LIME APRICOT SOY WINGS
The lime is a refreshing change - with a garlic kick! From Gourmet magazine December 1999. I have made this many times and had great response to it. People who don't like the Buffalo wings enjoy these, and the spice loving wing fans just ask for more!

Steps:
- NOTE: these are sort of sticky and messy to make; disposable roasting pans work great
- Preheat oven to 425 degrees Divide the wings among the two pans, arranging in a single layer.
- Puree the remaining ingredients in a blender and pour half over each pan of wings.
- Bake wings in upper and lower thirds of the oven for 50 minutes.
- Turn the wings and switch positions of the pans in the oven, then bake 45 minutes more, until liquid is thick and sticky.

- 1. Season wings with salt. Heat grill to medium high.
- 2. In the bowl of a food processor (small if available), combine preserves, garlic, ginger, soy sauce, red pepper flakes, lime juice, vinegar, and cumin process until smooth. Add chives.
- 3. Place wings on the grill and cook for 8-10 minutes. Turn, and grill for another 5-6 minutes. With a pastry brush or spoon, brush the sauce on the wings. Cook for about 1 minute, and turn. Repeat on other side of wings. Cook for another 1 minute. Wings should register 170º F when tested with an instant read thermometer.
- 4. Serve the wings garnished with lime wedges. Serves 4.

- Cut chicken wings into three sections; discard wing tips. In a small bowl, combine the remaining ingredients; pour 1/2 cup into a large resealable plastic bag. Add chicken; seal bag and turn to coat. Refrigerate for 4 hours or overnight. Cover and refrigerate remaining marinade., Drain and discard marinade. Place wings in a greased foil-lined 15x10x1-in. baking pan. Bake at 400° for 30-35 minutes or until juices run clear, turning and basting occasionally with remaining marinade.

LIME APRICOT BAKED CHICKEN WINGS - PANNING THE GLOBE

- Preheat the oven to 425ºF. Divide the chicken wings between the two large foil pans, spreading them out into a single layer.
- Put all of the sauce ingredients, except the red pepper flakes, into a blender and puree. Divide the sauce, pouring half into each pan. Toss to coat. Sprinkle red pepper flakes evenly over chicken, 1 1/2 teaspoons per pan. Toss to combine.
- Cook the chicken in the upper and lower shelves of the oven for 50 minutes. Switch the position of the pans and flip wings over. Cook for another 30-45 minutes, checking often to prevent burning, until the wings are darkened and the sauce is thick and sticky. Mound wings onto a platter and sprinkle with scallions. Sliced, lightly salted cucumbers make a good accompaniment. Enjoy!
