a key lime, use a regular lime. No big deal. Enjoy!

1 3.5-ounce bar high-quality white chocolate (such as Lindt or Perugina), finely chopped
1/2 cup chopped toasted almonds

Steps:

  • Preheat oven to 325°F. Butter 13x9x2-inch metal baking pan. Blend flour, sugar, and salt in processor. Add butter, 2 tablespoons lime peel, and vanilla; process just until blended and dough forms clumps. Press evenly into prepared baking pan. Pierce dough all over with fork. Using sharp knife, cut dough into 12 squares, cutting through dough completely, then cut each square in half on diagonal, forming 24 triangles total.
  • Bake shortbread until golden brown, crisp around edges, and firm to touch, about 45 minutes. Remove from oven. Using sharp knife, immediately recut shortbread, gently separating triangles. Cool shortbread in pan on rack.
  • Place white chocolate in small metal bowl. Set bowl over small saucepan of gently simmering water and stir just until chocolate is melted and smooth. Remove bowl from over water. Using fork, drizzle melted chocolate in zigzag pattern over shortbread. Sprinkle evenly with almonds and remaining 1 tablespoon lime peel. Let stand until chocolate sets, about 1 hour.
