- In a large bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. Pat into two greased 8x4-in. loaf pans. Cover and freeze one meat loaf for up to 3 months., Bake remaining meat loaf, uncovered, at 350° for 50-60 minutes or until no pink remains and a thermometer reads 160°. Let stand for 5 minutes. Transfer to a serving plate; sprinkle with cheese. , To use frozen meat loaf: Thaw in the refrigerator overnight. Bake as directed; sprinkle with cheese.

- Preheat oven to 400°. In a large bowl, mix barbecue sauce, salsa and Worcestershire sauce; reserve 1/2 cup mixture for topping. Add bread crumbs, onion, pepper, egg and steak seasoning to remaining sauce mixture. Add beef; mix lightly but thoroughly., Place 1/3 cup beef mixture in each of 12 greased muffin cups. - Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the egg, milk, cheese, breadcrumbs and salt. Add the ground beef, mixing well, and form this mixture into six to eight miniature meatloaves. Place these in a lightly greased 9x13 inch baking dish.
- In a separate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.
- Bake, uncovered, at 350 degrees F (175 degrees C) for 45 minutes.

- Preheat oven to 450 degrees F.
- Combine first 4 ingredients in a large bowl. Stir in 1 tablespoons mint, 1 tablespoons thyme, 1/4 teaspoons salt, allspice, and next 3 ingredients (through egg). - For the meat loaves, in a large bowl combine oats, onion, coconut aminos, and pepper. Add beef; mix well. Shape meat mixture into 8 patties, each about ¾-inch-thick. For the sauce, stir together tomato paste, coconut aminos, honey, vinegar, water, and, if desired, ginger. If desired, transfer 1 to 2 tablespoons of the sauce to a separate bowl for brushing on the meat loaves after they are finished grilling.
- For a charcoal or gas grill, grill patties directly over medium coals or heat for 16 to 20 minutes or until an instant-read thermometer inserted into sides of patties registers 160°F, flipping** patties once halfway through grilling and brushing tops with sauce for the last 5 to 7 minutes of grilling.
- If desired, brush meat loaves with any sauce you had set aside before grilling. Garnish tops of meat loaves with chives if desired.
MINI MEATLOAVES

- Heat oven to 200C/fan 180C/gas 6 and heat 1 tsp oil in a large frying pan. Add the onion and carrot and soften for 10 mins. Scrape into a large bowl, then add the breadcrumbs, 5 tbsp of the passata, the Worcestershire sauce, egg, mince, half the thyme and some seasoning. Mix well.
- Brush 4 large ramekins or 6 muffin tins with the remaining oil. Press the mince mixture into them, then pour the remaining passata over the top. Top each with a tomato half, sprinkled with a pinch of sugar, salt and pepper and the remaining thyme. Bake for 50 mins until cooked through, then serve with Chive mash (recipe below).
