LIGHT THREE-BEAN CASSEROLE
"This recipe came from a family reunion of mostly Mennonites. It is over 30 years old," Jane Bone shares from Cape Coral, Florida. "You can choose different beans, according to your family's tastes, but keep the pork and beans as a base. I often take a big pot of these to large gatherings or pitch-in-suppers, and everyone enjoys them."

- In a large nonstick skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. In the drippings, saute green pepper and onion until tender., Combine the beans in a large bowl. Gently stir in pepper mixture and bacon. Stir in the ketchup, pimientos, brown sugar, Worcestershire sauce and mustard until combined., Transfer to a 2-qt. baking dish coated with cooking spray. Cover and bake at 350° for 50-60 minutes or until bubbly.

This is a quick and easy dish, great for potlucks or picnics. It is a delicious combination of hearty ingredients, and I have always been asked for the recipe when I serve this dish.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine the frankfurters, pork and beans, butter beans, chili beans, onion, sugar, oregano and vinegar. Mix all together and pour mixture into a lightly greased 9x13-inch baking dish.
- Bake uncovered at 350 degrees F (175 degrees C) for 1 hour, or until cooked through and bubbly.

Steps:
- In a 10 inch skillet, add the sausage, ground beef, celery, onion, and garlic and cook over medium heat 8-10 minutes, stirring occasionally, until the meat is no longer pink; drain.
- In a a 3½ - 6 quart slow cooker, combine the meat mixture and remaining ingredients. Cover & cook on low heat setting 5-6 hours.
- Turn off the slow-cooker, let it's contents cool, and transfer to the refrigerator (the flavors really meld over-night).
- The next day cook in the slow-cooker, on low heat setting, another 2 hours.
- Serve & Enjoy!

- Heat the oil in an oven-proof casserole on the hob. Add Onions, Celery, Bacon & Garlic. Fry over a low heat until soft but not discoloured.
- Stir in all the spices. Cook for a further minute or two.
- Add the tomatoes, stock & S & P. Stir well.
- Add the beans. Stir & bring to the boil. Stir in the mushrooms .
- Cover & put in a preheated oven at 170/fan,190C/gas5 for 20 minutes.
