- Cake - . Heat oven to 350 degrees . Butter and flour three 9-inch round cake pans. Line the bottom of each with a circle of wax paper.
- In a medium bowl, whisk together flour, cocoa, baking soda, baking powder and salt; set aside. In a second medium bowl, whisk together sour cream and coconut milk. In a large bowl, beat butter and sugar on medium speed until fluffy, about 2 to 3 minutes. Add eggs, one at time, beating well after each addition. Beat in almondand vanilla extracts. On medium-low speed, beat in flour mixture in three additions, alternating with coconut milk mixture, beginning and ending with the flour mixture.
- Pour batter evenly into prepared pans. Bake at 350 degrees for 25 minutes, or until a toothpick inserted in the center comes out clean. Cool in pans 10 minutes, then turn onto a wire rack and cool completely.
- Chocolate Ganache - Heat cream in a small pot on medium-high heat just until it simmers. Immediately pour over chocolate in a medium bowl; let stand 3 minutes. Add vanilla and mix until smooth. Cover and cool to room temperature.
- Filling - Meanwhile, in the bowl of a stand mixer fitted with the whisk attachment, beat the butter and sugar on medium-low speed until blended, about 1 minute. Increase speed to medium-high and beat for another 3 minutes. Add vanilla and 3 tablespoons water and beat on medium-high speed for 30 seconds. Add coconut and almonds and beat for another 30 seconds. Set aside.
- To assemble: Place one cake on a stand (if slightly rounded, trim off a bit to make it flat). Spread 1/2 the filling on the cake. Repeat with second cake and remaining filling. Top with the third cake (do not trim). Ice cake evenly with chocolate ganache. Garnish with coconut and almonds.

- For the crumb topping: Combine the flour, brown sugar, cocoa powder, cinnamon and salt in a small bowl and mix to combine. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
- For the cake: Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
- Whisk together the flour, baking powder, baking soda and salt in a small bowl.
- Beat the butter and granulated sugar together in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
- Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Sprinkle the strawberries on top. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.
- Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; re-invert onto a rack to cool completely.
- For the glaze: When the cake is cool, whisk the confectioners' sugar and milk together in a medium bowl until smooth. Drizzle the glaze over the cake and let set.

- Heat the oven to 180C/160C fan/ gas 4 and line the base of a 20cm springform tin with baking parchment. Melt the chocolate and butter in a heatproof bowl set over a pan of just-simmering water, or in the microwave in 20-second bursts. Stir, then leave to cool slightly.
- Meanwhile, tip the eggs and sugar into a second bowl and beat with an electric whisk for 4-5 mins, or until thick and creamy. Add the mascarpone or soft cheese and vanilla, and continue to beat until everything is combined. Lightly fold in the cooled melted chocolate mixture until everything is one even colour, then fold in the almonds. Sift over the cocoa powder and a small pinch of salt, and fold in to combine.
- Scrape the cake batter into the prepared tin. Put the tin on a baking tray and bake for 35-40 mins until the cake is puffed up and has cracked on top. Remove from the oven and leave to cool in the tin for 30-40 mins - it will deflate as it cools. Serve warm as a chocolate pudding, or leave to cool completely and enjoy as a fudgy brownie cake. Dust with extra cocoa powder before serving.

- Combine in saucepan cocoa, butter, oil, and water.
- Bring to a boil, stirring; let cool.
- Combine sugar and flour in a large bowl.
- Pour cocoa mixture, when cooled, over flour and sugar; and beat until smooth.
- Combine buttermilk, eggs, soda, cinnamon and vanilla; then beat into above mixture.
- Grease and flour a 13x9 inch pan; bake at 400 degrees for 35-40 minutes.
- Frosting: Start 10 minutes before baking is done.
- Combine frosting ingredients except for confectioner's sugar in a bowl, mix.
- Add confectioner's sugar; stir well, then beat until thick.

- Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Add the extracts, cream of tartar and salt; beat on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form and sugar is dissolved. , Fold in 1/4 cup cocoa. Place mixture in a pastry bag; cut a small hole in the corner of bag. Pipe meringue in 2-in. circles onto parchment-lined baking sheets. Bake at 250° for 50-60 minutes or until set and dry. ALMOND COCOA ANGEL CAKE

- Preheat the oven to 350 degrees. To make the cake, in a medium bowl, combine the flour, cocoa powder, salt, and 6 tablespoons of the sugar. In a large bowl, with an electric mixer on medium speed, beat the egg whites until foamy. Add the cream of tartar and almond extract. Increase the mixer speed to high. Gradually add the remaining 1/2 cup sugar and beat until stiff and glossy peaks form and the sugar dissolves. Fold the flour mixture, one-third at a time, into the beaten whites.
- Place in an ungreased 9 x 5 inch loaf pan and bake for 25 minutes, or until a tooth pick inserted in the center comes out clean. Turn upside down on a rack and cool for 30 minutes.
- To make the fruit sauce, in a small saucepan, whisk together the orange juice, cornstarch, and sugar. Bring to a boil over medium heat. Boil for 2 minutes, or until thickened. Remove from the heat and stir in the peaches and raspberries. Let cool.
- When the cake has cooled, using a knife, release the sides of the cake. Remove to a serving plate. Slice into 16 slices. To serve, place 2 slices of cake onto each of 8 dessert plates. Top the slices with the peach mixture.

- To make sponge cake: preheat oven to 350-degrees F. Butter and flour a 9-inch round cake pan. In a large mixing bowl beat egg yolks until light. Beat in 1/2 cup sugar until mixture forms ribbons when beaters are lifted. Sift flour with baking powder and then fold it into batter in 3 batches -- the batter will be stiff. Stir in extract. In a clean mixing bowl, beat egg whites and cream of tartar until soft peaks form. Beat in 1/4 cup sugar until peaks are stiff. Fold egg white mixture into egg yolk/flour mixture. Pour into prepared pan. Bake for 35-40 minutes or until golden and tester comes out clean. Invert onto rack cool but do not remove pan until cooled. Run a knife around edge of cake and invert cake onto platter.
- To make custard: in a saucepan whisk together yolks, sugar and flour until smooth. Whisk in milk. Stir in lemon peel. Stir over medium low heat until mixture boils. Pour into glass or plastic bowl, discarding lemon peel. Stir in vanilla. Cool.
- To assemble cake: divide custard among three bowls. In one bowl stir in chopped almonds. In the second bowl stir in cocoa powder. The third is left plain.
- Cut cake horizontally into three layers using a serrated knife.
- Set one layer on platter and sprinkle with rum and spread with the almond custard.
- Top with second layer. Sprinkle with rum and spread with plain custard.
- Top with final layer. Sprinkle with orange liquour (or juice) and spread top and sides with cocoa custard, smoothing evenly.
- Sprinkle flat side of ladyfingers with rum or orange liquor (or juice) and press ladyfingers around cake, rounded side out. Decorate wth 2 almonds on top of cake.

- Preheat oven to 325°F.
- In a food processor with knife blade attached, pulse pecans with 1/2 cup powdered sugar until pecans are finely ground.
- Add butter and vanilla and process until smooth, occasionally stopping food processor to scrape side with rubber spatula.
- Add flour and cocoa and pulse until evenly mixed; add chocolate chips and pulse JUST until combined.
- With floured hands, shape dough by rounded measuring teaspoons into 1-inch balls; place balls, 1 inch apart, on ungreased large cookie sheet.
- Bake cookies 16 to 18 minutes or until bottoms are lightly browned; transfer cookies to wire rack to cool slightly.
- Sift remaining 1 1/4 cups powdered sugar onto waxed paper.
- While cookies are still warm, roll in powdered sugar to coat; return to wire rack to cool completely; when cool, gently roll cookies in powdered sugar again.
- Store cookies in tightly covered container at room temperature up to 2 weeks, or in freezer up to 3 months.

- Butter and flour (2) 8-inch or 9-inch round baking pans.
- Beat butter and sugar in large bowl until fluffy.

- Transfer to medium bowl; press plastic wrap directly on surface.
- Cool to room temperature, about 1/2 hour.(If you are going to use this frosting - make it while you bake the cake.
- Add sugar, peanut butter, shortening, vanilla and salt.
- Beat on high speed of mixer until frosting becomes fluffy and sugar is completely dissolved.
