Sloppy Joes are simple to make without using canned mixes. WIth some ground turkey hiding in the freezer I switched up my usual recipe for sloppy joes. Leftovers freeze well. Just thaw and reheat for a quick meal.

2 tablespoons olive oil
2 lbs ground turkey
2 bell peppers, chopped fine
2 onions, minced
2 tablespoons tomato paste
2 tablespoons chili powder
2 tablespoons smoked paprika
4 garlic cloves, minced
1 (14 ounce) can tomato sauce
2 teaspoons brown sugar
1 teaspoon hot sauce (more if you like hotter)
1 cup ketchup
salt and pepper

Steps:

  • Heat 1 tablespoon of the oil in a 12-inch skillet over medium high heat. Cook the turkey until no longer pink then drain.
  • Add the other tablespoon of oil to the skillet. Toss in the peppers, onions and a teaspoon of salt; cook until the onions are translucent. Place the tomato paste, chili powder, and paprika to the vegetables and cook 2-3 minutes. Add garlic and cook until fragrant, 15-30 seconds.
  • Return the turkey to the skillet and stir inches Pour in the tomato sauce and add in the brown sugar, Tabasco, and ketchup. Salt and pepper to taste and simmer 5-10 minutes.

2 1/2 lbs ground turkey
1 (6 ounce) can tomato paste
1 cup catsup
2 tablespoons mustard
2 tablespoons Worcestershire sauce
1 tablespoon garlic, minced
2 teaspoons onion powder

Steps:

  • In a large frying pan, brown ground turkey, minced garlic and onion powder. Drain, if needed/wanted.
  • Meanwhile, wisk together tomato paste, catsup, mustard and worcestershire sauce.
  • Return drained turkey to pan, stir in sauce. Cook on low for 10 minutes.
  • Serve on hamburger buns.

SOUTHWESTERN SLOPPY TOMS



Southwestern Sloppy Toms image

A variation on the ever-popular Sloppy Joe using ground turkey and salsa. Adapted from my grocery store sales circular.

1 1/4 lbs ground turkey
1 cup onion, minced
1 cup chipotle salsa or 1 cup any salsa
1 (4 1/2 ounce) can diced green chilies (with juices)
5 loaves cornbread, individual
additional salsa (to garnish) (optional)

Steps:

  • In a large skillet cook turkey and onions over medium heat until turkey is no longer pink and onions are softened. Break up turkey with wooden spoon as it cooks. Drain off any liquid.
  • Stir in salsa and chilies and heat to simmering. Reduce heat to low and cook 3 to 5 minutes, stirring occasionally.
  • Meanwhile, heat cornbread and cut in half lengthwise. Spoon turkey atop and form sandwich. Garnish with additional salsa, if desired.

1 lb ground turkey
3/4 cup chili sauce
1/2 cup water
1/4 cup hamburger relish
4 onion rolls, split and toasted
shredded cheddar cheese (optional)

Steps:

  • In large nonstick skillet, heat oil over medium heat. Add onion; cook, stirring occasionally, until tender, 5 minutes. Crumble in turkey; cook until no longer pink, 5 minutes.
  • Meanwhile, mix chili sauce, water, relish and Worcestershire; stir into skillet. Cook until sauce has thickened slightly, 5 minutes. Divide turkey mixture among rolls. If desired, sprinkle with shredded Cheddar cheese.

Sloppy Ottos (German Version of Sloppy Joes) image

Because of my German heritage, I try to use the month of October to cook more German-inspired foods. When my sons were younger, they loved sauerkraut and any dish that contained it. This was a favorite of theirs and I liked that it was a one skillet, easy and tasty sandwich. I served it with German potato salad. Yum!!

This made for a very enjoyable lunch, and kept warm in a slow cooker, could also work very nicely for a Super Bowl party. It tastes enough like a traditional beef Sloppy Joe to provide that satisfying comfort food fix, yet seems much lighter.

2 tablespoons butter
1 onion, diced
salt and ground black pepper to taste
1 ¼ pounds ground turkey
½ cup cold water
¾ cup ketchup
1 ½ tablespoons brown sugar
½ teaspoon cayenne pepper, or to taste
½ teaspoon Worcestershire sauce
½ teaspoon unsweetened cocoa powder
1 cup water, or as needed
6 hamburger buns, split
⅓ cup chopped green onions
½ cup shredded white Cheddar cheese

Steps:

  • Melt butter in a heavy skillet over medium heat. Add onion; cook and stir until onion starts to brown, about 5 minutes. Season with salt and black.
  • Mix ground turkey and 1/2 cup cold water into onions. Cook and stir, breaking up the meat, until it begins to brown, about 2 minutes. Add ketchup, brown sugar, cayenne pepper, salt, and black pepper. Cook and stir until liquid is reduced, about 5 minutes. Stir in Worcestershire sauce and cocoa powder. Cook, stirring frequently and adding up to 1 cup water if needed, until meat is cooked through and liquid is reduced and thick, 20 to 30 minutes.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Toast hamburger buns until golden, 2 to 3 minutes.
  • Remove turkey mixture from the heat and mix in green onions and Cheddar cheese. Serve on toasted hamburger buns.

1 medium yellow onion, chopped
1 small red bell pepper, chopped (or green bell pepper)

1 1/2 cups dried brown lentils, picked over and rinsed
1 (14 1/2 ounce) can crushed tomatoes
3 cups water
2 tablespoons tamari or 2 tablespoons soy sauce
1 tablespoon prepared mustard
1 tablespoon light brown sugar
1 teaspoon salt
fresh ground black pepper

Steps:

  • Heal the oil in a skillet over medium heat; add in the onion and bell pepper; cover, and cook about 5 minutes, until softened.
  • Add in chili powder, stirring to coat.
  • Transfer mixture to a slow cooker; add in the lentils, tomatoes, water, tamari, mustard, brown sugar, salt, and pepper; stir to combine.
  • Cover and cook on LOW for 8 hours.
  • Serve sloppy-joe style on warmed buns.

8 ounces water
½ cup curry ketchup
2 tablespoons tomato powder
1 tablespoon Worcestershire sauce
2 teaspoons coconut sugar
¼ teaspoon garlic powder
salt and ground black pepper to taste
1 tablespoon avocado oil
1 (8 ounce) package button mushrooms, finely chopped
1 small yellow onion, diced
1 ½ pounds ground turkey
8 medium hamburger buns, split

Steps:

  • Mix water, curry ketchup, tomato powder, Worcestershire sauce, coconut sugar, garlic powder, salt, and pepper together in a small bowl. Set aside.
  • Heat avocado oil in a large skillet over medium-high heat and add mushrooms and onions. Cook until vegetables begin to soften, about 5 minutes. Add turkey to skillet and cook over medium-high heat until the meat is no longer pink and begins to brown, 5 to 7 minutes. Stir in the tomato sauce mixture until well combined.
  • Reduce heat and simmer, covered, for 15 minutes. Remove the lid and simmer until the mixture thickens, about 5 minutes more. Place onto buns and serve.
