Broccoli Salad With Peanuts and Tahini-Lime Dressing image

Broccoli stalks, often overlooked or tossed in favor of the florets, take center-stage in this summer picnic salad. While many broccoli slaws are made with mayonnaise-based dressings, this one is inspired by the bright flavors of Thai cuisine, and uses sesame oil, lime juice, salted peanuts, scallions and a dash of hot sauce for heat. (Garnish the slaw with fresh Thai basil, if you like.) Tossed with a creamy vegan tahini-lime dressing, the broccoli softens just enough to lose that raw broccoli flavor without giving up any of its satisfying crunch. A food processor or Mandoline makes quick work of the stems, but with a little bit of patience, a good knife does the trick, too. Finally, this salad is best the day it's made, though its components can be prepared in advance to save time.

2 pounds broccoli (see Tip)
3/4 cup thinly sliced scallions, white and green parts (3 to 5 scallions)
1/2 cup lightly salted peanuts, finely chopped
1/3 cup tahini
1/4 cup fresh lime juice (from about 2 limes)
1/4 cup toasted sesame oil
2 tablespoons soy sauce or tamari
2 teaspoons honey or agave
1 garlic clove, finely grated
A few dashes of hot sauce, plus more to taste
1/3 cup chopped fresh cilantro or mint

Steps:

  • Trim the broccoli stalks and peel them to remove the tough outer layer. Cut off the florets, leaving as much of the stalk as possible intact, and set the florets aside. Using the shredding or julienne blade of a food processor, a mandoline or a sharp knife, julienne the stems and place them in a large bowl.
  • Finely chop or julienne the florets and add them to the bowl, along with the scallions and peanuts.
  • In a small bowl or glass measuring cup, combine the tahini, lime juice, sesame oil, soy sauce, honey, garlic and hot sauce and whisk until smooth. Pour the dressing over the vegetables and toss thoroughly to coat. Set aside at room temperature for at least 15 minutes, tossing occasionally, to allow the broccoli to soften slightly.
  • Just before serving, add the fresh herbs and toss well. (You can refrigerate for up to 8 hours before serving.)

1/2 tsp Aleppo pepper ((optional))
Kosher salt ((to taste))
lime juice ((if needed))

Steps:

  • For the dressing, make my lime tahini sauce recipe by blending tahini paste, lime juice, water, kosher salt together, then stir in a good cup of parsley. You can do this one night ahead of time and save it covered in the fridge. (If the tahini sauce becomes thicker as it sits in the fridge, you can stir in more lime juice or water to loosen it).
  • To make the salad, in a medium mixing bowl, combine the tahini sauce with the diced cucumbers, tomatoes, and jalapeno. Add the Aleppo-style pepper, if using. Mix well. Taste and add salt to your liking. And if needed, add more lime juice.

1 cup dried quinoa
2 cups cooked black beans, rinsed and drained
1 pint cherry tomatoes, sliced in half
1 large green pepper, diced
1/2 onion, diced
Diced jalapeno, to taste
2 cloves garlic, minced
1/4 cup chopped cilantro
Juice of 1/2 lime
Salt
1/3 cup tahini
1/4 cup fresh lime juice
1 teaspoon ground cumin
1 teaspoon granulated garlic
1 teaspoon salt
3 tablespoons water, or more or less depending on the consistency of your tahini

Steps:

  • Add the quinoa to a medium sized pot and cover with two cups of water. Place a lid on and bring to a simmer, turn down and cook until all the water has cooked out and quinoa is cooked through. Set aside and let cool for a few minutes.
  • To a medium sized bowl, add the tomatoes, onion, green pepper, jalapeño, cilantro, lime juice and salt, to taste. Mix until combined.
  • Add all dressing ingredients to a bowl and mix until a creamy sauce is formed. You may have to add more or less water depending on the consistency of your tahini.
  • Assemble your meal prep bowls. Set up four equal sized containers and in each one put an equal amount of each of the ingredients. It will be about 3/4 cup quinoa, 1/2 cup black beans and 1/4 of the tomato salad. Portion out the dressing into small containers and store everything in the refrigerator until ready to eat.
